This is a wonderful summer-time pie. You can use strawberries, raspberries, or any other tpye of berry, in place of blueberries. This pie does take some effort, but the end result is well worth it!

Number Of Ingredients 7

1 cup Bisquick
1/4 cup butter, at room temperature
3 tablespoons boiling water
6 cups fresh blueberries
1/2 cup water
1 cup sugar
2 1/2 tablespoons cornstarch

Steps:

  • Preheat oven to 425 (F).
  • Place Bisquick and butter in 9 inch pie plate; pour in boiling water.
  • Mix dough with a fork until a soft ball forms and all dough is off the sides.
  • Pat the dough evenly over bottom and sides of pie plate.
  • Press into a neat edge and prick all over with fork.
  • Bake 10-12 minutes or until golden brown.
  • For Filling: Wash, drain, and hull berries.
  • Mix sugar and cornstarch in medium saucepan; add water.
  • Crush 2 cups of berries and add to sugar mixture; bring to a boil and cook until clear, about 3-5 minutes.
  • Set aside and let cool.
  • Arrange remaining 4 cups of berries in the center of the cooled pie crust.
  • Cover with cooled glaze.
  • Serve plain or with whipped cream.

1 - 3 oz package cream cheese
1 - 9 inch baked pastry shell
3 cups fresh blueberries
Glaze:
1 cup fresh blueberries
1/2 cup water
3/4 cup sugar
2 tablespoons cornstarch
2 tablespoons lemon juice

Steps:

  • Soften cheese, spread in bottom of cooled pie shell. Fill with 3 cups berries. Glaze: Combine 1 cup berries and water and bring just to a boil. Reduce heat and simmer 2 minutes. Strain reserved juice (about 1/3 cup). Combine sugar and cornstarch. Gradually add reserved juice. Cook stirring constantly, until thick and clear. Cool slightly add lemon juice. Pour over berries in pastry shell and chill.

Single Pie crust (Recipe) (see below)
1 cup ricotta cheese (250 mL)
5 oz regular cream cheese (150 g)
Liquid sweetener to equal 1/2 cup sugar (125 mL)
2 tsp lemon juice (10 mL)
Blueberry Topping:
13/4 cups frozen blueberries, (425 mL)(unsweetened)
1/2 cup water (125 mL)
Liquid sweetener to equal 1/4 cup sugar (50 mL)
1/2 tsp xanthan gum (3 mL)

Steps:

  • Single Pie crust: Recipe Below. Bake as directed. Filling: In food processor with sharp blade, blender or in bowl with electric mixer, process ricotta cheese until smooth. Add cream cheese, liquid sweetener and lemon juice; process until smooth. Spread evenly over baked crust. Chill until firm. Blueberry Topping: In saucepan, combine blueberries, water, liquid sweetener and xanthan. Bring to boil and cook until blueberry sauce thickens. Allow to cool slightly. Pour topping over chilled cheese layer, leaving outer edge bare. Refrigerate pie. Later garnish with Crème Fraiche (recipe below) around outer edge of pie, if desired. Variations: Glazed Raspberry Cheese Pie: Substitute frozen unsweetened raspberries. (6.0 g Carbs) Glazed Strawberry Cheese Pie: Substitute frozen unsweetened strawberries. (6.4 g Carbs).
