2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup butter, softened
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
2 ripe bananas, mashed
1 cup fresh blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
  • Mix flour, baking soda, and salt together in a bowl.
  • Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add 1 egg and allow to blend into the butter mixture before adding the second egg along with vanilla extract. Beat mashed bananas thoroughly into the mixture. Add flour mixture in small increments while beating until just combined into a thick batter. Fold blueberries into the batter; pour into prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

This banana bread recipe is yummy, moist and full of banana flavor! We love the addition of blueberries. They really complement the banana flavor. The streusel on top is what sets this banana bread recipe apart and makes it amazing.

1 c mashed ripe bananas (2 to 3)
1 c fresh blueberries or frozen blueberries
3/4 c sugar
2 c all purpose flour + 1 tablespoon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt (I omitted, cause I used salted butter)
1/2 tsp ground cinnamon
1/2 c buttermilk
6 Tbsp butter, melted
1 large egg
STREUSEL TOPPING:
1/4 c all-purpose flour
1/4 c oats, regular
2 Tbsp brown sugar
2 Tbsp butter, cut into chunks
1/4 tsp ground cinnamon

Steps:

  • 1. Preheat oven to 350. In a small bowl, gently mix blueberries with 1 tbsp of flour.
  • 2. In another bowl, blend remaining 2 cups of flour, sugar, baking powder, baking soda, salt, and cinnamon.
  • 3. In a large bowl, whisk mashed bananas, buttermilk, butter, and egg to blend.
  • 4. Stir flour mixture into banana mixture just until evenly moistened, the batter will be stiff.
  • 5. Gently stir in blueberry mixture. Spread evenly into a buttered 9X5 inch loaf pan.
  • 6. For streusel: In a small bowl combine 1/4 cup flour, oats, brown sugar, and softened butter. Mix with fingers till crumbly.
  • 7. Then sprinkle on top of loaf. Bake for 60-70 minutes. Let cool.

Butter, for greasing the loaf pan
1 1/2 cups all-purpose flour, plus extra for dusting the loaf pan
1 teaspoon baking soda
1 teaspoon fine salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup sugar
1/2 cup vegetable oil
2 large eggs, beaten
2 teaspoons vanilla extract
2 ripe bananas, peeled and coarsely mashed to yield about 3/4 cup of mashed banana
1 cup (about 4 ounces) fresh blueberries

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.
  • In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.
  • Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.
