BROWNIE CHEESECAKE

This dessert is the epitome of c-h-o-c-o-l-a-t-e! Sweet and creamy, this beautiful treat will be the highlight of any meal.

CRUST
31 creme-filled chocolate cookies, crushed
1/4 c unsalted butter, melted
FILLING
24 oz cream cheese, softened (3 pkgs)
1 c sugar
1 Tbsp vanilla extract
1 c sour cream
1 c heavy whipping cream
4 eggs
1/4 c all-purpose flour
1 1/2 c brownies, coarsely chopped
TOPPING
8 oz milk chocolate, chopped
1/3 c heavy whipping cream
2 oz white chocolate, melted

Steps:

  • 1. Heat oven to 325ºF. In medium bowl, stir together all crust ingredients. Press into bottom (and 1 inch up the sides) of a 9-inch springform pan. Wrap pan with heavy-duty foil; freeze 30 minutes.
  • 2. In large bowl, beat cream cheese, sugar and vanilla at medium speed until blended. Beat in sour cream and 1 cup cream. Add eggs one at a time, beating just until blended.
  • 3. Slowly beat in flour, then gently fold in brownies.
  • 4. Place springform pan in large baking or broiler pan. Pour batter into crust (batter will come to within 1/4 inch of top edge). Add enough hot tap water to baking pan to come halfway up sides of springform pan. Bake 1 hour 15 minutes to 1 hour 30 minutes or until edges are puffed and top is dry to the touch. Center should move slightly when pan is tapped, but should not ripple as if liquid. Remove springform pan from baking pan; remove foil. Cool completely on wire rack. Refrigerate overnight.
  • 5. Melt milk chocolate and 1/3 cup cream in medium saucepan over low heat, stirring until smooth. Pour over top of cheesecake; let stand 10 minutes.
  • 6. Pour white chocolate into small resealable plastic bag; snip off corner of bag. Drizzle chocolate over cheesecake. Refrigerate at least 1 hour. Refrigerate leftovers.

1 (19.8 ounce) package brownie mix
1 (8 ounce) package cream cheese
1 egg
⅓ cup white sugar

Steps:

  • Prepare the brownie mix as directed by manufacturer. Preheat oven to temperature indicated on box. Grease a 9x13 inch pan.
  • Spread the brownie batter evenly into the prepared pan. Using an electric mixer, beat together the cream cheese, egg and sugar until smooth. Dollop the cream cheese mixture on top of the brownie batter. Swirl together using a knife or skewer.
  • Bake according to manufacturer's instructions. Brownies will be done when a toothpick inserted comes out clean. Cool in the pan, then cut into bars and serve.

Brownies alone are great. But add cheesecake to them and you've won my taste buds over. The cheesecake is tangy and sweet. The icing, though, is over the top. Marshmallow fluff lightens it up and is delicious. I could eat the icing with a spoon. What a yummy cheesecake brownie recipe!

1 pkg family style chewy fudge brownie mix
3 eggs
12 oz cream cheese
1/2 c sugar
2 Tbsp all-purpose flour
1 tsp vanilla extract
1 c milk chocolate chips
1 tsp canola oil
7 oz marshmallow fluff
3 Tbsp chocolate sprinkles

Steps:

  • 1. Preheat oven to 350 degrees F. Line 9" square baking pan with foil to overhang sides by 2". Coat with cooking spray.
  • 2. On medium speed, beat brownie mix, 2 eggs plus one egg yolk (reserve remaining egg white) and 1/4 cup water until combined, about 1 minute. Pour into lined pan. Bake 15 minutes.
  • 3. Beat 8 oz cream cheese, reserved egg white, sugar, flour, and vanilla.
  • 4. Pour over baked brownie mix and return to the oven. Bake for an additional 20 minutes or until pick inserted in center comes out with moist crumbs. Cool completely.
  • 5. At this point, the cooled brownies can be removed from the pan and separated from the foil if you wish. (I put the brownie on a cutting board to finish off the icing and sprinkles before slicing/plating.)
  • 6. Melt chocolate and stir in oil. Beat remaining cream cheese and 1 Tbsp water. Beat in melted chocolate, then add marshmallow fluff until smooth. Spread over cooled brownies and chill. Top off with chocolate sprinkles (jimmies, shots), if desired.

¾ cup sifted all-purpose flour
1 tablespoon unsweetened cocoa powder
¼ teaspoon salt
1 pinch salt
6 tablespoons salted butter
5 ounces semisweet chocolate
1 ounce bittersweet chocolate
1 cup packed light brown sugar
2 eggs, lightly beaten
½ large banana, mashed
½ cup chopped toasted walnuts
½ cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray the bottom of an 8x8-inch metal baking pan with cooking spray.
  • Mix flour, cocoa, and 1/4 teaspoon plus a pinch of salt together in a bowl and set aside.
  • Melt butter in a medium saucepan over low heat. Add semisweet and bittersweet chocolate to melted butter and stir until smooth. Remove from heat; set aside for 2 to 3 minutes.
  • Meanwhile, mix brown sugar, eggs, and banana by hand until combined, about 1 minute. Add melted chocolate mixture to banana mixture and stir well, about 1 minute more. Mix flour mixture slowly into chocolate, stirring just enough to combine. Fold in walnuts and chocolate chips. Spread batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out with moist crumbs, 35 to 40 minutes. Remove from the oven and let cool in the pan on a wire rack for at least 2 hours before cutting.

1 egg
1/2 teaspoon vanilla extract
3 tablespoons sugar

1 (12 ounce) bag milk chocolate chips
1 tablespoon olive oil
1 cup butter, softened
1 cup dark brown sugar
1 -2 teaspoon vanilla extract
3 eggs
1/2 teaspoon salt
1 cup flour

Steps:

  • FOR CHEESE CAKE TOPPING:.
  • In a small bowl, stir together all the ingredients for topping and set aside.
  • FOR BROWNIE:.
  • Preheat oven to 350°F; grease a 9x13-inch glass pan**.
  • In a small bowl, melt the chocolate chips with the olive oil in the microwave, set aside.
  • In a medium mixing bowl, beat the butter and sugar until light and fluffy.
  • Slowly beat in chocolate.
  • Add vanilla and 1 egg at a time until combined.
  • Add flour and beat until just combined, do not over mix.
  • Pour brownie mix into pan and spread out evenly.
  • Spoon cheese cake topping over and spread out.
  • With a knife, make little swirls in the batters, not to really combined them, but to just make swirly patterns on the top.
  • Bake for 20-30 minutes, or until a toothpick comes out with crumbs on it.

FIVE-STAR BROWNIES

There's a bit of my state's history behind these brownies' name and shape. In 1990, when I entered them at our state fair, Kansas was celebrating the 100th birthday of a famous native son, Dwight Eisenhower. In fact, that occasion was the theme of the fair. So I renamed my brownies, in honor of the rank he'd achieved as a general and cut them out with a star cookie cutter. They ended up winning a blue ribbon! -Pam Buerki Rogers, Victoria, Kansas

2 cups sugar
1-1/2 teaspoons vanilla extract
1/2 cup butter, melted
1/4 cup shortening, melted
1-1/2 cups all-purpose flour

Steps:

  • In a large bowl, beat the eggs, sugar and vanilla until blended. Beat in butter and shortening until smooth. Combine the flour, cocoa and salt; gradually add to egg mixture. Stir in nuts if desired. , Line a 13x9-in. baking pan with foil and grease the foil; pour batter into pan. Bake at 350° for 30 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack. , Using foil, lift brownies out of pan. Discard foil. Cut brownies with a 3-in. star-shaped cookie cutter or into bars.

Found this in Good Housekeeping Magazine, May, 2006. From Lindell Hughes of Neosho, Missouri. She made this as a young girl for a 4-H competition and her recipe eventually won a prize at the state fair. It is made in a 13" X 9" glass or ceramic baking dish. Cooling and chilling time not included in estimates nor is the extra hour in the oven after baking.

2 cups graham cracker crumbs
1/2 cup butter, melted
1 teaspoon cinnamon
1 1/2 cups sugar
3 (8 ounce) packages cream cheese, softened
3 large eggs
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F. In a 13" X 9" ceramic or glass baking dish, mix crumbs, butter, cinnamon, and 1/2 cup of the sugar until crumbs are moistened. Reserve 1 cup of the crumb mixture. Press remaining mixture firmly onto the bottom of dish.
  • In a large mixing bowl, with mixer on medium speed, beat cream cheese, eggs, vanilla, 1/8 teaspoons of salt, and remaining sugar until creamy, about 3 minutes. Add sour cream; beat 30 seconds or until blended.
  • Pour cream cheese mixture over the crumb crust and spread evenly. Bake 20 minutes. Remove cheesecake from oven and sprinkle with reserved crumb mixture. Return to oven; bake 10 minutes longer. Turn off oven and leave cake inside the oven for 1 hour. Remove the cake and cool completely on a wire rack. Cover and refrigerate until well chilled, at least 3 hours or overnight.
