½ cup sugar
½ cup water
blackberry
9 sprigs fresh thyme
¼ oz blackberry thyme simple syrup
1 oz NOLET'S Gin
½ oz lemon juice, freshly squeezed
1 oz tonic water
3 blackberries, separated
½ oz sparkling wine
1 sprig fresh thyme, for garnish

Steps:

  • Thyme simple syrup: In a small pot, combine sugar, water, blackberries, and thyme sprigs. Whisk well and bring to a simmer. Let simmer for about 5 minutes and lightly crush the blackberries with a fork. Strain through a sieve and cool.
  • Cocktail: Fill a cocktail shaker with ice. Add prepared simple syrup, NOLET'S Gin, lemon juice, tonic water, and one blackberry. Shake vigorously for 30 seconds.
  • Strain into a coupe glass and top with sparkling wine.
  • Garnish with a thyme sprig and remaining two blackberries.
  • Enjoy!

½ cup simple syrup
½ cup lemon juice
6 fresh basil leaves, torn
seltzer water, for serving
lime, cut into wheels, for garnish

Steps:

  • In a small saucepan over medium heat, combine the simple syrup, lemon juice, and basil. Simmer for 5 minutes, until slightly reduced. Remove from the heat and let cool completely.
  • Once the lemon basil syrup is cool, strain into an airtight glass container and store in the refrigerator for up to 1 month.
  • To make the soda, pour 1 cup (240 ml) of seltzer water into a glass filled with ice and add 1-2 tablespoons of lemon basil syrup. Stir to combine. Garnish with lime wheels, if desired.

1 cup frozen strawberry, thawed
½ cup honey syrup, see recipe
seltzer water, for serving

Steps:

  • Add the strawberries to food processor and purée into a smooth paste.
  • Add the strawberry purée to a small saucepan with the simple honey syrup. Simmer over medium heat for 5 minutes, until slightly reduced. Let cool completely, then strain into an airtight glass container and store in the refrigerator for up to 2 months.
  • To serve, mix 1-2 tablespoons of strawberry syrup with 8 ounces of seltzer water in a glass over ice.
