- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9-inch pie plate with non-stick cooking spray.
- Slice each biscuit into quarters, arrange then in the prepared pie plate. Pour melted butter over the biscuits, then sprinkle the biscuits with blue cheese.
- Bake for 8 to 10 minutes.

BLACKENED STEAK BITES WITH BLUE CHEESE SAUCE
This recipe is similar to an appetizer served at my favorite Italian restaurant. It is a nice change from the usual appetizers and always gets rave reviews! I have used tenderloin in the past, but have found that a good quality top sirloin works very well and is less expensive. Bernaise sauce is a good alternative if you don't like blue cheese.

- Season sirloin with blackened seasoning to coat on all sides.
- Heat oil in a cast-iron skillet on an outdoor grill until the oil is smoking. Cook steak bites in hot oil in small batches, reheating oil between batches, until slightly crusty, 1 to 2 minutes per side.
- Stir cream cheese and evaporated milk together in a saucepan over low heat to melt the cream cheese. Whisk blue cheese crumbles, garlic powder, white pepper, and cayenne pepper into the cream cheese mixture; simmer, stirring frequently, until the blue cheese melts into a smooth sauce, 2 to 3 minutes. Serve blue cheese sauce with the beef bites.

STEAK BITES WITH SPICY BLUE CHEESE CREAM

- Heat a heavy-bottomed skillet over medium-high heat.
- Toss together the steak, melted butter and steak seasoning in a bowl. Add to the skillet and cook until nicely seared on all sides, 4 to 5 minutes total. Remove the steak bites to a plate to rest and return the skillet to the heat.
- Lower the heat to medium and add the remaining 2 tablespoons butter to the skillet. Stir in the rosemary, garlic and a pinch of salt. Cook for 1 minute, until the garlic is heated through and no longer raw. Add the cream and bring it to the boil. Reduce the heat to low and simmer, then stir in the blue cheese, horseradish, 1 tablespoon of the chives and black pepper to taste. Transfer to a serving bowl.
- Place the steak bites on a platter with toothpicks, with the sauce on the side. Garnish the plater with the remaining chives before serving.

- In medium bowl, mix egg white and Buffalo wing sauce. Stir in chicken. Cover; refrigerate 30 minutes.
- Line cookie sheet with waxed paper. In large resealable food-storage plastic bag, place Bisquick mix, cornmeal, salt and pepper. With slotted spoon, remove 1/4 of chicken pieces from bowl and add to bag; seal bag and shake to coat. Repeat with remaining chicken pieces. Tap off excess Bisquick mixture and place chicken on cookie sheet.
- In small bowl, mix dipping sauce ingredients until well combined. Cover; refrigerate until serving time.
- In 10-inch nonstick skillet, heat oil (1/4 inch) over medium-high heat 2 to 4 minutes. Cook chicken bites in oil in batches, about 1/3 at a time, 3 to 4 minutes, turning once, until golden brown. Drain on paper towels. Serve chicken with dipping sauce.

- In a large skillet, saute onions in butter until softened. Reduce heat to medium-low; cook, stirring occasionally, for 30 minutes or until onions are golden brown. - Bring broth to boil in medium saucepan over medium-high heat. Reduce heat to medium; gradually whisk in cornmeal. Cook until mixture is very thick, stirring constantly, about 2 minutes. Remove from heat. Stir in Parmesan. Season with salt.

- Combine flour and pepper in a medium mixing bowl.
- Cut in cheese and butter with a pastry blender till mixture resembles coarse crumbs.
- Add walnuts and egg yolks.
- Stir till combined.
- Form mixture into ball, knead till mixture clings together.
- Divide dough in half, shape each half into a log 9 inches long.
- Wrap logs in blastic wrap, chill at least 2 hours.
- Heat oven to 425 degrees.
- Cut each log into 1/4 inch slices.
- Place slices 1 inch apart on an ungreased cookie sheet.
- Bake 8 to 10 minutes or till bottoms and edges are golden brown.
- Transfer to wire racks.
- Serve warm or at room temperature.
- To make ahead, store tightly covered in the refrigerator up to 1 week.

- 1. Pre-heat your oven to 375 degrees. Spray a twelve compartment muffin pan with some cooking spray. Brown the chopped onions in the olive oil then brown the chopped meat,season with salt and pepper. Cook until all of the red is gone from the meat,drain the excess liquid and set to the side to cool.When the mixture has cooled fold in the crumbled blue cheese.
- 2. Combine the beaten eggs with the buttermilk and whisk in the Bisquick batter mix. Spoon one tablespoon of Bisquick mixture into each muffin compartment then spoon about 1/4 cup of the meat mixture in and then one tablespoon of Bisquick mixture over the tops.
- 3. Bake for 50-55 minutes until golden brown and set,sprinkle fried onions over the tops and return to the oven,turn off the oven. Let them stay in for 2-3 minutes and remove. Give the a minute or two to rest before removing from the muffin pan.
- 4. You want to run a knife or metal spatula around the edges to help lift them out of the pan. Serve with a fresh tossed salad or your favorite vegetables and or side dish,enjoy!! :)

- Preheat the broiler on low.
- In a large skillet over medium-high heat, add the butter. When the butter has melted, add the pear slices, onions, lemon juice, and a pinch each of salt and pepper. Cook until the pears are warmed through and are soft but not falling apart, about 5 minutes.
- Place the toast squares on a baking sheet. Lay a few slices of pears in a single layer on each toast square. Top each with the crumbled blue cheese. Place under the broiler until the cheese begins to melt, 1 to 2 minutes. Transfer to a platter, garnish each with a sprinkle of the white chocolate shavings, and serve immediately.
