A nice simple rice recipe, that will compliment your Creole/Cajun main dish without outstaging it. The goal here is not to absorb all of the liquid into the rice. The goal is to make the rice tender, then drain the rice (like pasta).

1 quart water
1 cup basmati rice or 1 cup jasmine rice
2 fresh bay leaves or 2 dried bay leaves
1 tablespoon kosher salt
1 tablespoon unsalted butter

Steps:

  • Bring the water to a boil with the bay leaves. Add the salt.
  • Add the rice, stir to make sure the rice doesn't stick. Do not stir again. If the rice is agitated too much, it gets sticky. Give it a good stir when it comes back to a boil, and partially cover.
  • Cook for about 11 minutes, test it. It should have a bite, but crunch is bad. When it's tender, drain it, remove the bay leaves, and if desired, place it into a 400 degree oven with the butter patted on top for about 15 minutes; this helps dry the rice out.

Curry Eggs over Rice (For Leftover Hard Boiled Eggs) image

A delicious main dish that uses up those leftover hard boiled eggs from Easter. The lady who prepared this on the show said that her mother used to make this dish often during Lent. I adapted this recipe from one I saw on "Calling All Cooks" on Food Network. This recipe halves beautifully. This is not a particularly spicy dish, just rich in flavor. (Note:There is no curry powder in this recipe - you are essentially making your own blend using various spices.)

2 tablespoons ground coriander
2 tablespoons ground cumin
1/2 teaspoon chili powder (hot or mild Indian style)
2 teaspoons ground turmeric
1 tablespoon cider vinegar
2 ounces water (or more as needed)
1/4 cup canola oil
1 cup chopped onion (1 large)
2 tablespoons fresh ginger, chopped
6 -8 garlic cloves, chopped
3 cups chopped fresh tomatoes (about 6 small)
1 cup unseasoned tomato sauce (8 ounce can)
1 pinch sugar, to taste
1/4 teaspoon salt, to taste
1 teaspoon ground black pepper, to taste
12 hard-boiled eggs, peeled, halved
1/8 cup fresh cilantro leaves, chopped
6 cups steamed white rice

Steps:

  • Mix the first 4 spices along with vinegar and water to make a thin paste; set aside.
  • Heat a large saucepot over a medium heat and add oil.
  • Add onion, ginger, garlic and saute until golden brown.
  • Add spice mixture to the pot and stir well.
  • (Add more water in small amounts if mixture begins to stick.) Add chopped tomatoes to onion mixture.
  • Pour tomato sauce into a 2-cup measuring cup and add enough water to make 2 cups liquid.
  • Add to the pot and simmer 20 for minutes.
  • Add pinch of sugar, salt, and pepper to taste.
  • Cut eggs in half lengthwise and slide them into the sauce.
  • Serve over rice, sprinkled with fresh chopped cilantro.

Prepare a simple boiled rice> All you need is a medium-sized saucepan with a well fitting lid, a sieve, a fork, a teaspoon, and measuring cups. White rice is usually clean and does not need washing to remove dust or husk bits like brown rice does. This extra step rinses off excess starch and ensures that the cooked rice is not sticky.

1 cup basmati rice
salt
2 cups water
1 teaspoon oil

Steps:

  • Measure the rice and tip into a sieve. Wash the rice under running cold water until it runs clear.
  • then tip the rice,oil, salt and water into a microwave-proof bowl -a Pyrex bowl is fine- with a lid that will allow steam to pass. Alternatively, cover the bowl tightly with microwavable film and pierce this three or four times with a sharp pointed knife. Cook on high for 5 minutes; then on defrost for 10-12 minutes. The rice will stay hot for up to 15 minutes if you keep it covered. I recommend this procedure only for white rice.

Boiled & Grilled Pork Chops With Veggies & Rice image

I made this because I was inspired by a TV chef who I can't remember the name of. I loved it & so did my husband.

6 pork chops, boneless
2 potatoes, russets
1 yellow onion
1 1/2 green bell peppers
2 celery stalks
2 clove garlic,minced
6 c rice, instant
2 pkg brown gravy mix

Steps:

  • 1. Heat 2 Tbsp each of oil & butter in a large nonstick pan. Add garlic & veggies & season with 1 tsp. salt & 1/2 tsp. black pepper. Saute until soft.
  • 2. Add pork chops & season each with 1/2 tsp. salt, 1/4 tsp. black pepper, 1 tsp. garlic powder, & 1/2 tsp. parsley flakes. Pour 2 cups of water over the chops & boil for 10 minutes.
  • 3. After boiling the chops, place them on a plate & grill them for 10 minutes. Meanwhile, scoop the veggies with a slotted spoon into a bowl & wrap with foil to keep warm. Make gravy with the water that boiled the chops. Serve the chops with gravy, rice, salad, & biscuits/tortillas.

2 cups white long-grain rice
4 cups water
1 teaspoon salt

Steps:

  • Place the oil and rice in a saucepan, and mix well. Add the water and salt, and bring to a boil, stirring occasionally, over high heat. Cover tightly, reduce the heat to very low, and simmer gently for 20 minutes.
  • Fluff with a fork, and serve with the chili.

3 cups remaining chicken broth (if not enough, add water)
1 cup converted or parboiled rice
1 tablespoon lemon juice

Steps:

  • Bring the chicken broth to a boil and add the rice. Return to a boil and stir. Simmer for 17 minutes over low flame, covered. Add the lemon juice, blend well and serve with the chicken.
