3 3 3 eggs lightly beaten
1 1 1 cup vegetable oil (or applesauce)
1 1 1 tablespoon vanilla extract
1 3/4 1 3/4 3/4 cups brown sugar
2 2 2 cups shredded zucchini
3 3 3 cups all-purpose flour
1 1 1 teaspoon salt
1 1 1 teaspoon baking powder
1/4 1/4 1/4 teaspoon baking soda
1 1 1 tablespoon ground cinnamon
1/8 1/8 1/8 teaspoon nutmeg
1-1 1/2 1-1 1/2 1/2 cups peeled, diced peaches (drain off excess juice)

Steps:

  • Preheat oven to 350° F. Lightly grease one 9" x 5" loaf pan and one 8" x 4" loaf pan. In a large bowl, beat together the eggs, oil, vanilla and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda, cinnamon and nutmeg. Gently fold in the blueberries and peaches. Transfer to the prepared pans. Bake 1 hour, or until a knife inserted in the center of a loaf comes out clean. Cool 20 minutes in pans, then turn out onto wire racks to cool completely.

Here is a recipe I got a couple of years ago at the local blueberry festival. I love the combination of peaches and blueberries. And the bread is so nice and moist.

2/3 c finely chopped almonds
2 Tbsp sugar
1 1/2 c all purpose flour, divided
3/4 c sugar
2 tsp baking powder
1/2 tsp allspice, ground
1/4 tsp baking soda
1/2 tsp salt
1/3 c butter, softened
1 tsp finely shredded orange peel
1/4 c orange juice
2 large eggs
1/2 c blueberries
2/3 c coarsely chopped peaches

Steps:

  • 1. Preheat oven to 350 degrees. Grease an 8 by 4 inch loaf pan. Stir together chopped almonds and sugar for topping and set aside.
  • 2. In a large mixer bowl stir together 1 cup flour, 3/4 cup sugar, baking powder, allspice, baking soda, and salt. Add butter, orange peel, and juice. Beat until combines on low. Then mix at medium speed 2 minutes. Gradually add eggs and remaining flour. Beat until just combined. Carefully fold in blueberries and peaches. Pour into prepared pan and sprinkle with sugar-almond mixture.
  • 3. Bake at 350 degrees for 40 minutes. Cover bread with foil and continue to bake for 15 minutes more. Cool in pan for 10 minutes. Remove from pan and cool completely before cutting Freezes well.
