Number Of Ingredients 12

1 c ketchup
1/4 c brown sugar
4 Tbsp butter
3 Tbsp chile honey* (or use cayenne or red pepper flakes or favorite hot sauce
1 Tbsp sriracha hot sauce
1/4 c red wine vinegar
1/8 c dijon mustard
1 Tbsp worchestershire sauce
1 Tbsp soy sauce
1 clove large clove garlic, grated
2 Tbsp grated onion
1/2 tsp each salt and pepper

Steps:

  • 1. Place all ingredients in a saucepan and bring to a low boil.
  • 2. Continue on a low simmer until it cooks down to the consistency you wish.
  • 3. * chile honey (found in NM. I'm not sure you can find this other places, but it's wonderful if you can. substitute with the above listed heat alternatives, but do add a couple of tbsp of honey to bring up the sweetness if not using.)

This recipe makes a great semi-sweet sauce for smoked barbecue ribs. Serve this warm on the side along with your ribs or baste directly on the ribs during the last 30 minutes of cooking.

2 tablespoons butter
1 red onion, diced
1 clove garlic, crushed
6 tomatoes, diced
¼ cup ketchup
2 tablespoons prepared Dijon-style mustard
2 tablespoons brown sugar
2 tablespoons honey
1 teaspoon cayenne pepper
1 tablespoon ground New Mexico chile powder
1 tablespoon Worcestershire sauce

Steps:

  • Melt the butter in a medium saucepan over medium heat. Stir in the onion and garlic and saute for 5 minutes. Add the tomatoes, reduce heat to medium low and simmer for 15 minutes. Then add the ketchup, mustard, brown sugar, honey, cayenne pepper, chili powder and Worcestershire sauce.
  • Simmer for 60 more minutes, then transfer mixture to a blender or food processor and puree until smooth.
