2 packages (3 ounces each) cherry gelatin
2 cups boiling water
1 can (15 ounces) blueberries, drained
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla extract
1 cup sour cream
1/4 cup chopped pecans

Steps:

  • In a large bowl, dissolve gelatin in boiling water; stir in blueberries. Pour into a 11x7-in. dish; chill until set. , In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and sour cream; mix well. Spread over the gelatin layer; sprinkle with pecans. Chill several hours or overnight.

Number Of Ingredients 4

1 1/2 cups blueberries (fresh or frozen)
1 1/2 cups water
3-4 tablespoons maple syrup
1 tablespoon unflavored powdered gelatin

Steps:

  • Blend the blueberries with water and maple syrup in a high speed blender.
  • You will get a little over 2 cups. All is needed for this recipe is 2 cups of juice so enjoy some while you make your gelatin.
  • In a measuring cup, place about 1/4 cup of the blueberry juice and sprinkle with the tablespoon of powdered gelatin. Mix well and allow to sit until the gelatin swells in the liquid for a few minutes.
  • Place the remaining 1 3/4 cups in a medium saucepan over medium heat.
  • Bring to a boil and remove from the heat right away.
  • Add the swelled gelatin immediately and mix until the gelatin is completely dissolved.
  • Place the mixture among the serving molds or gelatin containers you are using, and allow to cool to room temperature first.
  • Refrigerate for 3-4 hours.
  • Ready.

This is one great tasting salad I enjoy making one time a year: when the blueberries are in season. It's pretty much the only thing I make with blueberries, since they are expensive. A pretty colored salad! This is a great salad to have for the 4th of July.

1 (3 ounce) package lime flavored Jell-O® mix
1 tablespoon sugar
2 tablespoons lime juice
1 ½ cups boiling water
1 (8 ounce) container frozen whipped topping, thawed
1 pint fresh blueberries

Steps:

  • In a medium bowl, whisk together the gelatin mix, sugar, lime juice, and boiling water for one minute, or until the gelatin is completely dissolved. Cover, and chill for one hour, or until slightly thickened.
  • When the gelatin mixture is thick, whip with a whisk or electric mixer until light in color, and double in volume. Whisk in whipped topping, and fold in blueberries. Lightly grease a 5 or 6 cup gelatin mold, and fill with the gelatin mixture. Chill for 4 hours, or until firm. Carefully unmold onto a platter, and serve.

1/2 cup sugar
2 envelopes unflavored gelatin
4 cups white cranberry-peach juice drink, divided
1 tablespoon lemon juice
2 cups fresh strawberries, halved
2 cups fresh blueberries
CREAM:
1/2 cup heavy whipping cream
1 tablespoon sugar
1/4 teaspoon vanilla extract

Steps:

  • In a large saucepan, combine sugar and gelatin. Add 1 cup cranberry-peach juice; cook and stir over low heat until gelatin is completely dissolved, about 5 minutes. Remove from the heat; stir in lemon juice and remaining cranberry-peach juice., Place strawberries in an 8-cup ring mold coated with cooking spray; add 2 cups gelatin mixture. Refrigerate until set but not firm, about 30 minutes. Set aside remaining gelatin mixture., Stir blueberries into remaining gelatin mixture; spoon over strawberry layer. Refrigerate overnight. Unmold onto a serving platter., In a small bowl, beat cream until it begins to thicken. Add sugar and vanilla; beat until stiff peaks form. Serve with gelatin.

This recipe was given to me back in 1995 from a woman I met at a baby shower. I had lost the recipe for years...couldn't find it anywhere and often searched recipe sites for something similar to no avail, but recently I found the old recipe again!

1 pkg (8 serv) raspberry jello
2 c hot water
1 small can crushed pineapple, reserve juice
1 small can blueberries, reserve juice
1 8 oz. container sour cream

Steps:

  • 1. Dissolve jello in hot water.
  • 2. Combine pineapple and blueberry juice to equal 2 cps.--if not enough, add cold water.
  • 3. Chill jello in a medium bowl in refrigerator just until thickened.
  • 4. Fold in blueberries, pineapple and sour cream.
  • 5. Put into a mold and chill until set.
  • 6. Unmold when ready to serve.

2 (3 ounce) packages grape flavored Jell-O® mix
2 cups boiling water
1 (8 ounce) can crushed pineapple, undrained
1 (21 ounce) can blueberry pie filling
1 (8 ounce) package cream cheese, softened
1 cup sour cream
½ cup white sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, mix together gelatin powder, boiling water, pineapple and pie filling. Pour into a mold, or glass baking dish, and refrigerate until set, at least 2 hours.
  • In a medium bowl, mix together the cream cheese, sour cream, sugar and vanilla until smooth. Spread over the top of the gelatin. If using a mold, unmold the gelatin before applying topping.

2 cups boiling water
1 can (21 ounces) blueberry pie filling
1 can (20 ounces) unsweetened crushed pineapple, undrained
TOPPING:
1 package (8 ounces) cream cheese, softened
1 cup sour cream
1/2 cup sugar
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Cool for 10 minutes. Stir in pie filling and pineapple until blended. Transfer to a 13x9-in. dish. Cover and refrigerate until partially set, about 1 hour. , For topping, in a small bowl, combine the cream cheese, sour cream, sugar and vanilla. Carefully spread over gelatin; sprinkle with walnuts. Cover and refrigerate until firm.
