ROASTED PEARS WITH BLUE CHEESE AND WALNUTS



Roasted Pears with Blue Cheese and Walnuts image

Number Of Ingredients 6

4 pears, halved, but not peeled or cored
Extra-virgin olive oil
1/4 bunch fresh thyme
Salt and freshly ground black pepper
1/4 cup crumbled good-quality blue cheese
1/4 cup walnut pieces

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the pears, cut sides up, on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Strip the leaves from the thyme branches and sprinkle over the pears. Put the baking sheet in the oven and bake 20 minutes. Remove the baking sheet from the oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half, return the pears to the oven and roast until they are tender and the cheese is soft, about 10 more minutes.
  • Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes. Chop. When the pears are cooked, transfer them to a serving plate and sprinkle the toasted walnuts over the top. Serve hot.

We really enjoyed these scrumptious tea sandwiches. They're slightly salty and creamy from the Bleu cheese spread. The mildly sweet and crisp slices of pear are a tasty contrast to the creamy filling. They are perfect sandwiches for parties or afternoon tea.

4 Tbsp cream cheese, room temperature
2 Tbsp Bleu cheese
butter, softened
6 slice bread, thin, rye, pumpernickel or any multi-grain
1/2 c walnuts, chopped very fine, and toasted
2-3 pears, ripe and thinly sliced into 12 pieces

Steps:

  • 1. Spread each slice of bread with a thin layer of butter.
  • 2. Mash cream and Bleu cheese together in a bowl until combined well. Spread equal amounts of cheese on 3 slices of bread.
  • 3. Sprinkle with a heaping tablespoon of walnuts over cheese.
  • 4. Place 4 thin slices of pear on top of cheese and nuts.
  • 5. Cover with remaining bread slices. Press down firmly.
  • 6. Remove crusts and cut into 4 pieces.
  • 7. Serve immediately or wrap well and chill until tea time.

I used mixed greens, pears, honey and bleu cheese-all from Oregon sources in this salad. For alternate versions, try two different varieties of pears. For example, I tested Forelle and Anjou pears. Rogue Creamery artisan cheesemaker supplied the bleu cheese (in particular their Smokey Blue), too. A light dressing tops it off. From a local source. Makes 6 small dinner salads. 6 cups assorted greens
2 medium pears, thinly sliced (any variety, read intro)
1/4 cup chopped walnuts, toasted
1/2 cup artisan blue cheese
2 tablespoons honey (soften the honey if necessary to make it easier to whisk) or 2 tablespoons agave nectar (soften the honey if necessary to make it easier to whisk)
2 teaspoons fresh lemon juice
salt, to taste
cracked black pepper, to taste

Steps:

  • In a salad bowl, lightly toss the greens with the pears.
  • In a small non-reactive bowl, combine the honey and lemon juice. Whisk with the salt and pepper, to taste.
  • Pour the dressing over the the greens and pears and toss .
  • Arrange the salad on six individual salad plates.
  • Garnish with the walnuts and bleu cheese.

  • Peel and core pears.

  • (Many times, I don't even bother with toasting the walnuts and it works out just fine).

Coarse salt and ground pepper

  • In a medium bowl, stir cream cheese with a wooden spoon until softened. Mix in walnuts; season with salt and pepper. Gently fold in blue cheese, breaking up as little as possible. 1 pre-baked pizza crust
2 cloves garlic, minced
1 tablespoon Dijon mustard
2 sprigs fresh rosemary, chopped
¼ cup white wine vinegar
½ cup olive oil
¼ cup crumbled blue cheese
salt and pepper to taste
¼ cup crumbled blue cheese
⅓ cup shredded mozzarella cheese
2 pears - peeled, cored and sliced
¼ cup toasted walnut pieces

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the pizza crust on a pizza pan. Bake in the preheated oven until just crisp, about 5 minutes.
  • Meanwhile, combine the garlic, Dijon mustard, rosemary, and vinegar in a food processor or blender. Turn on, and drizzle in the olive oil slowly until the dressing has thickened. Quickly pulse in 1/4 cup of blue cheese; season to taste with salt and pepper.
  • Spread the vinaigrette over the pizza crust. Sprinkle 1/4 cup of blue cheese evenly over the crust, followed by the mozzarella cheese. Arrange the sliced pears over the cheese, and sprinkle with the toasted walnuts.
  • Bake in the preheated oven until the cheese has melted and is bubbly, 7 to 10 minutes. Let cool slightly before cutting into slices.
