These Frozen Mojitos are a fresh and delicious summer cocktail. All you need is lime juice, white rum, simple syrup, fresh mint leaves, ice, and sparkling water!

2 oz. lime juice (1/4 cup), about 2-3 juicy limes
4 oz. white rum (1/2 cup)
2 oz. simple syrup (1/4 cup)*
12-15 medium fresh mint leaves
2 cups ice (or more, to taste)
sparkling water, for topping

Steps:

  • Begin by juicing limes until you've juiced around 1/4 cup. Transfer lime juice into a high-speed blender.
  • Next, add white rum, simple syrup, mint leaves, and ice into the blender. Blend on high for about a minute or until the mint leaves have pureed.
  • Give it a taste and blend in more fresh mint as needed.
  • Pour blended mojitos into 2 tall glasses. Then, top them off with sparkling water.
  • Serve with fresh mint and a lime slice.

1/4 cup simple syrup (equal parts sugar and water boiled together until sugar melts)
2 limes, juiced
12 fresh mint leaves, plus mint sprigs for garnish
4 ounces white rum
2 cups crushed ice

  • Combine simple syrup, lime juice and mint leaves in a blender and blend until combined. Add the rum and crushed ice and blend until frothy. Pour into 2 rocks glasses and garnish with mint sprigs.

1 pound bag frozen pitted cherries
2 cups crushed ice, plus extra to serve
1/2 cup packed fresh mint leaves
1/3 cup fresh lime juice (about 3 limes)
1 cup citrus flavored rum
1 2/3 cups Lime Simple Syrup, recipe follows
Lime wedges and fresh cherries, for garnish
2 cups sugar
1 cup water
3 limes, zested

Steps:

  • Place the frozen cherries, crushed ice, mint leaves, lime juice, rum, and simple syrup in a blender. Blend until smooth.
  • Pour the mixture into chilled glasses and top with crushed ice. Garnish with lime wedges and cherries.

  • In a small saucepan, combine the sugar, water, and lime zest over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using.
  • Yield: 1 2/3 cups

FROZEN BLENDER MOJITO

For a large party, triple the recipe and store the slushy in a pitcher in the freezer for up to an hour. Stir to blend before serving guests. Adapted from Bon Appetit.

1 lime wedge
1 cup rum or 1 cup vodka
1/2 cup fresh lime juice (use generous amount)
1/3 cup sugar or 1/3 cup light agave nectar
4 -5 cups ice cubes
12 fresh mint leaves
4 mint sprigs

Steps:

  • Place enough sugar on a small plate to reach depth of 1/4 inch. Run lime wedge around the rim of 4 martinin glasses to moisten. Dip rims into sugar on plate.
  • Blend rum or vodka and 1/3 cup sugar in blender until sugar dissolves. Add ice, blend until smooth, adding up to 1 cup more ice, if desired.
  • Add 12 mint leaves and blend until green flecks appear. Pour into prepared glasses.
  • Garnish with mint sprigs.

Sugar (for coating rims of glasses)
1 lime wedge
1 cup gold (not dark) rum (such as Mount Gay)
1/2 cup (generous) fresh lime juice
1/3 cup sugar or light agave nectar
4 to 5 cups ice cubes
12 fresh mint leaves plus 4 mint sprigs for garnish

Steps:

  • Place enough sugar on small plate to reach depth of 1/4 inch. Run lime wedge around rim of 4 Martini glasses to moisten. Dip rims into sugar on plate. Blend rum, lime juice, and 1/3 cup sugar in blender until sugar dissolves. Add 4 cups ice; blend until slushy and almost smooth, adding up to 1 cup more ice, if desired. BLENDER MOJITOS

Classic mojitos made in a blender! Perfect for those lazy summer days. Who has the muscles for muddling?!

Juice from 5 large limes
Leaves from 5-6 sprigs mint
5 tablespoons sugar
8 ounces rum
Club soda

Steps:

  • Throw the mint leaves and the sugar into a pitcher. Smoosh it around a bit with a spoon to get a bit of the mint oil out of the leaves. Roll the limes on the counter to help release the juice, slice them in half, and squeeze into the pitcher. You can even press a spoon into the lime halves to eke out every last bit of juice, if you want.
  • Now the most important step: ADD THE RUM! :)
  • Next: If you're camping and your guy is waiting outside with the awesome hand-crank blender at the ready, take the pitcher outside for the next step. Or you can do this with your blender inside, too.
  • Fill the blender with 4-5 cups of ice cubes. Pour half the mojito mixture in, and blend on a low speed for 5-10 seconds, just until the mint has been chopped and the ice is a little smaller.
  • Divide the mixture between two large glasses, top with club soda to taste. Pour the second half in the blender, and do it again.
  • Now just drop straws in, pass 'em out, and let the party begin!
