White Chile Con Queso image

In the 80's, JULIO'S in Juarez served a delicious chili con queso much like this. The original recipe was adapted from an Old El Paso newsletter.

1 large onion, chopped
2 tablespoons oil
5 (4 ounce) cans chopped green chilies
5 jalapenos, diced
1/4 teaspoon black pepper
1 teaspoon garlic powder
1/2 cup water
1 (4 ounce) jar diced pimentos (optional)
4 cups shredded monterey jack cheese (about 1 lb)
1/2 cup evaporated milk
tortilla chips

Steps:

  • Saute onion in oil until tender.
  • Add chilies, jalapenos,pepper and garlic powder and cook for 5 minutes, stirring often.
  • Add water and pimentos, mix, and add evaporated milk and cheese.
  • Reduce heat and stir as needed until cheese melts.
  • Serve with tortilla chips.

This is my version of queso that is familiar with Pappasito's in Houston, TX. I found this copycat from CopyKat.com with my adjustments of more onion, garlic, and tomato.. and this is fairly close..but not quite there.. it's really good all the same!! Hope you think so too!

1 1/2 lbs process American cheese (I use Land O' Lakes, not Velveeta)
1 (4 ounce) can green chilies, do not drain
1 tablespoon garlic (the kind from a jar)
3/4 cup diced white onion
1/3 cup milk
3/4 cup diced ripe tomatoes, seeds discarded
1/2 teaspoon garlic salt

Steps:

  • Melt cheese with milk and stir until blended.
  • Add chilies with liquid.
  • Add garlic, onion and stir until onions are transparent.
  • Remove from heat and add tomatoes before serving.

2 teaspoons extra virgin olive oil
1 cup chopped onion
1 1/2 teaspoons minced garlic
1 (4 ounce) can chopped green chilies
2 canned chipotle chiles, chopped
1 tablespoon adobo sauce from can chipotle chile
1 cup canned diced tomato
8 ounces monterey jack cheese, shredded
8 ounces sharp cheddar cheese, shredded
1 cup sour cream

Steps:

  • Heat oil in large saucepan and cook onions and garlic until translucent, but not browned.
  • Add chiles, adobo sauce, and tomatoes, then lower heat.
  • Add cheese, stirring until melted, being careful not to scorch on bottom.
  • Slowly stir in sour cream.
  • Cook until just heated; do not boil.
  • Serve with tortilla chips or chopped vegetables.

1 cup chicken broth
4 ounces cream cheese
1 tablespoon cornstarch
1 tablespoon minced chipotle chile (omit for a milder chile)
1 teaspoon minced garlic
1/4 teaspoon pepper
2 cups shredded monterey jack cheese
1 cup shredded American cheese (deli-style block cheese)
1 (10 ounce) can diced tomatoes with green chilies, drained (can substitute 1 1/4 cups diced tomatoes plus one minced jalapeno, drained)

Steps:

  • Microwave broth, cream cheese, cornstarch, chipotle, garlic, and pepper in large bowl, whisking occasionally, until smooth and thickened, about 5 minutes. Stir in Monterey Jack and American cheeses until combined.
  • For a 1 1/2- to 5-quart slow cooker: Transfer mixture to slow cooker, cover, and cook until cheese is melted, 1 to 2 hours on low.
  • For a 5 1/2- to 7-quart slow cooker: Transfer mixture to 1 1/2‐quart souffle dish. Set dish in slow cooker and pour water into slow cooker until it reaches about one‐third up sides of dish (about 2 cups water). Cover and cook until cheese is melted, 1 to 2 hours on low. Remove dish from slow cooker.
  • Whisk cheese mixture until smooth, then stir in tomatoes. (Adjust consistency with hot water 2 tablespoons at a time as needed. Dip can be held on warm or low setting for up to 2 hours.).

  • 1. This is made on a *HOW MUCH DO YOU WANT BASIS*...
  • 2. You only need to know two main things on this recipe... 1.) 3 cups of water per every 2.5 lbs of cheese. 2.) This HAS to be done in a double boiler because of the type of cheese used.
  • 3. Saute vegetables in a little butter until transparent. Melt cheese and water in the double boiler and once smooth add sauteed vegetables. YUMMY!!!
