Easy and yummy. I made it with light Cool Whip and skim milk and it still got raves from my guests. The cooking time is actually chilling time.

2 (3 1/2 ounce) packages instant vanilla pudding
1 1/4 cups milk
1 1/2 cups blueberries, pureed (1 cup of puree)
3 1/2 cups Cool Whip
1/2 teaspoon cinnamon
1 9-inch baked pie crust
2 teaspoons lemon rind, grated

Steps:

  • Combine 1 package of pudding mix, 1/4 cup milk, cinnamon and pureed blueberries in a saucepan.
  • Cook and stir until mixture comes to a full boil.
  • Pour into crust and chill.
  • Prepare remaining pudding as for pie (directions are on the box).
  • Add 1 tsp lemon rind, cover with plastic wrap, and chill for 1 hour.
  • Fold in 1 cup of Cool Whip and spoon over blueberry layer.
  • Combine remaining Cool Whip and lemon rind; spoon over filling.
  • Chill three hours.

Great cool Summer pie. Good for upcoming 4'th of July. There is never any left around our house once it's served.

2 package(s) vanilla pudding and pie filling (4 serving size)
1 1/4 cup(s) milk
1 1/2 cup(s) blueberries, pureed
1/2 teaspoon(s) cinnamon
1 - 9" cooked pie shell, cooled
2 teaspoon(s) grated lemon rind
3/12 cup(s) cool whip topping

Steps:

  • Combine 1 package pie filling mix, 1/4 cup of the milk, the pureed berries and cinnamon in saucepan. Cook and stir until mixture comes to a full boil. Pour into crust;chill.
  • Prepare remaining package pie filling mix with remaining milk as directed on package for pie. Add 1 teaspoon of the lemon rind; pour into bowl and cover with plastic wrap. Chill about 1 hour, until cold.
  • Fold in 1 cup of the whipped topping and spoon over blueberry layer. Combine remaining whipped topping and lemon rind. Spoon over filling. Freeze 1 hour or chill in refrigerator 3 hours before serving Garnish with blueberrries if desired.
