2 cups rolled oats
1 cup unsweetened flaked coconut
¼ cup light brown sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
2 cups skim milk
1 large egg, beaten
3 tablespoons coconut oil, softened
1 teaspoon vanilla extract
1 ½ cups blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Mix oats, coconut flakes, brown sugar, baking powder, cinnamon, and salt in a bowl. Whisk milk, egg, coconut oil, and vanilla extract together in a separate bowl.
  • Arrange about 2/3 the blueberries into the bottom of the prepared baking dish. Spread the oat mixture over the blueberries. Pour milk mixture over the oats and berries. Sprinkle remaining blueberries evenly over the dish.
  • Bake in preheated oven until golden on top and the oatmeal is set, about 40 minutes. Cool 5 minutes before serving.

AWESOME! Great nourishment to start a day! An excellent way to get fruit and fiber. Not necessary, but may be prepared the night before - just bake 5 to 8 minutes longer. A leftover square of this oatmeal warms well in the microwave. Cream or milk poured over hot oatmeal enhances the flavor. If you are using frozen blueberries, no need to thaw - throw them in! Easy to prepare!

4 tablespoons butter, melted
1/2 cup brown sugar (or Splenda)
2 eggs
1 cup applesauce
1 1/2 cups milk
3 cups quick oats or 3 cups regular oats
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup blueberries
brown sugar (or Splenda)
milk

Steps:

  • Mix butter, brown sugar, eggs, applesauce and milk.
  • In separate bowl mix oats, baking powder, salt and cinnamon. Combine with wet mixture and add blueberries. May add more cinnamon to taste.
  • Pour into greased 9 x 9 inch baking dish. May be placed in refrigerator overnight. (If so, allow 5 to 8 minutes additional baking.).
  • Bake in a 350 degree oven for 35 minutes.
  • Cut into squares. Top with brown sugar and milk when served.

Swap your regular porridge for a healthy baked version, packed with oats, juicy blueberries and crunchy almonds. It's a warming breakfast for cold mornings

500ml almond milk
200g jumbo porridge oats
2 tbsp almond butter
1 tsp baking powder
1 egg , beaten
1 small ripe banana , mashed
½ tsp almond extract or 1 tsp vanilla extract (optional)
450g blueberries , plus extra to serve
30g whole, skin-on almonds , roughly chopped
milk or fat-free yogurt and honey, to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Mix all of the ingredients together in a large bowl.
  • Tip the mixture into a 2-litre ovenproof dish, then bake for 30-35 mins until piping hot in the middle. Serve warm with a little milk or yogurt, honey and extra blueberries, if you like.
