This is a great recipe for families - kids love tater tots! It's also a dish that you can truly make your own by varying the meat or vegetable base ingredients as well as the cheese and even the seasonings. I've provided three main choices - SPAM or ham, a mix of onions and mushrooms, or sausage - but you can experiment with others. Try leftover barbecue, or perhaps broccoli or spinach! How about swapping some Fontina for the cheddar and adding some dried basil to the egg mixture? Let your tastes and imagination be your guides!

BASE - CHOOSE ONE:
12 ounce(s) spam or ham, diced
1 1/2 cup(s) chopped onions and mushrooms
12 ounce(s) ground breakfast sausage
REMAINING INGREDIENTS:
8 eggs, large
1/2 cup(s) milk
1 teaspoon(s) salt
1/4 teaspoon(s) black pepper
1 teaspoon(s) garlic powder
2 cup(s) shredded cheddar cheese (8 ounces)
1 bag(s) (32 ounces) frozen tater tots
optional: additional shredded cheese
optional: chopped green onions or chives

Steps:

  • Preheat oven to 350 F.
  • Prepare a 12-inch, oven-safe nonstick or well-seasoned cast iron skillet: if using ham, SPAM, or onions and mushrooms, lightly spray pan with cooking oil. If using sausage, omit the oil.
  • If using ham or SPAM, no pre-cooking is necessary. If using onions and mushrooms, sauté the vegetables until tender but not mushy; remove from heat. If using sausage, cook until browned and cooked through (about 5 to 7 minutes); remove from heat but do not drain.
  • Spread meat or vegetables evenly across bottom of skillet.
  • In a medium bowl, whisk together the eggs, milk, salt (omit salt if using ham or SPAM), black pepper, and garlic powder.
  • Sprinkle the shredded cheese in an even layer on top of the meat or vegetables. Pour the egg mixture evenly over the cheese.
  • Starting at the outer edge, place frozen tater tots in a circle on top of the mixture. When that circle is complete, begin another row inside the first.
  • Continue placing tater tots in concentric circles until you have reached the center of the casserole. You will not use the entire bag; reserve any extra for future use.
  • Bake at 350 for 35 to 40 minutes or until eggs have set.
  • If desired, sprinkle with additional shredded cheese and return to oven until cheese melts (about 1 to 2 minutes).
  • Remove from oven and allow to sit for about 2 minutes. If desired, sprinkle with chopped green onions or chives. Cut into wedges and serve.

Number Of Ingredients 10

6-8 white potatoes, depending on size
8 oz cheddar cheese (or any variety)
2-3 c ham, cubed
1 medium onion, diced
some butter for sautéing
3 Tbsp butter
2 Tbsp all-purpose flour
1½ c milk
some salt & pepper, to taste
½ - 1 c additional milk

Steps:

  • 1. Peel and slice the potatoes. Then set aside.
  • 2. Shred the cheese and cube the ham.
  • 3. Sauté the onion in a little butter; then set aside.
  • 4. Make a roux in a medium saucepan over medium heat. (Or just use the sauté pan.) Melt the 3 tablespoons of butter, then sprinkle in the flour.
  • 5. Whisk in the milk, stirring constantly, until the white sauce starts to thicken. Salt & pepper, to taste. Remove from heat and set aside.
  • 6. To assemble, butter a 3 qt. (or up to a 13 x 9") baking dish. Spread 1/3 of the white sauce over the bottom of the dish.
  • 7. Layer 1/2 of the potatoes, 1/2 of the onions,1/2 of the ham, and 1/2 of the cheese.
  • 8. Spoon over ½ of the remaining white sauce.
  • 9. Repeat layers of the rest of the potatoes, onion, white sauce, and finish with ham and cheese on top.
  • 10. Drizzle additional milk over the top of the prepared casserole. If the white sauce was barely thickened, just add ½ cup of milk. If the white sauce got more thickened while making it, add a little more milk, but no more than 1 cup or the casserole will be soupy. But if you like it that way... =^..^=
  • 11. Bake uncovered at 350˚ F for about 45 minutes or until the potatoes are cooked through and the cheese is bubbling.
  • 12. Serve immediately and stand back to avoid the stampede.

This is an easy, versatile breakfast casserole! I've had luck substituting in sausage like Jai suggests and also using other cream soups when I don't happen to have cream of mushroom on hand.

1 1/2 c cooked ham, chopped
1/2 c green onions, sliced
1 can(s) cream of mushroom soup
12 eggs
4 oz shredded cheddar cheese
1/2 c half and half

Steps:

  • 1. Heat oven to 250.
  • 2. Grease 2-quart casserole.
  • 3. In large skillet, melt butter.
  • 4. Saute onions until crisp tender.
  • 5. In large bowl, beat eggs; stir in half and half and ham.
  • 6. Pour egg mixture into skillet with onions; mix well.
  • 7. Cook over medium heat.
  • 8. As mixture begins to set, gently lift cooked portions with spatula so that thin uncooked portions can flow to bottom.
  • 9. Avoid constant stirring.
  • 10. Cook until eggs are thickened throughout; spoon into prepared casserole dish.
  • 11. Pour soup evenly over top.
  • 12. Bake at 250 for 30 minutes; sprinkle with cheddar cheese and bake 10-15 minutes longer.

5 large croissants (stale, torn/cut bite-size)
2 thick slice Italian bread (stale, torn bite-size)
1 1/2 c leftover baked ham, chopped bite-size
1 large shallot, minced
6 oz baby Swiss cheese, shredded or chopped
3 to 4 oz Monterey Jack cheese, shredded/chopped
4 large eggs
2 c milk (whole or 2%)
3/4 to 1 tsp Jane's Krazy Mixed Up Salt (or your favorite seasoned salt)
1/8 c sharp or extra-sharp cheddar cheese
1/8 to 1/4 c real, finely crumbled smoked bacon bits
1 Tbsp minced fresh chives

Steps:

  • 1. The evening before, gather and prep ingredients.
  • 2. Spray a 13" x 9" baking dish with butter flavored cooking oil spray or grease with real butter.
  • 3. Evenly distribute torn croissants and bread in baking dish.
  • 4. Evenly distribute chopped ham, minced shallots, baby Swiss and Monterey Jack over bread; set aside.
  • 5. In a mixing bowl, whisk together 4 eggs and about 1/2 cup of the milk, until well blended; whisk in the salt; add remainder of milk in several stages, whisking well after each.
  • 6. Slowly pour milk mixture all over the casserole.
  • 7. Scatter small amount of extra-sharp cheddar over casserole. Lightly press down on the casserole with large spoon or impeccably clean hands (as Julia Child would say!) to help the bread soak up the liquid.
  • 8. Cover dish tightly with aluminum foil; place in refrigerator overnight.
  • 9. The next day, approximately 1 1/4 hours before mealtime, preheat oven to 350 degrees F.
  • 10. Remove casserole from refrigerator; temporarily remove foil; scatter finely crumbled bacon over top.
  • 11. Cover with foil; place casserole dish on a baking sheet; bake at 350 degrees for 30 minutes, remove foil, rotate baking sheet and bake, uncovered, for an additional 30 minutes.
  • 12. Allow to cool for a few minutes, then scatter chives over the top. Serve immediately. Cover and refrigerate leftovers.

1/4 c butter
2 Tbsp onion, diced
1/4 c all-purpose flour
1 tsp salt

1 1/2 c whole milk (can use part cream or half & half)
1 1/2 c cheddar cheese, shredded
2 c cooked ham, diced (optional)

Steps:

  • 1. Preheat oven to 350 F. Spray casserole dish with cooking oil spray or grease casserole dish with shortening.
  • 2. Saute onion in butter.
  • 3. Add 1/4 cup flour, salt, mustard, and pepper to onion and butter.
  • 4. Gradually add milk/cream whisking to make a nice white sauce. Stir and cook until thick.
  • 5. Add shredded cheese, potatoes and ham (if so desired). Stir all ingredients together. Add a bit more milk if needed. The potatoes will absorb some of the milk so you may need a little more.
  • 6. Pour into greased casserole dish. Bake uncovered in oven for about 30 min. Then, spread more cheese on top and bake for 10-15 min longer before removing from oven.
