BLACKBERRY & THYME FRENCH 75 RECIPE BY TASTY
Here's what you need: sugar, water, blackberry, fresh thyme, blackberry thyme simple syrup, NOLET'S Gin, lemon juice, tonic water, blackberries, sparkling wine, fresh thyme

Steps:
- Thyme simple syrup: In a small pot, combine sugar, water, blackberries, and thyme sprigs. Whisk well and bring to a simmer. Let simmer for about 5 minutes and lightly crush the blackberries with a fork. Strain through a sieve and cool.
- Cocktail: Fill a cocktail shaker with ice. Add prepared simple syrup, NOLET'S Gin, lemon juice, tonic water, and one blackberry. Shake vigorously for 30 seconds.
- Strain into a coupe glass and top with sparkling wine.
- Garnish with a thyme sprig and remaining two blackberries.

- Add the cranberries to food processor and purée into a smooth paste.
- Add the cranberry purée to a small saucepan with the simple honey syrup and rosemary. Simmer over medium heat for 5 minutes, until slightly reduced. Let cool completely, then strain into an airtight glass container and store in the refrigerator for up to 2 months.
- To serve, mix 1-2 tablespoons of cranberry rosemary syrup with 8 ounces of seltzer water in a glass over ice.
