This Slow Cooker Round Steak uses the power of the crock pot to deliver tender steaks in a rich mushroom and onion gravy.

1.5-2 pounds round steak
1 package onion soup mix
1 large yellow onion, sliced
8 ounces mushrooms, sliced
2 cups low sodium beef broth
3 Tablespoons cornstarch
Salt and pepper, to taste

Steps:

  • Preheat the slow cooker while you prepare the rest of the ingredients.
  • Spread half the onions and mushrooms on the bottom of a slow cooker, followed by the steaks. Sprinkle the steaks with the onion soup mix, flipping them over to coat both sides with the seasoning.
  • Spread the remaining onions and mushrooms on top, then pour in the beef broth.
  • Cover and cook on low for 8 hours. Remove about 1/4 cup of the juices from the crock pot. Whisk in the cornstarch to form a slurry. Stir the slurry back into the slow cooker, turn the heat up to high, and continue to cook uncovered, stirring occasionally, another 15-20 minutes, or until juices are thickened. Season to taste with salt and pepper.

My Dad got me started with this along time ago. Over the years I added a few things... My boys love this and I am going to teach this to my son Blake to make. Just like Dad showed me.

3 lb beef round steak
1/2 tsp garlic salt
2/3 c chopped onions
1 c chedder cheese,shredded
1 Tbsp worcestershire sauce
1 Tbsp teriyaki sauce
1 Tbsp steak sauce
3/4 lb bacon
1/4 c all purpose flour
1/2 tsp salt and pepper
8 oz baby portebello mushrooms
1 Tbsp parsley
1 can(s) beer

Steps:

  • 1. You will need a 4qt deep cast iron dutch oven at least,(I used a 4 qt). In a pie tin mix flour,salt,pepper,garlic salt,and 1/2 table spoon of parsley. Coat meat,then pound the meat out to 1/4 inch thick. Cut meat into 6-8 pieces.
  • 2. Fry bacon in the oven till almost chrisp. In a mixing bowl Add beer,Worcestershire sauce,steak sauce,and teriyaki sauce. Mix well.. Remove bacon from oven.Drain on paper towl and save.
  • 3. Brown round steak slowly in the dutch oven. Add onions and mushrooms cook till tender. Now add beer and sauce mix. Cover and simmer for abought one hour. Remove lid sprinkle bacon, cheese and parsley over top.Cook for 10 min more. Serve over rice or mashed potatoes.

3/4 cup olive oil
6 cloves garlic, coarsely chopped
1 ancho chile, coarsely chopped
1 New Mexican chile, coarsely chopped
1 lime, zested and coarsely chopped
1 pound flank steak
Salt and freshly ground pepper
12 (6-inch) flour tortillas
1 pound white cheddar, coarsely grated
Grilled Onions, recipe follows
8 ounces blue cheese, crumbled
Ancho chile powder
Wild Mushroom Relish, recipe follows
Chopped cilantro
Roasted Red Pepper Sauce, recipe follows
Olive oil
2 red onions, peeled and thinly sliced
Salt and pepper
3 tablespoons olive oil
1 1/2 pounds mushrooms (cremini, shiitake, oyster) coarsely chopped
2 cloves garlic, finely chopped
1/2 cup dry white wine
2 tablespoons balsamic vinegar
1 tablespoon finely chopped fresh thyme
3 tablespoons finely chopped parsley
Salt and freshly ground pepper, to taste
2 red bell peppers, roasted, peeled, seeded and coarsely chopped
3 tablespoons chopped red onion
2 teaspoons chipotle puree
2 tablespoons fresh lime juice
2 tablespoons honey
3/4 cup olive oil
Salt and freshly ground pepper, to taste

Steps:

  • Combine oil, garlic, chiles, and lime zest in a large shallow baking dish. Add steak and turn to coat. Cover and refrigerate for at least 4 hours or overnight. Preheat grill or grill pan over high heat. Remove steak from marinade, season with salt and pepper and grill for 2 to 3 minutes on either side until golden brown and cooked to medium-rare doneness. Let rest 5 minutes and slice on the bias into 1/2 inch thick slices. Preheat oven to 425 degrees F.
  • Place 8 tortillas on a flat work surface. Top each tortilla with 2 ounces of the cheddar. Divide the onions and steak over the cheese. Crumble 1 ounce of the blue cheese on top of the steak. Stack the tortillas to make 4 (2-layer) quesadillas and top each with the remaining tortillas. Brush the tops with olive oil and sprinkle with about 1/2 teaspoon of ancho chile powder. Carefully transfer the quesadillas to a baking sheet and bake in the oven until golden brown and the cheese has melted, about 5 to 7 minutes. Serve each with a large dollop of the Mushroom Relish on top and garnish with chopped cilantro and Roasted Red Pepper Sauce.
  • For the grilled onions: Heat oil in a large saute pan over medium heat. Add the onions, season with salt and pepper and cook until soft and caramelized, about 25 to 30 minutes. For the wild mushroom relish: Heat oil in a large saute pan over high heat. Add the mushrooms and cook until golden brown. Add the garlic and cook for 1 minute. Add the wine and cook until completely reduced. Stir in the vinegar, thyme and parsley and season with salt and pepper, to taste.
  • Place peppers, onion, chipotle, lime juice and honey in a blender and blend until smooth. With the motor running, slowly add the oil and blend until emulsified. Season with salt and pepper, to taste.

1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 to 2-1/2 pounds boneless beef round steak (1/2 inch thick), cut into serving-size pieces
2 tablespoons vegetable oil
1 can (10-1/2 ounces) condensed French onion soup, undiluted
1 can (8 ounces) mushroom stems and pieces, drained
3/4 cup water
1/4 cup ketchup
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch
1/4 cup cold water
1 cup sour cream

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add beef, a few pieces at a time, and shake to coat. In a large skillet, brown the beef in batches in oil. Transfer meat to a 3-qt. slow cooker with a slotted spoon. , In a bowl, combine the soup, mushrooms, water, ketchup and Worcestershire sauce. Pour over meat. Cover and cook on low for 8 hours or until meat is tender., Remove beef with a slotted spoon; keep warm. Transfer cooking liquid to a saucepan. Combine cornstarch and cold water until smooth; gradually stir into cooking liquid. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir a small amount of hot liquid into sour cream. Return all to the pan; cook on low until heated through. Serve over meat.
