GRILLED BABY BOK CHOY AND TOMATO SIDE DISH
Although throwing an ear of corn on the grill is perfectly fine why not try something different?? These are quick, easy and very flavorful. Feel free to switch up the seasonings to compliment whatever main dish you are serving! The way they are prepared they would go great with beef, pork, fish or poultry. Your tastes may vary slightly.......so do what you like!! ENJOY!!

Steps:
- halve bok choy and tomatoes.
- sprinkle cut sides with salt pepper and italian seasoning, to taste.
- in small saute pan cook garlic over medium heat, do not let it get brown, you are only trying to infuse the olive oil with the garlic flavor. When finished pour oil into small pyrex measuring cup, add salt, pepper and a small amount of italian seasoning, stir. Reserve.
- grill bok choy and tomatoes cut side up over medium direct heat until they have slight grill marks, turn and do the same on the cut side. Don't be afraid a little char adds alot of flavor. Bok Choy should be grilled with the bulbs over the direct heat and the leaves over indirect heat to prevent burning.
- remove from grill and drizzle cut side with reserved olive oil and garlic mixture. Serve 1/2 bok choy and 1/2 tomato to each guest, or yourself -- ENJOY!

BOK CHOY, POTATO AND ONION SIDE DISH
Not a stir-fry! East meets West in a simple side dish using bok choy given "body" with chopped potatoes, onions, and a little extra flavour. This is a very basic way of using Oriental cabbages other than in a stir-fry with soy sauce. The dish can be considerably enhanced if chopped bacon is added with the onion, and you might also want to up the spices by adding a chopped, seeded hot pepper or black pepper. Very tasty, and you'll never wonder whether to use those white ribs again: they are very useable!!

- Peel and chop onion. Cut off only the root end off the bok choy, then separate the leaves, and wash thoroughly, as soil often sticks to the thick white stems.
- Peel potatoes and chop, and prepare ginger and garlic.
- Fry the onions in the oil, stirring, over high heat until they soften, then add the balsamic vinegar and stir. (Add a little more oil if necessary).
- Add the chopped potatoes. Lower heat, but stir frequently to prevent sticking. After about 5 minutes add the ginger, garlic and salt.
- Slice the bok choy from the stem parts to the green leaves, including all the white stems. Add to the pan. Stir, add the salt, and let saute without a lid for a while to prevent liquid forming.
- After about 10 minutes turn heat to low and put on a lid at an angle. Gently fry until the vegetables are cooked, but it's nice if the bok choy stems are slightly al dente still.
- As suggested: although this dish is quite flavourful as a side dish, you could add chopped bacon and a number of other ingredients, even mature cheese strewn over when it's cooked. Add black pepper or nutmeg, to taste.

Steps:
- Place 2 tablespoons of peanut oil and heat until almost smoking.
- Split the piece of ginger open with a knife then whack it with the flat side of the knife.
- Lay the ginger pieces in the oil, cut-side down to let it start to perfume.
- Pan-fry the bok choy, cut-side down, for a couple of minutes to give it some color.
- Add the water and cook another minute to steam the bok choy; carefully remove it to a plate.
- Add the soy sauce, oyster sauce, lemon juice, and brown sugar.
- Cook and stir for 3 minutes until the sauce is the consistency of syrup.
