Bite-size balls of fresh mozzarella, known as bocconcini, make up this great salad. If possible, seek out mozzarella di bufala, made from water buffalo's milk; a specialty of central and southern Italy, it is a softer, creamier mozzarella than that made from cow's milk.

1 pound bocconcini (bite-size mozzarella balls)
8 cherry tomatoes, halved
½ cup chopped green bell pepper
½ cup chopped celery
½ cup Belgian endive leaves
½ cup coarsely chopped arugula, stems included
1 ½ tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
2 tablespoons chopped fresh basil leaves
salt and freshly ground black pepper

Steps:

  • In a large salad bowl, combine the mozzarella, cherry tomatoes, bell pepper, celery, endive and arugula.
  • Whisk together the lemon juice and olive oil; pour over the salad. Toss until all the ingredients are thoroughly coated with the dressing. Transfer salad to individual serving plates, if desired. Sprinkle the basil over the salad, season with salt and pepper, and serve immediately.

1 teaspoon balsamic vinegar

12 bocconcini, halved or 13 ounces mozzarella cheese, cubed
20 ripe cherry tomatoes, halved
1/4 cup torn fresh basil leaf, plus extra for serving
4 slices thick country bread, preferably sourdough
2 cloves garlic, peeled and halved
1 cup arugula leaf

Steps:

  • Whisk together three tablespoons of the olive oil and the balsamic vinegar in a bowl.
  • Season to taste with salt and pepper.
  • Stir in the cheese, tomatoes and basil leaves.
  • Set aside.
  • Grill the bread on both sides until lightly browned and crisp.
  • Rub one side of each slice of bread with the garlic, then sprinkle with olive oil.
  • Cover each slice of bread with several arugula leaves.
  • Spoon the tomato and cheese mixture over the arugula.
  • Sprinkle each bruschetta with additional olive oil, then top with basil leaves.
  • Serve immediately.

A very quick and pretty dish - the colors of the Italian flag. Can be made with either very fresh mozzarella or bocconcini (fresh mini mozzarellas). My mom used to make this all the time. I don't personally use the salt, but I do like lots of freshly ground pepper on mine. I also like this with oregano. Feel free to experiment! Posted for ZWT 2006.

40 g butter
1 tablespoon oil
1 large leek, thinly sliced
1 garlic clove, crushed
2 cups arborio rice
1 liter vegetable stock
1 cup water
1/2 cup cream
2 bunches asparagus, coarsely chopped (can use one bunch)
100 g baby spinach leaves
1 cup parmesan cheese, grated
2 tablespoons parsley, chopped
2 eggs, lightly beaten
180 g baby bocconcini, drained (or use chopped larger bocconcini pieces)
1/2 cup tasty cheese, grated

Steps:

  • Melt the butter and oil in a large pan. Add the sliced leek and garlic. Cook, stirring, until the leek is tender. Add the rice and continue to stir for one minute.
  • Add the liquid stock, the water and cream. Mix to combine.
  • Bring to the boil and simmer for 10 minutes, stirring occasionally.
  • Stir in asparagus, spinach leaves, parmesan and parsley. Remove from the heat and stir in the eggs.
  • Spoon in 1/2 of the rice mixture into a greased 12 cup ovenproof dish. Arrange the bocconcini over the rice. Top with the remaining mixture. Sprinkle over the tasty cheese. I use a lasagne dish to make this recipe.
  • Cook uncovered 180 degrees celcius for 25 minutes or until the rice is tender.
  • Stand at least 10 minutes before serving. The slice cuts better the longer that it is left.

16 (1-inch diameter) balls bocconcini mozzarella cheese
2 cups all-purpose flour
Kosher salt and freshly ground black pepper
4 eggs, beaten
3 cups seasoned Italian-style bread crumbs
Vegetable oil, for frying
8 cloves garlic
1 (1-inch) piece fresh ginger, peeled and coarsely chopped
1/4 teaspoon kosher salt, plus more for seasoning
1/2 cup red wine vinegar
1/4 cup sugar
2 tablespoon extra-virgin olive oil
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 (15-ounce) can diced tomatoes

Steps:

  • For the bocconcini: Drain the bocconcini and pat dry with paper towels. Put on a paper towel-lined plate and allow to dry in the refrigerator for 2 hours. Put the flour in a medium bowl and season with salt and pepper, to taste. Put the eggs in a second medium bowl and the bread crumbs in a third medium bowl. Coat the bocconcini in flour and then dip into the eggs. Roll the bocconcini in the bread crumbs until coated. Dip the coated bocconcini, again, in the eggs and then coat with bread crumbs. Freeze the breaded bocconcini for 20 minutes.
  • For the chutney: In a blender, combine the garlic, ginger, 1/4 teaspoon salt, vinegar, sugar, olive oil, cumin and pepper. Blend until smooth. Pour into a medium, heavy-bottomed saucepan and add the tomatoes. Bring the mixture to a boil over high heat, then reduce the heat and simmer, stirring occasionally, until most of the liquid has evaporated and the mixture is thick, about 45 to 55 minutes. Using the back of a wooden spoon, gently break up the tomatoes as they begin to soften during cooking. Season with salt, to taste. Let the chutney cool to room temperature, about 35 minutes. Place in a serving bowl.
  • In a large heavy-bottomed saucepan, pour in enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F. (If you don't have a thermometer a cube of bread will brown in about 1 to 2 minutes.) In batches, fry the bocconcini until golden brown, about 15 to 20 seconds. Drain on paper towels.
  • Arrange the bocconcini on a platter and serve the chutney alongside as an accompaniment.

2 tablespoons extra virgin olive oil, plus more for frying
2 garlic cloves, minced
1 teaspoon red pepper flakes
1 (28 ounce) can crushed tomatoes with juice
salt & freshly ground black pepper, to taste
2 lbs mozzarella bocconcini (about 50 pieces)
4 eggs
1/2 cup milk
2 cups all-purpose flour
4 cups breadcrumbs

Steps:

  • In a saucepan over medium heat, warm the olive oil. Add the garlic and red pepper flakes and cook, stirring, until the garlic is soft but not browned, about 1 minute. Add the tomatoes and their juices and simmer until the sauce is thickened, about 6 minutes. Season with salt and black pepper. Set aside.
  • Preheat an oven to 200°F.
  • Drain the cheese from its liquid. Place the cheese on a paper towel-lined baking sheet and pat dry.
  • In a bowl, whisk together the eggs and milk. Put the egg mixture, flour and bread crumbs in separate wide, shallow bowls.
  • Roll the cheese in the flour, dip into the egg mixture and coat with the bread crumbs, shaking off the excess after each step. Then bread each piece of cheese again.
  • In a large, deep sauté pan over medium-high heat, pour in olive oil to a depth of 3 inches and heat to 350°F on a deep-frying thermometer. Working in batches, fry the cheese until golden, about 2 minutes. (Or follow the directions of your deep fryer.) Transfer to a paper towel-lined plate and season the fried cheese with salt and black pepper. Place the cheese on a wire rack set over a baking sheet and keep warm in the oven while frying the remaining cheese.
  • Let the fried cheese cool for at least 7 minutes before serving. Serve with the warm tomato sauce for dipping.

Steps:

  • Spray the asparagus lightly with an olive oil spray and stick the in the oven at 400°F/190°C with a few thinly sliced garlic cloves for about 5 minutes.

Boccoccini are bite-size balls of fresh mozzarella. You can substitute 1/2-inch cubes of regular fresh mozzarella, but it's not as good.

2 teaspoons fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 jalapeno pepper, chopped

400 g bocconcini, cut into bite size pieces
1 large orange bell pepper (optional)
1 large green bell pepper (optional)
6 ounces artichoke hearts (optional)
kalamata olive (optional)
200 g prawns, cooked (optional)
6 cups radicchio, chopped (optional)

Steps:

  • Cut peppers into quarters, removing the seeds. Trim the corners off the ends so the pepper lays relatively flat on baking dish (it chars the peppers more evenly!).
  • Roast halves under broiler or on grill until skin is blackened, approximately 5 - 8 minutes. (Hint: I usually take each pepper out when done and continue with the rest until all are charred).
  • Once removed from the heat, immediately place peppers in a bowl and cover with plastic wrap. Steam for about 10 minutes (this cools the peppers slightly and makes it easier for the peel to fall off). Uncover and peel off charred skins.
  • Combine rest of ingredients and chill for at least 2 hours.

FRIED BOCCONCINI

Two 8-ounce containers mozzarella bocconcini, drained from liquid
3/4 cups all-purpose flour
Kosher salt and freshly cracked black pepper
1/3 cup milk
3 large eggs
2 cups panko breadcrumbs
1/2 cup grated Parmesan
Vegetable oil, for frying
Simple Tomato Sauce, for serving

Steps:

  • Arrange the mozzarella balls on a sheet tray. Remove any excess liquid by patting them dry with paper towels.
  • In three separate shallow baking dishes, first add the flour to one and season with salt and pepper. Next, whisk together the milk and eggs in the second. Finally, add the breadcrumbs and Parmesan in the last shallow baking dish.
  • Roll each mozzarella ball in the flour, followed by the egg mixture and finally the breadcrumb mixture. Repeat the process with the remaining ingredients.
  • In a large high-sided saute pan, add 3 inches of oil. Heat the oil until it reaches 350 degrees F on a frying thermometer.
  • Working with 4 or 5 mozzarella balls at a time, fry until golden brown, about 1 minute. Remove with slotted spoon on to paper towel-lined plate and season immediately with salt.
  • To hold before serving, keep mozzarella balls on a wire rack over sheet tray in a 200 F degree oven.

4 tablespoons balsamic vinegar
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
2 teaspoons brown sugar
1 garlic clove, minced
3/4 cup extra virgin olive oil
sea salt, to taste
ground black pepper, to taste
1 red pepper, cut into 1 1/2-inch pieces
1 red pepper, cut into 1 1/2-inch pieces
1 yellow pepper, cut into 1 1/2-inch pieces
1 large yellow squash, cut into 1 1/2-inch pieces
1 large zucchini, cut into 1 1/2-inch pieces
8 small button mushrooms
8 small bocconcini (fresh mozzarella balls)
4 wooden skewers, soaked in water

Steps:

  • To prepare glaze, whisk all the glaze ingredients except the salt, pepper and oil together in a bowl. Gradually whisk the oil into the glaze until it emulsifies, then season with salt & pepper.
  • To prepare skewers place cut up vegetables and bocconcini in marinade and let sit for 30 minutes.
  • Alternate vegetables on skewers and grill for 10 minutes or until vegetables are tender, basting with marinade.
  • Remove skewers from grill and place 2 mozzarella balls on each skewer and serve.
