2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup brown sugar
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon ground cloves
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
3 large eggs
3/4 cup applesauce
1 1/2 cups zucchini, grated
1 1/2 cups carrots, grated
3/4 cup walnuts, chopped
3/4 cup raisins

Steps:

  • Preheat oven to 350 degrees. Grease and flour 9"x 5" loaf pan.
  • Mix together flour, spices, salt, baking powder and soda.
  • In a separate bowl beat eggs, sugars, applesauce and vanilla extract. Mix in zucchini and carrot. Stir in dry ingredients, then walnuts and raisins. Mix well.Pour into greased and floured pan.
  • Bake for 55 minutes in center of oven. The bread is done when a toothpick inserted in the center comes out clean.
  • Cool in pan about 15 minutes. If you greased the pan, cut around the edge with a butter knife to loosen. Turn out onto wire rack to cook completely.
  • Eat alone or top with low-fat cream cheese, strawberries or powdered sugar.

This is the best Zucchini Nut Bread I have ever had and the only one I will make. It's from "Country Fair Cookbook" All recipes in this book are Blue Ribbon winners from fairs around America prior to it's publication in 1975. Wrap and refrigerate overnight to allow the flavor to mellow. I have also made this as muffins. Just lower the temperature. Now that I live in Australia I make this using the Aussie measuring cups and spoons and it turns out fine. I've also made it with half carrot and half zucchini. And other times I've used half wholewheat flour and half plain, just for a change and it works well too. My husband loves it and says it's more like a cake then a bread since it's so moist.

3 cups sifted plain flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
3 eggs
2 cups sugar
1 cup cooking oil
1 tablespoon vanilla
2 cups grated unpared zucchini
1/2 cup chopped walnuts
1 teaspoon flour

Steps:

  • Preheat oven to 350°F (175°C).
  • Sift together plain flour, cinnamon, baking soda, salt and baking powder.
  • Beat eggs well.
  • Gradually add sugar and oil, beat together well.
  • Add vanilla and dry ingredients from above blend well.
  • Stir in the zucchini.
  • Combine walnuts and 1 tsp of flour, stir this into the batter.
  • Pour batter between two 2 greased (I use baking paper) 8 1/2" x 4 1/2" x 2 1/2" loaf tins.
  • Bake for 1 hour or till tests done (skewer poked in the middle comes out clean).
  • Cool in tins on racks for 10 minutes before removing from tins, cool on racks.

The bread is soft, tender, uber-moist, dense enough to be satisfying, but still light. It's just sweet enough to taste like a dessert and not like you're eating vegetables. It's an easy, no mixer recipe, that comes together quickly. Coconut oil adds a nearly imperceptible undertone that's sweeter and more fragrant than canola or vegetable oil, but substitute with them if desired. I grated the carrots and zucchini by hand using the coarsest blade on a box grater. The batter is quite thick and that's by design. Feel free to optionally add walnuts, raisins, or your favorite nuts or dried fruit, or glaze the bread if desired.

1 large egg
1/2 cup light brown sugar, packed
1/3 cup liquid-state coconut oil (canola or vegetable may be substituted)
1/4 cup granulated sugar
1/4 cup cup sour cream (lite is okay; or Greek yogurt may be substituted)
2 teaspoons vanilla extract
2 teaspoons cinnamon
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch salt, optional and to taste
1 cup grated carrots, laid loosely in cup and not packed (about 1 large/2 medium peeled and trimmed carrots)
1 cup grated zucchini, laid loosely in cup and not packed(about 1 medium/large trimmed zucchini)
1/2 cup walnuts, raisins, etc., optional

Steps:

  • Preheat oven to 350F. Spray one 9×5-inch loaf pan with floured cooking spray, or grease and flour the pan; set aside. Note - Loaf is not very tall as baked in a 9×5 pan, but I fear an 8×4 pan will be a bit too skimpy.
  • In a large bowl, add the the egg, brown sugar, oil, sugar, sour cream, vanilla, cinnamon, and whisk to combine.
  • Add the flour, baking powder, baking soda, optional salt, and fold with spatula or stir gently with a spoon until just combined; don't overmix.
  • Add the carrots, zucchini, optional walnuts or raisins, and fold gently to combine.
  • Turn batter out into the prepared pan (it's quite thick, this is what you want), smoothing the top lightly with a spatula.
  • Bake for about 52 to 58 minutes (I baked 54 minutes) or until the top is golden, the center is set, and a toothpick inserted in the center comes out clean, or with a few moist crumbs, but no batter. Tip - Tent the pan with a sheet of foil draped loosely over it at the 35 minute-mark to prevent top and sides from becoming overly browned before center cooks through. Baking times will vary based on moisture content of carrots, zucchini, climate, and oven variances. Bake until done; watch your bread, not the clock and don't worry if it takes longer to bake than the baking estimates provided.
  • Allow bread to cool in pan for about 15 minutes before turning out on a wire rack to cool completely before slicing and serving. Optionally, serve with or glaze with Honey Butter, Cinnamon-Sugar Butter, or Vanilla Bean Browned Butter Glaze, or Cream Cheese Glaze. Bread will keep airtight at room temperature for up to 1 week, or in the freezer for up to 6 months.

1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 Tbsp cinnamon
1 tsp freshly grated nutmeg
1/4 tsp ground allspice

1 c vegetable oil
2 c sugar
3 large eggs
1 Tbsp pure vanilla extract
2 c grated zucchini

Steps:

  • 1. Preheat oven to 350 degrees F. Grease the bottom and sides of two 9 by 5-inch loaf pans. Dust with flour, tapping out the excess.
  • 2. In a large bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice, ginger, and cloves. Set aside.
  • 3. In another large mixing bowl, combine oil, sugar, eggs, and vanilla using a whisk. Mix together well. Add grated zucchini, carrots, and walnuts. Mix together with a rubber spatula until everything is combined.
  • 4. Add the flour mixture a little at a time, until all of the flour is just combined. Do Not Overmix.
  • 5. Divide the batter evenly between the two prepared pans. Bake for 60 to 65 minutes or until a toothpick inserted in the center of the loaf comes out clean. Cool in the pans for 5 minutes, then transfer to a wire rack. Let the bread cool for at least 10 minutes before slicing. The bread can be served warm or at room temperature.

1 1/2 c all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
11/2 tsp cinnamon
2 large eggs
1/2 c plus 1 tb canola oil
1/2 c packed light brown sugar
1/2 c granulated sugar
1 tsp vanilla extract
1 1/2 c zucchini shredded ( about 1 medium zucchini)
1 c chopped apple ( about 1 apple)
1/2-3/4 c raisins
2 medium carrots shredded

Steps:

  • 1. Heat oven to 350 degree's. Grease and flour a loaf pan. (You may also foil line pan for easy removal. Simply foil on the pan before you grease and flour it. )
  • 2. Grate zucchini with peel. Grate peeled carrots. Dice apple. Place all together in a bowl with nuts. Mix to combine and set aside.
  • 3. In a seperste bowl. mix the flour, baking soda, baking powder , salt and cinnamon together. Set aside.
  • 4. In another bowl. Mix oil, eggs, brown sugar, granulated sugar and vanilla together. Mix on low until smooth.
  • 5. Pour egg mixture into flour mixture. Mix on low speed until combined. Do not over mix.
  • 6. Add in Zucchini, apple, raisins, carrot, and nuts. Mix until all ingredients are incorporated.
  • 7. Place in oven at 350°. Bake for approximately one hour., or until pick comes out clean. Remove from oven to cool. when cool. Invert onto a platter. ( if you foil lined baking pans. You don't even need to cool the Loaves. You can plift out of the cans while still hot and then cool)

2 tsp cinnamon
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
3 eggs
2 c sugar
3/4 c vegetable oil
2 c zucchini, grated, well drained
1/2 c chopped walnuts
1/2 c raisins

Steps:

  • 1. Preheat oven to 350. Sift first 5 ingredients.
  • 2. Beat eggs in a large bowl until light.
  • 3. Gradually add sugar and beat until thick and lemon colored.
  • 4. Add oil in thin stream and beat well.
  • 5. Mix in zucchini, nuts and raisins.
  • 6. Add sifted dry ingredients and blend well.
  • 7. Turn into greased and floured 12-cup bundt pan or 2 8x4 inch loaf pans.
  • 8. Bake until tester inserted in center comes out clean, about 50 minutes. Let cool 5 minutes before turning out onto rack. Cool completely before slicing.

1 Tbsp cinnamon
1 tsp baking soda
3 large eggs, beaten
1 Tbsp vanilla
1 c shredded carrot
2 c sugar
1 tsp salt
1/4 tsp baking powder
1 c vegetable oil
1 c shredded zucchini
1 c chopped walnuts or pecans, optional
1/2 c raisins soaked for 5 minutes in 1/2 cup hot water to plump, then drain, optional

Steps:

  • 1. Preheat oven to 325 degrees.
  • 2. In large bowl, combine flour, sugar, cinnamon, salt, baking powder and baking soda.
  • 3. In small bowl, combine eggs, oil and vanilla. Add to dry ingredients and mix. (Batter will be stiff until you mix in zucchini.)
  • 4. Stir in zucchini, carrots, raisins and nuts. As you continue to mix, it will become the proper consistency as the zucchini lets go of its moisture.
  • 5. Pour batter evenly into 2 well-greased 8½x4 inch loaf pans.
  • 6. Bake 1 hour to 1 hour and 15 minutes or until a knife inserted comes out nearly clean. Cool 10-15 minutes before removing from pan. Cool on wire racks.
