1 tablespoon Dijon mustard
1 medium shallot, minced
1 1/2 teaspoons chopped fresh thyme
1/2 cup olive oil
1 5-ounce bag mixed baby greens
2 large ripe pears, halved, cored, thinly sliced lengthwise
1 cup crumbled blue cheese
1 cup walnuts, toasted, coarsely chopped

Steps:

  • Whisk first 4 ingredients in small bowl to blend. Gradually whisk in oil. Season dressing to taste with salt and pepper.
  • Toss greens in large bowl with enough dressing to coat. Divide greens among 6 plates. Top with pear slices, dividing equally. Sprinkle with cheese and walnuts. Drizzle lightly with remaining dressing and serve.

If you've been looking at endive and radicchio in the stores for years but never bought any because you thought you just wouldn't like it, I'm here to tell you, you probably do--especially in a salad like this. When chicory is combined with a sweet and tangy mustard vinaigrette, mixed with toasted, crunchy nuts, and wonderfully rich, subtly salty blue cheese, it all makes perfect sense.

1 cup chopped walnuts
2 tablespoons Dijon mustard
6 tablespoons rice vinegar
3 tablespoons balsamic vinegar
¼ teaspoon freshly ground black pepper
½ cup olive oil
1 head radicchio
4 heads Belgian endive
4 ounces blue cheese, crumbled

Steps:

  • Stir or toss walnuts in a dry pan over medium heat until very hot to the touch and toasted, about 5 minutes.
  • Mix Dijon mustard, rice vinegar, balsamic vinegar, and pepper together in a bowl for dressing. Pour in olive oil, about 1 teaspoon at a time, whisking constantly, until thick and coats the back of a spoon. Taste and adjust as necessary.
  • Cut radicchio in half; cut out the core using 2 angled cuts. Cut each half in half again and slice across into about 1-inch pieces. Slice root ends off of endive and peel off about 1/3 of the leaves, leaving them whole for presentation. Slice remaining endive into 1/2-inch pieces.
  • Transfer all radicchio and endive to a bowl and toss, making sure leaves are separated and evenly distributed. Crumble in about 1/2 of the walnuts and 1/2 of the blue cheese. Pour in dressing and toss with your hands until everything is perfectly coated.
  • Place whole endive spears on a serving plate. Pile salad on top and scatter remaining walnuts and blue cheese on top.

Continue to heat the walnuts, stirring continuously, for approximately 2-3 minutes or until they are fragrant, caramelized and lightly browned. Remove from the heat; set aside.

1 green apple
10g hard blue cheese , crumbled or vegetarian blue cheese
100g walnuts , chopped
6 tbsp soured cream
2 tbsp cider vinegar

Steps:

  • Make the dressing by combining the soured cream and vinegar with some seasoning.
  • Get a large bowl of iced water ready. Break the celery down into sticks and set aside any of the tender leaves from the middle. Using a swivel blade peeler, peel each stick of celery, discarding the first stringy layer. Continue to make 'strings' or ribbons and tip these into the iced water until needed. Cut the apple into thin slices, discarding the core, then cut the slices into thin matchsticks.
  • Drain the celery and toss in a large bowl with the dressing, apple and most of the cheese and walnuts. Spread the salad onto a platter and scatter with the remaining walnuts, blue cheese and celery leaves.

1 cup walnut pieces
1/2 cup blue cheese, crumbled
2 tablespoons chopped flat leaf parsley
1/4 cup walnut oil (can use other neutral oil such as canola, but the walnut oil gives a great flavor)
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
salt and pepper, to taste

Steps:

  • Cut off the bottoms and very tops of the endive heads. Separate into individual leaves, and julienne the leaves into sticks. Rinse thoroughly.

This is a recipe I clipped from a cooking magazine over 20 years ago. I suppose the salad is similar to others posted but the dressing is slightly different. Pear nectar can be found amongst the canned juices at your grocer. Buy a good crumbled blue cheese and feel free to cheat and buy pre-sweetened nuts. Enjoy this refreshing salad. Cook time is sugar coating the nuts.

3 medium pears, semi-firm but ripe, peels on
2 tablespoons lemon juice
salad greens, enough for 8 servings
1/2 cup blue cheese, crumbled
1 cup walnuts, candied (see recipe below)
1/2 cup sugar
2 tablespoons butter
vinaigrette dressing (recipe below)
1/3 cup white wine vinegar
1/3 cup salad oil
1/3 cup pear nectar
1 teaspoon dijon-style mustard, sub. grainy brown
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Halve and core the pears. Slice thin, brush with lemon juice to prevent browning. This may be done up to 60 minutes ahead.
  • To arrange the salads: line plates with salad greens.
  • Fan pear slices atop each serving.
  • Sprinkle with some blue cheese and candied nuts.
  • Drizzle with dressing. Serve extra on the side.
  • CANDIED WALNUTS / PECANS.
  • Line a baking sheet with foil. Butter or spray with a nonstick oil.
  • In a heavy skillet, over medium heat, combine: 1 C walnuts, 1/2 C sugar and 2 T butter.
  • Cook until sugar starts to melt, DO NOT stir. Reduce heat to low and cook 'til sugar is golden brown. Stirring occasionally.
  • Remove from heat and pour onto prepared baking sheet. Cool completely. Break into clusters.
  • PEAR NECTAR VINAIGRETTE.
  • In a screw top jar, combine:
  • white wine vinegar, oil, pear nectar, Dijon mustard, salt, pepper.
  • Cover and shake well.
  • Store in refrigerator for up to one week.
  • Shake before serving.
  • Makes about 1°C.

1l chicken stock or water
1 celery heart, finely chopped
1 Granny Smith , peeled, cored and finely sliced
2 shallots , finely sliced
25g walnut , toasted and chopped
2 tbsp flat-leaf parsley , finely chopped
a few handfuls mixed leaf salad
1 tbsp strong blue cheese , crumbled (we used Roquefort)
2 tbsp extra-virgin olive oil or walnut oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 garlic clove , crushed

Steps:

  • Put the lentils and stock or water in a large saucepan and bring to the boil. Reduce the heat and simmer for 20-25 mins, or until al dente. Drain and pour into a bowl. Add the celery, apple, shallots, walnuts, parsley and salad leaves, then mix together well.
  • To make the vinaigrette, put all the ingredients in a small glass jar with a lid. Season and shake well. Keep the lid on until ready to serve. Pour the dressing over the salad, toss well, then scatter over the blue cheese.

I have been experimenting with orzo this past year, and every dish I make with it, is better than the last. This little salad is perfect for a pot luck or buffet. And wait until you taste the candied walnuts with the citrus and the blue cheese. Great combo!

1 Tbsp unsalted butter
1 Tbsp olive oil
1 large onion diced
1/2 tsp kosher salt
1/4 tsp freshly ground pepper
1 c uncooked orzo
pinch salt and pepper to season orzo and water
1-3/4 c water
4 scallions chopped
4 navel oranges supremed (save the liquid for the dressing)
2 stalk(s) celery chopped
4 oz crumbled blue cheese
1/4 c cilantro chopped (optional)
1 c walnuts
3 Tbsp sugar
1 Tbsp unsalted butter
SALAD DRESSING
1 clove garlic finely chopped
2 lemons juiced
1 Tbsp rice wine vinegar
liquid from supremed oranges
extra virgin olive oil
1 tsp dijon mustard

Steps:

  • 1. To make the orzo: In medium size sauce pan on medium low heat, melt butter and olive oil. Add the chopped onions and salt and pepper. Cook uncovered to soften the onions, not brown them. After about 5 minutes they will be translucent and ready to accept the orzo. Add the cup of orzo and coat with the buttery onion mixture. Add a bit more salt and pepper as orzo has absolutely no taste. Let the orzo toast a bit (2-3 minutes) and add water and bring to a boil. Cover, reduce heat to the lowest simmer and cook 12-13 minutes. The orzo will still be a bit watery, but keep covered off the heat and all the liquid will evaporate.
  • 2. While orzo is cooling, candy the walnuts. In large saucepan on medium heat add the sugar and butter. Mix to combine. Now add the nuts and coat them in the sugary liquid. Toast the mixture for about 3 minutes. Just keep an eye on the nuts as they can burn before 3 minutes. Transfer candied nuts to a piece of parchment and separate the the best you can and set them aside to cool.
  • 3. To make the dressing, combine all ingredients in a medium size jar and shake, or just whisk everything together until it emulsifies.
  • 4. To assemble the dish, combine scallions, orange segments, celery and cilantro. Now add your blue cheese and cooled orzo. If I'm making this ahead, I dress the salad with only half the dressing, cover with plastic wrap and refrigerate. Then I dress it again right before serving time. I like the salad served at room temp, but it's still delish served cold. And don't forget to liberally sprinkle those sweet toasted walnuts on top of your salad right before serving. By the way you can make individual lettuce cups with this recipe. they get grabbed up fast tho!

3 tablespoons lemon juice
1 tablespoon Dijon mustard
1 medium shallot, minced
1 1/2 teaspoons chopped fresh thyme
1/2 cup olive oil
1 (5 ounce) bag mixed baby greens
2 large pears, sliced
1 cup crumbled blue cheese
1 cup toasted and chopped walnuts

Steps:

  • Whisk first 4 ingredients in small bowl to blend. Gradually whisk in oil. Season dressing to taste with salt and pepper.
  • Toss greens in large bowl with enough dressing to coat.
  • Divide greens among 6 plates.
  • Top with pear slices, dividing equally.
  • Sprinkle with cheese and walnuts.
  • Drizzle lightly with remaining dressing and serve.

24 1/4 inch thick slices ciabatta bread(or baguette)
4 tablespoons walnut oil
1/2 cup chopped toasted walnuts (or pecans)
8 oz crumbled blue cheese
6 tablespoons minced shallots (may be too much, can decrease)
1/3 cup dried cranberries
8 cups baby frisee, torn into thin pieces (probably too much)
2 teaspoons Banyuls vinegar or red wine vinegar
sea salt

Steps:

  • Preheat oven to 400 degrees. Arrange bread slices on baking sheet. Brush bread slices on top with 2 tablesppons walnut oil. Bake until crisp, about 5 minutes. Mix walnuts(or pecans), cheese, 4 tablespoons shallots and dried cranberries in medium bowl. Spread mixture on toasts. Bake unitl cheese melts, about 4 minutes. Meanwhile, combine frisee, 2 tablespoons shallots, 2 tablespoons walnut oil and vinegar in bowl. Sprinkle with sea salt and toss. Serve with or over crostini. (Theresa put sald on top of crostini)

1/3 lb blue cheese, crumbled
1 (6 ounce) can walnut halves, toasted
1/4 cup maple syrup, warmed
1 1/2 tablespoons cider vinegar
1/4 cup extra virgin olive oil
salt and pepper

Steps:

  • Place spinach on a large platter.
  • Top with blue cheese and walnuts.
  • Warm maple syrup in a small saucepan.
  • pour vinegar into a small bowl.
  • Whisk oil into vinegar in a slow stream.
  • Whisk maple syrup into dressing in a slow stream.
  • pour dressing down over the salad platter and serve.

1 small head iceberg lettuce, slightly more than 1 pound
1/4 pound blue cheese
1/2 cup coarsely chopped walnuts, preferably canned black walnuts although English walnuts may be used
3 tablespoons lemon juice
Salt to taste, if desired
Freshly ground pepper to taste
6 tablespoons walnut, olive or corn oil

Steps:

  • Cut away and discard the core of the lettuce. Cut the lettuce into bite- size cubes. There should be about four cups. Put the lettuce in a large mixing bowl.
  • Cut the cheese into one-inch cubes. There should be about one and one-quarter cups of cubes.
  • Sprinkle the cheese and walnuts over the lettuce. Sprinkle with lemon juice, salt and pepper. Toss and sprinkle with the oil. Toss and serve.
