BLUE HEAVEN'S YELLOWTAIL SNAPPER

1/2 cup dry white wine
1 tablespoon lemon juice
1 tablespoon lime juice
1/4 cup whipping cream
5 tablespoons cold butter
salt and pepper to taste
3 tablespoons all-purpose flour
2 6- 8-ounce yellowtail snapper, grouper or other snapper fillets

Steps:

  • For citrus beurre blanc, combine wine and juices in a pan and boil until reduced to 3 tablespoons, about 10 minutes.
  • Add cream and simmer to about 1 1/84 cup and slightly thickened, about 2 minutes. Remove from the heat and whisk in 4 tablespoons butter. Season with salt and pepper, set aside and keep warm.
  • Meanwhile, pour flour in a shallow dish and dip fillets in it to coat. Melt remaining butter in a pan and cook fillets, turning once, till fish flakes easily, about 8 minutes.
  • Serve fish over a pool of beurre blanc with fried plantains, steamed fresh green beans and fresh corn.

I found this recipe online, the Blue Heaven is a fantastic Key West restaurant that I used to frequent, eat outside with roosters running around you, a great tire swing in the yard...it's a kind of eclectic (young hippy-like) restaurant with award winning gourmet chefs.

1 lb scallops
1 teaspoon garlic, minced
1/2 tomatoes, diced
1/2 sweet onion, chopped
1/4 lb mushroom, sliced
1 teaspoon capers
1/4 cup white wine or 1/4 cup chicken broth
butter, slices

Steps:

  • This is an edited version of the original, but oh so yum! I used some Swanson's fat free broth vs. wine, mainly because it's what I had, and I added the capers because I like them!
  • The trick is to use a VERY HOT pan to sear the scallops. I used the large sea scallops and I sprayed the pan with cooking spray first. Then you quickly add the garlic. When done quickly, it browns the scallops slightly and thus you get a brownish sauce to go along.
  • Add the tomatoes, onion, mushrooms, capers which will cool down the pan so the scallops and garlic stop cooking.
  • Cook for just a minute, add the wine or broth, stir it up to get the scrapings into the sauce (like clarifying?) and simmer for a minute or two.
  • Remove from heat and add the butter slice, swirl it to finish the sauce.
  • This is some good stuff fit for a very special occasion. I served with shrimp scampi, asparagus with hollandaise, and garlic bread which was a great way to enjoy all those flavors as dipping sauces.

This is my version of the banana pancakes from Blue Heaven in Key West, FL. I've eaten there so many times and miss their delicious pancakes. It's not their exact recipe, obviously, but I think I got the flavor and texture almost exactly right!

3/4 cup whole milk
1 egg, beaten
2 medium very ripe bananas
2 tablespoons oil or 2 tablespoons melted butter
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon light brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons vanilla
1/8 teaspoon nutmeg
chopped walnuts (I like to toast them first) (optional) or pecans (I like to toast them first) (optional)
1 cup maple syrup or 1 cup cane syrup, heated
1/2 teaspoon cinnamon
1 dash nutmeg
1 teaspoon brown sugar
1 tablespoon unsalted butter, melted

Steps:

  • Beat egg until fluffy. Add milk and oil/melted butter. Add vanilla.
  • In another bowl, combine all dry ingredients.
  • Take bananas out of skin and cut into very small pieces (1/2"). They do not have to be perfect, and do not worry about then getting a bit "mashed".
  • Add dry ingredients gradually to egg mixture.
  • Add cut bananas (and toasted nuts, optional).
  • In a non-stick 8-10" skillet, heat pan to medium. Pan is ready when water dances on surface.
  • Pour batter in pan using ladle or pitcher, forming a pancake approx 4-5" wide.
  • When the edges start looking a little "matte" and the pancake is bubbly, flip. When you see steam start "wisping" from the edges of the pancake, it is done.
  • Top with syrup (mix ingredients above and heat in microwave for 30-45 seconds), whipped cream, or more bananas and nuts.

1/2 ounce fresh lime juice
3 1/2 ounces pineapple juice

Steps:

  • Add all ingredients to a cocktail shaker filled with ice.
  • Shake vigorously.
  • Strain into an ice-filled highball glass.
  • Garnish with maraschino cherry and pineapple wedge.
