This is a tasty and easy to make salad. I love it because it is healthy, low-cal, and nobody would know it. This recipe is from Ultimate Foods for Ultimate Health by Liz Pearson and Mairlyn Smith...I highly recommend this book.

1 large head romaine lettuce
2 cups blueberries
1/2 cup reduced-fat feta cheese
2 tablespoons apple cider vinegar
1 tablespoon extra virgin olive oil
1 teaspoon extra virgin olive oil
1 tablespoon honey
1 small shallot (I didn't use this in the recipe)

Steps:

  • Wash and dry romaine and tear into bite-sized pieces.
  • Use a mini food processor/blender to puree feta, vinegar, olive oil, honey & shallot (if using).
  • Toss romaine with dressing and add your washed and dried blueberries and toss again -- gently.
  • Apparently you can make the dressing up to two days in advance, but we made it and ate it right way. We had some leftovers for a small snack in the evening.
  • This would also be good with some toasted almonds sprinkled in, but more calories then!

1/4 cup raspberry vinegar
2 teaspoons Dijon mustard
1 teaspoon sugar
1/2 teaspoon salt
1/2 cup canola oil
SALAD:
12 cups fresh baby spinach (about 10 ounces)
1 cup fresh blueberries
1 cup (4 ounces) crumbled blue cheese
1/2 cup chopped pecans, toasted

Steps:

  • Mix first four ingredients; gradually whisk in oil until blended. In a large bowl, combine salad ingredients; toss with dressing.

My mom began making this salad a few years ago and, as soon as I tried it, I just had to get the recipe. This is my version, but can be varied in many different ways because it's all about the dressing! So simple, yet so delicious that you are sure to get requests for the recipe whenever you make it! You can use pecans, almonds, or pine nuts in place of the walnuts.

3 cups torn romaine lettuce
½ cup blueberries
¼ cup dried cranberries
¼ cup sunflower seeds
¼ cup walnut pieces
¼ cup crumbled feta cheese
¼ cup crumbled goat cheese
¼ cup white balsamic vinegar, or to taste
¼ cup maple syrup, or to taste
¼ cup grapeseed oil, or to taste
salt, to taste

Steps:

  • Toss the romaine lettuce, blueberries, dried cranberries, sunflower seeds, walnut pieces, feta cheese, and goat cheese in a large bowl. Pour the vinegar, syrup, and grapeseed oil over the salad one at a time; toss until evenly coated. Season with salt.

This recipe is more about assembly than actual cooking. (I mostly wanted to post my pics, which are pretty!) I had store-bought Romaine and Aerogarden -grown mixed greens, as well as strawberries and blueberries, needing to be eaten, so I made this salad (a variation of the usual strawberry-feta salads). I also put Recipe#49956 on it, but any bottled raspberry vinegrette will work. Also, it would be good with sliced chicken, avocado, onion, etc on top, or made with spinach. Feel free to enjoy it on the 4th, or any day!

2 cups mixed salad greens
1/4 cup crumbled feta cheese
2 tablespoons candied or toasted walnuts
4 strawberries, sliced
1/4 cup blueberries
raspberry vinaigrette dressing

Steps:

  • Lay the greens on the plate.
  • Pile the feta and walnuts in the middle of the greens.
  • Scatter the strawberries and blueberries on top.
  • Serve with the dressing on the side, and not until ready to eat (it wilts the salad).
  • Enjoy!
