Bacon Wrapped Turkey Breast Stuffed with Spinach and Feta image

Wrapping your turkey breast in bacon helps keep it extremely moist, and the addition of feta and spinach makes this turkey amazing!

1 large turkey breast
½ teaspoon dried oregano
½ teaspoon ground cumin
salt and ground black pepper to taste
1 cup fresh spinach, or to taste
¼ cup crumbled feta cheese
12 slices reduced-sodium bacon, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice turkey breast down the middle and lay it flat. Sprinkle oregano, cumin, salt, and pepper on the inside of turkey. Arrange spinach leaves in 1 layer on 1 of the pieces of turkey and top with a layer of feta cheese. Repeat layering with spinach and feta cheese. Fold the other turkey breast half over the feta layer so the filling is sealed. Wrap the entire turkey breast with bacon. Place wrapped turkey in a baking dish and season with salt and pepper.
  • Cook turkey breast until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Turn on oven's broiler and broil wrapped turkey until bacon is crisp on each side, about 2 minutes per side. Let turkey rest for 10 minutes before slicing.

1 boneless skinless turkey breast half (3 to 4 pounds)
5 bacon strips, divided
3/4 cup chopped onion
3 tablespoons all-purpose flour
3/4 teaspoon dried tarragon
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups milk
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 tablespoon butter, melted
1/3 cup shredded Swiss cheese

Steps:

  • Make a lengthwise slit down the center of the turkey breast to within 1/2 in. of bottom. Open meat so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove plastic; set aside., In a large skillet, cook two bacon strips until crisp. Drain, reserving drippings. Crumble bacon; set aside. In the drippings, saute onion until tender. Stir in the flour, tarragon, salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat., Refrigerate 1/2 cup sauce. Add the spinach, mushrooms and crumbled bacon to the remaining sauce; spread over turkey breast. Starting at a short end, roll up and tuck in ends; tie with kitchen string. Place on a rack in a greased shallow roasting pan. Brush with butter. Cover loosely with foil., Bake at 350° for 1 hour. Remove foil. Cut remaining bacon strips in half; place over the turkey. Bake 25-35 minutes longer or until turkey is no longer pink. , Discard string. Let turkey stand for 10 minutes before slicing. Meanwhile, heat the reserved sauce; stir in cheese until melted. Serve with turkey.

3 1/2-4 lbs frozen boneless turkey breast, thawed
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
2 ounces blue cheese or 2 ounces feta cheese
2 ounces reduced-fat cream cheese
1/2 cup finely chopped green onion
4 1/2 teaspoons Dijon mustard
4 1/2 teaspoons dried basil leaves
2 teaspoons dried oregano leaves
black pepper
paprika

Steps:

  • Preheat oven to 350f degrees, coat roasting pan and rack with nonstick cooking spray.
  • Unroll turkey breast; rinse and pat dry.
  • Place between 2 sheets of plastic wrap.
  • Pound turkey breast with flat side of meat mallet to create even piece about 1 inch thick.
  • Remove and discard skin from one side of turkey breast; turn meat over so skin side faces down.
  • Combine spinach, blue cheese, cream cheese, green onions, mustard, basil and oregano in medium bowl, mix well.
  • Spread evenly over turkey breast.
  • Roll up turkey so skin side is on top.
  • Secure with tooth picks if necessary.
  • Carefully place turkey breast on rack; sprinkle with pepper and paprika.
  • Roast 1 1/2 hours or until no longer pink in centre of breast.
  • Remove from oven and let stand 10 minutes before removing skin and slicing.
  • Cut into 1/4 inch slices.
