- Using water, moisten rim of a highball glass. Sprinkle 1/4 teaspoon celery salt on a small plate; dip rim into salt. Discard remaining celery salt from plate. Fill a shaker three-fourths full with ice. - Place the ice in a large jug. Measure the vodka, tomato juice and lemon juice and pour it straight onto the ice.
- Add 3 shakes of Worcestershire sauce and Tabasco (or more if you like it very spicy) and a pinch of celery salt and pepper. Stir until the outside of the jug feels cold, then strain the cocktail into 2 tall glasses.

- In a blender combine the tomato juice, lemon juice, lime juice, horseradish, Worcestershire sauce, garlic powder, pickle juice, and hot sauce and process until smooth. Transfer to a nonreactive container and add celery salt and black pepper, to taste. Refrigerate until thoroughly chilled, at least 2 hours and up to overnight.
- When ready to serve, fill each glass with ice.
- Add 1 ounce of vodka to each glass, then fill the glass with the bloody mary mix. Stir well, and garnish each glass with your favorite veggie, pickle, celery, pickled green bean, or a pickled okra.

BLOODY MARY MIX
We've made hundreds of thousands of bloody Marys over the decades at Prune, with 11 variations, and this classic base mix has been the stalwart, gleaming engine of them all. The lemon juice is what makes it so bright and zingy, and the Sacramento brand tomato juice is clean, with perfect body, never muddy or thick. Prepared horseradish keeps its bite and moisture just about forever, whereas fresh grated horseradish loses its potency almost immediately, leaving dead bits of pencil shavings in the glass instead - so resist the urge to "improve" the recipe. Worcestershire sauce adds greater depth to the umami already inherent in tomato, and the Tabasco brand hot-pepper sauce brings vibrancy with its high acidity but very manageable heat. This bloody Mary is as refreshing as a virgin affair as it is when spiked and garnished.

- Whisk together all the bloody Mary mix ingredients, transfer to a bottle and shake well just before using.
- Fill tall glasses with ice; pour the bloody Mary mix on top.

- Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Process until finely minced. In a large pitcher, combine the rest of the ingredients except the vodka. With the food processor running, pour 1/4 of the tomato juice mixture into the food processor through the feed tube. - Thoroughly mix all the ingredients except for the flank steak in a 1-gallon zip lock bag. Add the flank steak. Marinate in the refrigerator for at least 8 and up to 24 hours.
- Preheat the grill to high or heat a skillet over high heat. Remove the flank steak from the marinade and wipe the excess liquid off with paper towels. Grill or pan sear both sides, then lower heat to medium and cook to medium rare.

- Cook tomatoes, celery, carrots, onion, green peppers, garlic, bay leaf, and parsley in a large pot until mushy, approximately 30-45 minutes.
- Remove the bay leaf.
- Working in batches, place the vegetable mixture into a blender and puree.
- Using a spatula, press each pureed batch through a fine sieve to remove any extra seeds.
- Place back in a large pot and add the sugar, lemon juice, worcestershire sauce, salt, and tobasco (1/2 T. tobasco is very mild, so you may wish to add more now or add when mixing your drink).
- Heat this to a boil.
- Pour into clean quart jars and add prepared lids.
- Process in a boiling water canner for 40 minutes.

- Grind chile de arbol peppers into a powder with a mortar and pestle.
- Process tomatoes, onions, green bell peppers, carrots, jalapeno pepper, and garlic in a food processor, working in batches, until vegetables are finely chopped. Transfer vegetables to a large pot.
- Stir tomato sauce, vinegar, horseradish, ground chile de arbol peppers, kosher salt, Worcestershire sauce, black pepper, bay leaves, celery seed, seafood seasoning, and hot pepper sauce into the vegetables. Bring mixture to a boil, reduce heat, and simmer until vegetables are tender, about 30 minutes, stirring regularly. Remove bay leaves.
- Process the mixture through a vegetable juicer, working in batches if necessary. Strain excess pulp from the juice if desired. Pour juice into a large pot, set over medium heat, and heat until juice is nearly boiling. Stir in lemon juice.
- Sterilize jars and lids in boiling water for at least 5 minutes. Pack the bloody mary mix into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot or canning kettle and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 40 minutes.
- Remove the jars from the pot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

- For steak:
- Place steaks on a large rimmed baking sheet; season with salt. Mix sugar and next 3 ingredients in a small bowl; rub all over steaks. Cover; refrigerate 1-3 hours.
- Let steaks stand at room temperature for 1 hour. Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Brush grates with oil. Grill to desired doneness, about 5-7 minutes per side for medium-rare. Let rest for 10 minutes. DO AHEAD: Can be made 1 day ahead. Let cool; cover and chill. Bring to room temperature before slicing.
- For salad:
- Mix onion and 1 tablespoon vinegar in a large bowl. Let macerate 10 minutes, tossing often. Add tomatoes, celery, and olives.
- Whisk remaining 2 tablespoon vinegar, olive brine, horseradish, and next 3 ingredients in a medium bowl. Slowly whisk in oil. Add to bowl with tomato mixture; toss to coat. Season with salt and pepper. DO AHEAD: Can be made 4 hours ahead. Cover; chill.
- Cut steak crosswise into 1/4"-thick slices. Serve salad with steak.
BLOODY MARY ASPIC
Steps:
- Cook shallots and celery in olive oil in a 4-quart heavy pot over moderate heat, stirring occasionally, until softened, about 10 minutes. Add puréed tomatoes, sugar, salt, pepper, and celery seeds and simmer, partially covered, stirring occasionally, 25 minutes. Pour tomato mixture through a sieve lined with dampened cheesecloth into a clean 3-quart saucepan, pressing hard on solids to extract as much liquid as possible. Discard solids. Bring tomato broth just to a boil, then remove from heat and stir in Worcestershire sauce.
- While tomato broth comes to a boil, stir together lemon juice and vodka in a small bowl. Sprinkle gelatin over vodka mixture. (Spoon vodka mixture over any powdered gelatin remaining on top.) Let stand until softened, about 5 minutes.
- Lightly oil a 1 1/2- to 2-quart nonreactive shallow baking pan (2 inches deep).
- Add gelatin mixture to hot tomato broth, stirring until gelatin is dissolved. Pour into baking pan and chill, uncovered, until firm, at least 6 hours.
- To unmold aspic, run a small sharp knife around edge, then dip baking pan into a larger pan of warm water, 15 to 20 seconds. Put a cutting board over baking pan, then carefully invert aspic onto board and cut into 1/2-inch cubes.

- 1. I like my Bloody Marys served in a 12 oz. Old Fashioned Glass. With 1 1/2 to 2 oz. Vodka. But-- Let your personal preference rule as far as glass choice.
- 2. Mix all ingredients together well in a large jar or a pitcher. I use a green antique juice/water jug with lid, so the contents can be pre mixed and kept in the fridge for a few days. You could use Real Lemon in lieu of the Real Lime or both.
- 3. Serve with Ice or without. I prefer mine well chilled without ice. Others prefer the fact that the ice waters down the drink a little after awhile.
- 4. GARNISHES: Celery Stick, Pearl Onions, Small Mushrooms Raw or Pickled, Cheddar or Swiss Cheese cubed to 1/4 inch, Ham slced 1 inch wide and rolled and speared, Hard Salami cubed to 1/4 inch or a 4 to 6 inch Beef Stick or String Cheese Stick. Or a Cherry Tomato or two, or a small chunk of Pickled Herring. Get Creative. If you can Imagine It, it will probably work. How about a Dill Pickle Spear?
- 5. FOR THE RIM: 1. Mix the listed ingredients and store in small jar with lid. 2. Pour a small amount on a plate and wet the glass rim and dip and spin in Mix. After use I let excess Mix dry and place back in jar for later use. Fill glass and add the Garnishes. Enjoy!
- 6. When they are ready. Give me a call.
- 7. NOTE: I at times add in an 8 to 10 oz. can of Tomato Sauce(not paste)for additional thickener and fiber.
- 8. OOOPs! In my original I listed Garlic Salt and Onion Salt for the Rim Mix. It should have been Garlic and Onion Powder. I'm a low salt cook usually. I have corrected it.
BLOODY MARY SHRIMP
A zesty, cold shrimp dish that is perfect for brunch, appetizer or meal! One bite will transport you to that island getaway and you'll be looking for a cool beverage to sip alongside. Great the next day or two if any is left over! If serving as appetizer, gently ladle into decorative glasses with a fork and add marinated green beans or celery sticks like a Bloody Mary cocktail; for a meal, serve in bowl with garlic bread and salad.
