BLUEBERRY AND APPLE CRUMBLE/COBBLER WITH BLUE CHEESE
Decadent comfort food. That pretty much says it all. The sweetness of the fruit and sugar goes very well with the bite of the blue cheese. These would be very impressive baked in individual ramekins. I found this recipe in the 2009 Rosenborg calender.

Steps:
- Preheat oven to 350*.
- Mix together apples, blueberries, 1/2 cup sugar and 1/2 cup cheese. Pour into a casserole dish.
- Rub the flour and butter together until it resembles coarse breadcrumbs.
- Stir in the remaining sugar and cheese.
- Spread evenly over the fruit mixture.
- Sprinkle lightly with the demerara sugar, if using.
- Bake for 25 minutes or until the top is golden and the fruit bubbles through the topping.

BLUEBERRY APPLE CRUMBLE
Steps:
- Apple-Blueberry Crumble 6 servings ( I double it a lot) For filling: preheat oven to 375. Combine all ingredients in large bowl. Toss gently. (I mix o.j. and cornstarch together first before I add to rest) transfer to 8x8 glass baking dish. Place on baking sheet. Bake about 45 min. Meanwhile prepare topping- mix into coarse crumbs. After 45 min. sprinkle over filling and return to oven for 35 min. more. Serve with vanilla ice cream or whipped cream.
APPLE BLUEBERRY CRUMBLE
Steps:
- Preheat oven to 375 Line bottom of 8x8 baking pan with peeled and thinly sliced apples. Sprinkle with lemon juice. Arrange blueberries atop apples. In small bowl, cut together flour, sugar, and butter (like for apple pie topping). Sprinkle crumble topping on blueberries. Dust the topping with cinnamon. You could consider dusting the apple layer with some cinnamon sugar before adding the blueberries for some extra sweetness. Bake (covered loosely with aluminum foil) for about 30 minutes, until topping is browning and berry juice is bubbling.
