Steps:
- 1. Sift flour, baking powder and baking soda into bowl. Beat butter, sugar, lemon juice, lemon, pulp, and grated lemon peel, add dry ingredients And mix until combined.
- 2. Roll into 2 10 inch logs and wrap in plastic wrap, freeze for at least 1 hour. (You can make ahead and freeze for weeks until needed).
- 3. Preheat oven to 400 degrees. Remove dough from freezer, unwrap and cut into 1/4 inch thicknesses
- 4. Place on silicone baking mat and place in oven for 7-9 min
- 5. Remove and let cool on rack.
- 6. Mix powdered sugar, lemon juice, pulp and grated peel, pour into shallow bowl or plate.
- 7. After cookies have cooled, invert one at a time and dip into glaze, set aside to set. ENJOY!!!!!
