12 slices good quality smoky bacon, cut into half-inch dice
1 1/2 cups panko breadcrumbs
1/2 cup flat leaf parsley, chopped
1/2 cup grated parmigiano-reggiano cheese
2 tablespoons oil
1 small red onion, finely chopped
4 cloves garlic, chopped
1 pinch crushed red pepper flakes
2 pints cherry tomatoes
salt and pepper
1 lb bowtie pasta
4 cups arugula, coarsely chopped
1 cup basil leaves, chopped

Steps:

  • Heat a skillet over medium to medium-high heat. Add bacon and brown to crisp. Remove to plate to drain. Add Panko crumbs to the pan with the bacon drippings and toast to golden brown. Add parsley and grated cheese. Toss to combine, turn off heat and reserve the crumbs.
  • Heat 2 tablespoons oil in a large skillet with tight-fitting lid over medium heat. Add onions and garlic, and cook to soften, 3-4 minutes, stirring frequently. Add red pepper and cherry tomatoes. Season with salt and pepper, and cover pan tightly with lid. Cook, shaking occasionally, until tomatoes begin to burst, about 8 minutes. Remove cover and gently mash up the tomatoes a bit with a wooden spoon.
  • Meanwhile, bring a pot of water to a boil for pasta. Salt water and cook bowties. Just before draining, add a cup of the starchy liquid to the cherry tomato sauce. Drain pasta.
  • Add arugula and basil to the tomato sauce, along with the reserved bacon and drained bowties. Season with black pepper and salt, and toss to combine. Garnish bowls of pasta with the seasoned crumbs and serve.

1 pound farfalle (bow-tie pasta)
12 bacon slices, cut into 1-inch pieces
1 28-ounce can diced tomatoes, drained
1/4 teaspoon dried crushed red pepper
3 cups arugula
1 cup sliced green onions
1 cup thinly sliced fresh basil leaves
1/4 cup dry white wine
1 cup (packed) grated fresh Parmesan cheese

Steps:

  • Cook farfalle in large pot of boiling salted water until tender but still firm to bite. Drain farfalle.
  • Meanwhile, cook bacon in heavy large skillet over medium-high heat until crisp, stirring often. Using slotted spoon, transfer bacon to paper towels. Pour off all but 3 tablespoons bacon drippings from skillet. Add tomatoes and crushed red pepper to skillet; sauté until tomatoes soften, about 2 minutes. Add arugula, onions, 1/2 cup basil, and bacon; sauté until arugula and basil just wilt, about 2 minutes. Stir in wine; bring to simmer. Add farfalle to sauce and toss to coat. Mix in 3/4 cup Parmesan cheese and remaining 1/2 cup basil; cook until cheese melts and coats pasta, tossing often, about 2 minutes. Season farfalle to taste with salt and pepper. Sprinkle farfalle with remaining cheese and serve.

2 slices tomato
2 slices bread, toasted
1 tablespoon mayonnaise

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

This salad is great any time and for any occasion. It's delicious too! You can half the recipe if need be. Great for game day parties and cook outs.

1 box (12oz - 16 oz) bow tie pasta cooked and drained (you can use med shell pasta in place of bow ties)
2/3 bottle Hormel bacon bits
10-12 ripe cherry tomatoes halved
3 c shredded lettuce "or" 1/2 head lettuce chopped small
1/4 c diced red onion
1 - 1 1/2 c Hidden Valley ranch dressing
salt / pepper to taste
OPTIONAL:
1/2 c black olive slices (optional)
1/3 c shredded cheddar cheese (optional)

Steps:

  • 1. In large salad bowl add drained bow tie pasta and all ingredients except for lettuce. Mix and toss well. Keep refrigerated until ready to serve. Add lettuce to salad just before serving ( you can add it sooner but its better to wait just before serving time especially if you are using the shredded lettuce ... you be the judge.)
  • 2. Suggestion: You can use 1 cup Miracle whip w/3tbs sour cream in place of the Hidden Valley Ranch dressing. Optional: black olives slices Optional: shredded cheddar cheese garnish (approx 1/3 cup)

This is summer in a bowl. The flavor of a BLT really comes through, with a bit of BBQ sauce for a kick. It's great any time of year as a main dish or a side. People always ask for the recipe wherever I take this salad.

2 1/2 cups uncooked bow tie pasta
6 cups torn romaine lettuce
20 bite size cherry tomatoes
6 bacon, strips cooked and crumbled
1/3 cup reduced-fat mayonnaise
1 tablespoon barbecue sauce (any flavour is good)
1 1/2 teaspoons white vinegar
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Drain and rinse under cold water.
  • In a big serving bowl, combine the pasta, romaine, cherry tomatos and bacon bits.
  • In a small bowl, whisk together the mayonnaise, barbecue sauce, vinegar and pepper. Pour over pasta mixture and toss to coat evenly.
  • Serve immediately.
  • This is also really good with leftover chicken chopped up and mixed inches Prep time does not include the cooking time.
