1 8-ounce French bread baguette, cut into 1/3 -inch-thick slices
1/4 cup (1/2 stick) butter, melted
4 ounces blue cheese, room temperature
1/4 cup (1/2 stick) butter, room temperature
1/2 cup finely chopped walnuts
Chopped fresh parsley (optional)

Steps:

  • Preheat oven to 400°F. Brush 1 side of baguette slices with melted butter. Place slices on baking sheet and bake until just golden brown on edges, about 7 minutes. Cool slightly.(Can be prepared 2 days ahead; store in airtight container.)
  • Preheat oven to 400°F. Combine blue cheese and butter in small bowl. Season generously with pepper. Spread toasted baguette slices with cheese mixture. Sprinkle cheese mixture with walnuts. Place toasts on baking sheet and bake until cheese mixture is bubbly, about 6 minutes. Sprinkle with parsley if desired and serve.

A very easy & tasty recipe which I first devised for using up the Post-Christmas Stilton Cheese, but now I will actually buy Stilton, when I can, or any other good quality blue cheese in order to make this supper dish! The only requirements are: good blue cheese and good "Country" style bread or home-made bread. I have used Walnut bread, Multi-grain Granary bread, French Baguette & Ciabatta bread in the past for this dish. There are numerous options and additions too - tomatoes go well on top as does a finely sliced spring onion. This recipe is great for a light supper dish with a crispy salad on the side & a good glass of Red wine too. I have also used this recipe for pre-dinner nibbles - you need to stamp out small rounds of bread if you wish to serve them that way.

8 ounces Stilton cheese or 8 ounces blue cheese
3 tablespoons cream or 3 tablespoons creme fraiche
1 teaspoon Worcestershire sauce
1/2 teaspoon English mustard or 1/2 teaspoon Dijon mustard
2 ounces walnut pieces
8 slices bread
2 ounces butter
1 teaspoon cayenne pepper
black pepper
salt (optional)

Steps:

  • Pre-heat the grill the the highest setting and line a grill pan with kitchen foil.
  • Put the cheese into a mixing bowl and mash with a fork.
  • Add the cream or creme fraiche, Worcestershire sauce, mustard, black pepper, salt, (optional as the cheese is already quite salty) & the walnut pieces.
  • Mix well & set aside.
  • Place all the slices of bread on to the lined grill pan and toast until just golden brown.
  • Take out and spread the UNTOASTED side with butter.
  • Spread the cheese mixture over the top ensuring it is spread to the edges, otherwise they will burn!
  • Sprinkle with the Cayenne pepper.
  • Place under the grill and grill for about 2-4 minutes until the cheese is melted, bubbling & tinged with brown.
  • Serve 2 slices per person with a crisp seasonal salad and a good glass or two of Red wine!
  • The ultimate supper dish!
  • If you wish to serve these as aperitif nibbles, stamp out rounds from the slices of bread and continue to assemble & grill as above. Serves about 8 people that way.

4 slices bread
1 red apple, with the skin left on grated
1/2 red onion, grated
200 g blue cheese, crumbled
75 g walnut pieces
sea salt (if needed)
fresh ground black pepper

Steps:

  • Preheat grill (broiler).
  • Toast the bread in a toaster.
  • Place grated apple and onion in a sieve and with the back of a spoon squeeze out excess liquid.
  • Transfer to a bowl and mix with the cheese and walnuts.
  • Season with the pepper and salt if needed.
  • Divide the mixture among the toast and completely cover each piece.
  • Place on a baking sheet and grill until cheese is bubbling.
  • Serve immediately.

I wasted no time in posting this recipe from the latest issue of Bon Appetit magazine November 2005. Served over a bed of frisee, (or not), this would make an ideal appetizer for the Holidays.

24 slices good-quality baguette (1/4-inch slices) or 24 slices ciabatta (1/4-inch slices)
4 tablespoons walnut oil, divided
1/2 cup walnuts, toasted and coarsely chopped
1 cup blue cheese, crumbled
6 tablespoons minced shallots, divided
1/3 cup dried cranberries
6 -8 cups baby frisee, torn into thin pieces
2 teaspoons french banyuls vinegar or 2 teaspoons red wine vinegar
sea salt

Steps:

  • Preheat oven to 400 degrees. Arrange the bread slices on a baking sheet. Brush the bread slices on the top with 2 tablespoons of the walnut oil. Bake until crisp, about 5 minutes.
  • In a medium bowl, combine the toasted walnuts, bleu cheese, 4 tablespoons of shallots, and dried cranberries. Spread the mixture on the toast slices. Bake until cheese melts, approximately 4 minutes.
  • In a separate, non-reactive bowl combine the frisee, 2 tablespoons shallots, 2 tablespoons walnut oil and the vinegar. Season with sea salt and toss.
  • Serve with crostini.

1 lb asparagus
1 1/2 tablespoons olive oil
1/2 teaspoon sea salt
1/4 teaspoon cracked pepper
1/4 cup crumbled blue cheese
1/2 cup walnuts, toasted

Steps:

  • Preheat oven to 425.
  • Trim and wash asparagus then arrange in a shallow roasting pan.
  • Drizzle olive oil over asparagus and sprinkle with salt and pepper.
  • Toss asparagus to evenly coat.
  • Roast in oven for 10-12 minutes.
  • Remove from oven and immediately sprinkle with blue cheese, then top with walnuts.
