This recipe calls for trout, but catfish or red snapper would be equally good. Be sure to have a well-ventilated kitchen!

1 tablespoon paprika
2 teaspoons dry mustard
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper
1 teaspoon white pepper
1 teaspoon dried thyme
1 teaspoon salt
¾ cup unsalted butter, melted
6 (4 ounce) fillets trout
¼ cup unsalted butter, melted

Steps:

  • In a small bowl, mix together paprika, dry mustard, cayenne pepper, cumin, black pepper, white pepper, thyme and salt; set aside. Heat a heavy cast iron pan on high heat until extremely hot, about 10 minutes.
  • Pour 3/4 cup melted butter into a shallow dish. Dip each fillet into butter, turning once to coat both sides. Sprinkle both sides of fillets with spice mixture, and gently pat mixture onto fish.
  • Place fillets into hot pan without crowding. Carefully pour about 1 teaspoon melted butter over each fillet. Cook until fish has a charred appearance, about 2 minutes. Turn fillets, spoon 1 teaspoon melted butter over each, and cook until charred. Repeat with remaining fish.

One of the best entrees on the menu at Pappadeaux's is "Blackened Opelousas". They use catfish now, but I would recommend red snapper or amberjack. Anyway this is similar and maybe better than their sauce.

8 ounces heavy cream
1/4 teaspoon cajun seasoning
1/4 teaspoon jalapeno powder (if you can find it or cayenne)
2 tablespoons dry instant roux mix
1/4 teaspoon blackening seasoning
1/4 teaspoon black pepper
1/4 teaspoon paprika
1 (6 ounce) can crabmeat (drained)
1 (8 ounce) can oysters (drained)
8 ounces crawfish tail meat

Steps:

  • In a medium skillet over medium heat melt butter still it starts to brown.
  • Add cream and stir and heat till bubbling.
  • Add remaining ingredients stirring in between.
  • Reduce heat to simmer uncovered for 30 minutes stirring occasionally.
  • This sauce is great over blackened fish with a side of dirty rice.

1 teaspoon garlic powder
2 teaspoons onion powder
1 teaspoon cayenne
2 teaspoons paprika
1 -1 1/2 teaspoon salt (based on preference)
1 teaspoon ground black pepper
1 teaspoon dried thyme
1/4 teaspoon cumin
3 fish fillets (I love red snapper, but use anything you like)
2 tablespoons melted butter
cooking oil
lemon wedge

Steps:

  • Mix first 8 ingredients together, and drench the fish in the mixture.
  • Drizzle with melted butter and sauté in a very hot (not burning), heavy (cast iron!) skillet until blackened, only a few minutes per side.
  • Turn and repeat on other side.
  • Serve with lemon wedges.

8 tablespoons lime sour cream (see recipe below)

3/4 lb Coleslaw (Asian see recipe below)
8 tablespoons pico de gallo (see recipe below)
12 white corn tortillas, 6-inch size
4 ounces unsalted butter
2 tablespoons cajun blackening seasoning (any brand)
3/4 cup unsweetened coconut milk
1/4 cup egg yolk, whipped
1 tablespoon cilantro, washed and rough chopped
1 tablespoon jalapeno pepper, minced
1 teaspoon cumin
1 teaspoon spanish paprika
6 tablespoons sour cream
2 tablespoons freshly squeezed lime juice
3/4 cup mayonnaise
1 tbsp.dijon mustard
1 chipotle pepper
1 teaspoon freshly squeezed lime juice
salt, Kosher (to taste)
fresh coarse ground black pepper (to taste)
1/2 cup red onion, diced
1 tablespoon jalapeno, minced
1/4 cup ripe tomatoes, diced
1/2 teaspoon salt (sea or kosher)

Steps:

  • To prepare marinade: In a clean mixing bowl, combine all ingredients and mix well.
  • Cut the white fish into 1 oz pieces and place into the marinade mixing everything up together.
  • Hold refrigerated for at least 12 hours.
  • To make Lime Sour Cream: Place ingredients into a small clean mixing and blend together well.
  • Transfer to a small squeeze bottle with a small tip and refrigerate.
  • To make Chipotle Aioli: Place all ingredients in a clean blender and puree until everything is incorporated and the aioli is smooth in consistency. Transfer to a squeeze bottle with a small tip and refrigerate.
  • To prepare the Pico De Gallo: About one hour before dinner dice onion, tomato and jalepeño and place in a small clean mixing bowl.
  • Wash cilantro and chop fine, then add to the bowl.
  • Next add the salt, lime juice and black pepper add mix everything together well. Keep at room temperature for up to four hours.
  • To prepare the Asian Slaw: In a small clean mixing bowl, mix all ingredients together.
  • To Prepare Taco Filling: Preheat a large sauté pan and melt the unsalted butter in the pan.
  • Drain the marinated white fish and gently place into the melted butter and spread the fish out evenly.
  • Sprinkle the blackening spice evenly on the fish and let sit over high heat for 2 minutes. Flip the fish with a spatula and cook on the other side until the fish is completely cooked.
  • Turn the heat down to very low and hold hot.
  • In a large, clean sauté pan, heat the tortillas up on both sides.
  • Toss the Asian slaw in a mixing bowl.
  • Lay the hot corn tortillas on a cutting clean cutting board and place 2 oz. of the cooked fish in each tortilla.
  • Top the fish with a little of the mixed Asian Slaw.
  • Drizzle a little chipotle aioli onto each tortilla.
  • Drizzle a little lime sour cream onto each tortilla.
  • Sprinkle a little pico de gallo onto each tortilla.

1 1/2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon dried oregano

1/2 teaspoon salt
1/2 teaspoon brown sugar
1/4 teaspoon cayenne pepper
2 tablespoons vegetable oil
6 -8 corn tortillas (depending on size) or 6 -8 flour tortillas (depending on size)
1/2 red cabbage, sliced thin
1/4 green cabbage, sliced thin
1/2 medium red onion, chopped
1/2 cup fresh cilantro leaves
1 lime, juice of
1/2 teaspoon honey (more or less to taste)
1/2 cup sour cream
1 ripe avocado, pitted and skinned
1/4 cup cilantro leaf
1 lime, juice of (small)
1 jalapeno, chopped and seeded

Steps:

  • In a small bowl, combine the smoked paprika, garlic powder, dried oregano, onion powder, cumin, salt, brown sugar and cayenne pepper. Sprinkle the mixture as evenly as possible over both sides of the fish fillets.
  • Combine all of the Avocado-Cilantro Sauce ingredients in a food processor or blender. Pulse until well-combined; set aside.
  • Combine all of the Slaw ingredients in a large bowl and mix well.
  • Heat the oil in a heavy-bottomed pan over medium-high heat. Once heated, add in the fillets (a few at a time if you can't fit them all at once). Cook for 4-5 minutes on each side, or until the outside is blackened and the fish flakes apart easily. Note: try not to move them around so as to achieve a blackening affect. Too much movement, also, encourages the spice mixture to stick to the bottom of the pan.
  • Remove the fish from the heat, and if desired, warm the tortillas in the same skillet over medium heat, cooking for about 30 seconds on each side.
  • Break up the cooked fillets into 2-3" pieces. Distribute the fish evenly between the tortillas and top with Slaw and Avocado-Cilantro Sauce. You may garnish with additional fresh cilantro leaves and/or jalapeno, if desired.

Steps:

  • For the cabbage slaw: Add the 1/2 cup cilantro leaves, mayonnaise, garlic, avocado, lime juice, 1/2 teaspoon salt and 1/4 teaspoon pepper to a food processor. Process until smooth. If the dressing is too thick, add water, 2 tablespoons at a time.
  • In a large bowl, toss the cabbage with the 1/4 cup chopped cilantro, the green onions and the dressing. Let sit for 15 minutes.

4 (6 inch) corn tortillas
1 lime, cut into wedges
1 teaspoon Louisiana-style hot sauce

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).

4 (6-ounce) redfish fillets
1 teaspoon Creole Seafood Seasoning, recipe follows
2 tablespoons unsalted butter
1/4 cup Hollandaise Sauce, recipe follows
1 teaspoon Asian chili-garlic sauce, such as sambal olek
1 teaspoon chipotle powder
1/2 pound crabmeat
1/3 cup paprika
1/3 cup salt
1/4 cup powdered garlic
1/4 cup freshly ground black pepper
3 tablespoons powdered onion
2 tablespoons dried oregano
2 tablespoons cayenne pepper
2 tablespoons dried thyme
1 pound unsalted butter
4 tablespoons margarine
4 egg yolks
2 teaspoons lemon juice
2 teaspoons white wine
1/2 teaspoon hot sauce
1/2 teaspoon Worcestershire sauce

Steps:

  • Lightly sprinkle the fish with the Creole Seafood Seasoning.
  • In a hot cast-iron skillet over medium heat, melt the butter. Sear the fish on both sides until the flesh is opaque about 3 minutes each side.
  • Combine the Hollandaise Sauce with chili-garlic sauce, chipotle powder and crabmeat.
  • Serve each fillet with 1/4 cup sauce.
  • Combine all the ingredients and mix. Store in a sealed container.
  • Melt the butter and margarine in a 1-quart saucepan over low heat. Raise the heat and bring to a rapid boil. Remove from the heat and cool, about 5 minutes. Skim the foam from the top and discard. Pour the butter into a large glass measuring cup and set aside.
  • Meanwhile, in a medium stainless steel mixing bowl or in the top of a double boiler, combine all the remaining ingredients. Mix together with a metal whisk until blended.
  • Place the bowl over a pan of slowly simmering, but not boiling, water. The bowl must never touch the water. Vigorously whisk the egg mixture, picking up the bowl frequently to let the steam escape. Whip until the egg mixture is very light and creamy and has a sheen, 6 to 8 minutes. This amount of beating is important so that the cooked eggs will better be able to hold the butter. Remove the bowl from the pan of hot water. Gradually ladle about 1/4 cup of the butter mixture (use the top butterfat, not the butter solids on the bottom) into the egg mixture while vigorously whipping the sauce. Make sure the butter you add is well mixed into the sauce before adding more. Continue gradually adding the surface butterfat until you've added about 1 cup.
  • So that you can get to the butter solids, ladle out and reserve about 1/2 cup surface butterfat into the sauce, whisking well. Use any remaining bottom solids in another dish. Then, gradually whisk in enough of the reserved top butterfat to produce a fairly thick sauce. The butterfat thickens the sauce, so you may not need to use it all. Serve immediately (or as soon as possible, keeping the sauce in a warm place, such as on top of the stove, until ready to serve).

Blackened Fish on the Grill image

I found a recipe in the news paper for blacken fish in a cast iron skillet. Wanted to try to make it on the grill. So I have been working on it and this is what I came up with.

4-6 firm white fish fish filets, i used catfish but will work on most firm white fish.
1 c butter, unsalted, melted
4 Tbsp blackeing seasoning
FOR THE BLACKING SEASONING
2 Tbsp smoked paprika.
1 Tbsp dried oregno and dried thyme.
1 tsp cumin
1 Tbsp cayenne pepper
2 tsp sea salt
1 tsp garlic powder and onion powder.
1-1/2 tsp dried sage
2 tsp blach pepper and white pepper.

Steps:

  • 1. In a mixing bowl. mix together all ingredients for the blacking seasoning. Pour this into a jar with a tight fitting lid. You will have some left over and it will store very well.
  • 2. For the fish: reserve 1/3 of the melted butter for later. Set your grill for med-high heat. You will need a grill fish basket for grilling the fish
  • 3. Dip your fish in the melted butter, both sides. Then coat the fish with blackening mix on both sides.
  • 4. Make sure the grill is good and hot. The fish will cook fast and you will need to watch it.. Place fish in the grill basket and close it so the fish does not move. Place on hot grill and cook for 2-3 minutes till the grilled side is black. Not burnt. Turn the fish over. Pour butter over the side that has been cooked. The fish will be golden brown and the seasoning will be black. Cook the other side for 2-3 minutes. No longer because the fish will burn. Remove from the grill carfully remove the fish from the basket. Serve over dirty rice along with any vegetable you mite want to grill. I grilled Zucchini

BLACKENED TILAPIA FISH FILLETS
3 Tbsp smoked paprika
1 tsp salt
1 Tbsp onion powder
1 tsp ground black pepper
1 tsp cayenne pepper
1 tsp dried ground thyme
1 tsp dried oregano
1/2 tsp garlic powder
FOR THE FISH
4 fish fillets
2 Tbsp grapeseed oil
1/2 lemon, (squezzed )

Steps:

  • 1. In a small bowl combine all of the spices. Press a heaping tablespoon of spice mix onto each fillet so that both sides are liberally coated. Sllow the fish to sit for 15 minutes at room temperature prior to cooking.
  • 2. In a large skillet, heat the oil over midium-high heat. Once the oil is almost smoking, add the fillets and cook for 2 to 3 minutes on each side. Sprinkle withl lemon juice and transfer the fillets to serving platter.

1 1/2 lbs catfish, filets
1 tablespoon black pepper
1 1/2 teaspoons hot paprika
1 1/2 teaspoons sweet paprika
1/2 teaspoon cayenne
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons ground thyme
1 1/2 teaspoons file powder
1 1/2 teaspoons mustard powder

Steps:

  • Mix pepper, hot paprika, sweet paprika, cayenne, garlic powder, onion powder, ground thyme, file powder, and mustard powder together in a small bowl to create the Cajun Blackening Mix.
  • Pour the Cajun spice mix on a tray.
  • Press the fish into the Cajun spice mix on both sides.
  • Fry in a hot cast iron pan coated with oil and sear until fish is cooked and spices are blackened.
  • Serve with your favorite cajun side dishes.

Blackening is a cooking technique that uses high heat and lots of seasoning to develop distinctive flavor by nearly charring the food in a cast-iron skillet. It's particularly good for firm, lean white fish, such as catfish, snapper, trout or redfish. The fish is traditionally dipped in melted butter, then cooked in a dry skillet, but that can create billows of smoke. This smokeless method cooks seasoned fillets in oil to create a lovely texture. The cheese grits cook in just under 5 minutes, but are extra flavorful from cooking in chicken stock and still creamy as a result of added milk and butter.

1 tablespoon plus 1 1/2 teaspoons sweet paprika
1 tablespoon freshly ground black pepper
2 1/4 teaspoons dried thyme

1 1/2 teaspoons kosher salt (Diamond Crystal)
1/2 to 1 teaspoon ground cayenne, depending on heat preference
4 (5 to 6-ounce) skinless white fish fillets, such as snapper, catfish, trout or tilapia
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
Sliced scallions, for garnish
Lemon wedges, for serving
3 1/2 cups low-sodium chicken stock or water
1 teaspoon kosher salt (Diamond Crystal), plus more to taste
1 cup quick-cooking grits
1/2 cup whole milk
2 tablespoons unsalted butter
1 cup grated sharp Cheddar, plus more for garnish

Steps:

  • Prepare the fish: In a small bowl, whisk together the sweet paprika, black pepper, thyme, oregano, garlic powder, salt and cayenne. Pat the fish fillets dry, then sprinkle enough seasoning over both sides of the fillets to completely coat. Reserve remaining seasoning for another use. Allow the fish to sit for 15 minutes at room temperature.
  • While the fish sits, make the cheese grits: Bring the chicken stock and salt to a boil in a large saucepan over high. Add the grits while whisking and reduce heat to maintain a simmer. Allow the grits to thicken, about 5 minutes or so, then stir in the milk, butter and cheese. Season with black pepper and more salt to taste. Keep over the lowest heat possible until ready to serve.
  • Meanwhile, cook the fish: Heat a large cast-iron skillet with the olive oil and butter over medium-high. Add the fish fillets, and cook until the spices are darkened and aromatic, and the fish flakes easily with a fork, 2 to 4 minutes per side.
  • Divide the grits among serving dishes and nestle the fish on top. Garnish the grits with more shredded cheese and the whole dish with the scallions. Serve immediately with lemon wedges for squeezing over the fish.

1/4 cup mayonnaise
1 tablespoon creole mustard (Zatarain's is best)
1 teaspoon creole mustard (plus the 1 Tablespoon above)
1/2 teaspoon Worcestershire sauce
6 -8 dashes Tabasco sauce
2 large garlic cloves, minced
2 teaspoons chopped fresh parsley
3 (4 ounce) red snapper fillets, catfish (cut into bite-sized pieces) or 3 (4 ounce) other similar fish (cut into bite-sized pieces)
1/4 cup blackening seasoning, blend (recipes on food.com)
2 tablespoons all-purpose flour
2 tablespoons vegetable oil plus 2 tablespoon salted butter (adding extra if needed)

Steps:

  • For the Remoulade Sauce: In small bowl mix all ingredients together. Chill until ready to serve.
  • For the Fish Nuggets: Heat a cast iron skillet to high heat while preparing the fish. Do not add butter yet.
  • Pat fillets with paper towel to dry and cut into bite-sized pieces.
  • Place blackened seasoning blend and flour in large plastic ziptop bag and mix well. Add pieces of fish, seal, and shake till fully coated; set aside.
  • Add oil and butter to the hot pan and allow to melt and sizzle. Carefully add fish pieces and fry at high heat for about 1 minute per side in well-ventilated area. Remove and place on paper towel to absorb excess butter. Serve immediately with remoulade sauce and wedge of lemon.

This an adpated recipe from the NOLA.com. The original recipe was first published in the Times-Picayune in 1994, when the famous blackening technique became popular by Paul Prudhomme. The recipe, calls for mahi-mahi, but other local finfish (redfish, drum, pompano, swordfish or even salmon) can be substituted. Make your spice mix in advance. 20 -24 ounces mahi mahi fillets (trimmed of all skin, fat and bones)
1 ripe papaya, peeled, halved, seeded and diced
2 large oranges, trimmed of all rind and white pith, segments cleanly removed
1 lime, juiced
1/2 cup red onion, minced
2 tablespoons diced green onions, green part only
2 tablespoons chopped cilantro
salt & freshly ground black pepper, to taste
2 tablespoons olive oil
2 tablespoons butter, melted
blackened mixed spice (recipe below)
4 sprigs cilantro (to garnish)
4 tablespoons mild paprika
4 teaspoons sea salt (not table salt)
2 teaspoons garlic powder
4 teaspoons onion powder
1/2 teaspoon ground cayenne pepper
2 teaspoons ground black pepper
2 teaspoons ground coriander
1 teaspoon dried thyme leaves
1 teaspoon dried oregano leaves

Steps:

  • To Make Blackened Spice Mix: In a food processor combine paprika, salt, garlic powder, onion powder, red pepper, black pepper, coriander, thyme leaves and oregano leaves. Pulse to combine well. Store in a clean air-tight glass jar. Keeps for about three months if it is moisture-free and cool. Note: this mixtures doesn't have to be processed, just mix together thoroughly.
  • TIPS for preparing the mahi prior to cooking: Prepare the fish by cutting it into fillets no more than one-half-inch thick. This way the fish cooks quickly and finishes before the spice mixture is burnt and bitter. Cut thicker fillets into pieces by slicing them on a 30-degree angle for an even thickness. Remove all skin, fatty tissue and bones. Deep-chill the mahi-mahi in the freezer for about 30 to 60 minutes before cooking, but do not freeze it.
  • To Make the Papaya-Citrus Salsa: In a medium bowl combine papaya, orange segments, lime juice, red onion (to your taste), green onions and cilantro. Season with salt and black pepper to taste. Refrigerate.
  • To Cook the Mahi: Place a large, heavy, cast-iron skillet over medium-high heat and allow to warm until white hot, at least 15 minutes. Remember to use heavy insulated cooking gloves, long tongs or a long-handled spatula and turn on the exhaust fan to high.
  • Pour the olive oil and melted butter into a shallow medium-size pan or plate. Pour the spice mixture into another shallow pan or plate. Remove the fish from the freezer. Dredge each piece through the olive oil/butter mixture on both sides to evenly coat, holding it above the oil for a few seconds to allow the excess to drop back into the pan. The oil coating should be very thin. Lay the mahi onto the spices and apply light pressure to adhere the spices to the fish. Turn over to completely enrobe both sides of the fish pieces with the spices. Lay the spice-coated fish onto a cookie sheet while repeating the coating process with the remaining fish.
  • Carefully lay the spiced-coated mahi into the hot skillet without overlapping or crowding. Cook the fish until the spice mixture browns, about two minutes. Turn over and finish cooking, about two to three additional minutes, depending on the thickness of the fish. Remove to hot serving plates with a spatula, placing two slightly overlapping the pieces on the center of each plate. Depending on how large your cast iron pan, you may need to repeat this process.
  • Divide the salsa in a band across the layered mahi or serve on the side. Garnish with the cilantro sprigs and serve immediately.

1 whole wheat hamburger bun (such as Wonder® Bread)
1 leaf red cabbage

  • Heat a cast iron skillet or griddle over medium-high heat until hot, about 10 minutes.
  • Meanwhile, rub tilapia with Cajun seasoning and set aside.
  • Combine Greek yogurt and Sriracha in a bowl; mix well. Place mixture onto one side of the bun; add red cabbage and avocado.
