1 cup chopped black or English walnuts
3 cups all-purpose flour, divided
1 cup butter, softened
2 cups sugar
4 large eggs
1 teaspoon vanilla extract
2 teaspoons baking powder
1/4 teaspoon salt
1 cup whole milk
FROSTING:
1-3/4 cups sugar
4 large egg whites
1/2 cup water
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract

Steps:

  • In a bowl, toss walnuts with 1/4 cup flour; set aside. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla; mix well., Combine the baking powder, salt and remaining flour; add to the creamed mixture alternately with milk. Stir in the reserved nut mixture., Transfer to a greased and floured 10-in. tube pan. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a heavy saucepan, combine sugar, egg whites, water and cream of tartar. With a portable mixer, beat on low speed for 1 minute. Continue beating on low speed over low heat until frosting reaches 160°, about 9 minutes., Pour into the bowl of a heavy-duty stand mixer; add vanilla. Beat on high speed until frosting forms stiff peaks, about 7 minutes. Frost the cake.

1 c butter, room temperature
1/3 c shortening
3 c sugar
5 eggs
3 c all purpose flour
1/2 tsp baking powder
1 c milk
1/2 tsp vanilla
1/2 - 3/4 c black walnuts, finely chopped

Steps:

  • 1. Do NOT preheat oven.
  • 2. Beat butter and shortening ustil smooth and creamy. Add sugar and beat at medium speed for 5 minutes. Add eggs, one at a time and beat until well blended.
  • 3. In a small bowl combine the flour with the baking powder. Add slowly into the butter/sugar mixture, alternately with the milk until just blended.
  • 4. Stir in vanilla. Fold in the chopped walnuts and pour into a greased, floured 10-inch tube pan or bundt pan.
  • 5. Place in a cold oven and bake at 325 degrees for 1 1/4 or 1 1/2 hours until done. Test for doneness with a toothpick. Cool in pan for 30 minutes. Remove from pan and continue to cool on a rack or turn out on a cake plate. Glaze if desired. Enjoyed.

2 stick butter or margarine
4 eggs
2 1/2 c sugar
1 c milk
3 c sifted all purpose flour
2 c black walnuts, chopped
2 tsp baking powder
GLAZE FOR TOPPING
2 c sugar
1 stick butter or margarine
1/2 c milk
1 tsp vanilla extract
1/2 c black walnuts, chopped

Steps:

  • 1. Preheat oven to 350° Mix butter and sugar together, then add eggs one at a time. Sift flour and baking powder together. Add flour mixture and milk to sugar and butter mixture, alternating flour and milk. Add walnuts last. Pour into greased and floured pan. Bake at 350° for about one hour or until toothpick comes out clean. Let cool, then add the glaze, pour slowly, small amounts at a time.
  • 2. Add all ingredients. Bring to a boil, stirring occasionally. Cook for one minute. Remove from heat, let cool, then pour over cake.

2 c sugar
1 1/2 c oil (vegetable or canola)
3 large eggs
1 tsp vanilla
1/2 tsp black walnut flavoring
3 c all purpose flour
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 c fresh apples, peeled and coarsely chopped (i prefer granny smith)
1 c black walnuts, coarsely chopped
CARAMEL GLAZE
1/2 c brown sugar, firmly packed
1/2 c butter
2 Tbsp light corn syrup
2 tsp milk or half and half
1 tsp vanilla extract
1/2 tsp caramel extract

Steps:

  • 1. Preheat oven to 350 degrees. Grease 9" bundt pan and set aside.
  • 2. In a large bowl, beat sugar, oil, eggs and flavorings until light and fluffy. Mix flour, soda, salt, and cinnamon together and add to creamed mixture. Mix only until blended (I use my spatula and not my electric mixer so as not to overbeat). Fold in apples and nuts.
  • 3. Spread batter into prepared bundt pan and bake about one hour and 20 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes. Remove from pan and transfer onto serving plate. Top with caramel glaze (directions to follow) and serve.
  • 4. CARAMEL GLAZE: Place all ingredients into a heavy saucepan and cook over medium heat, stirring constantly, scraping the sides of the pot in order to remove any sugar crystals until mixture comes to a boil and begins to thicken. Allow to cool for about 10 minutes. Drizzle over slightly warm cake.
  • 5. TIP: Sometimes black walnuts can be difficult to find. If you don't have black walnuts, you may use pecans or english walnuts but just follow this step: Place nuts in a bowl and add about 1 teaspoon of black walnut flavoring. Stir to coat and let stand for about 30 minutes. Use in recipe as usual.

1 (3.4 ounce) package instant vanilla flavor pudding mix
4 eggs
⅓ cup vegetable oil

1/2 c crisco
3 c sugar
5 large eggs
1 tsp vanilla
1/2 tsp black walnut flavoring
3 c all-purpose flour, sifted first and then measured.
1 tsp baking powder
1 c milk or half and half
1 c chopped black walnuts
CARAMEL NUT GLAZE
1/2 c brown sugar, lightly packed
1 stick butter
1 tsp vanilla
2 tsp milk
3/4 c chopped nuts (more if you like)

Steps:

  • 1. Preheat oven to 325 degrees. Grease and flour bundt or tube pan, set aside.
  • 2. Cream butter and Crisco. Add sugar and beat until light and fluffy. Add eggs one at a time, beating well after each addition. Add flavorings and beat well.
  • 3. Sift flour first and then measure. Mix 1/4 cup of flour with nuts. Sift remaining flour with baking powder. Add alternately with milk, beginning and ending with flour (I do this by hand to prevent over mixing). Gently fold in nuts.
  • 4. Bake for 1 hour and 25 minutes or until knife inserted in center comes out clean.
  • 5. CARAMEL NUT GLAZE: Place all ingredients except nuts into a saucepan. Over medium heat bring to a boil, stirring constantly until thickened. Remove from heat and stir in nuts. Allow to cool in pan for about 5 to 10 minutes and pour over warm cake.

3 eggs
1 1/4 cups oil
2 cups sugar
2 teaspoons nutmeg
2 1/2 cups self-rising flour
3 medium apples, peeled, cored and chopped. (I use Granny Smith Apples)
1 cup black walnut, chopped
1/4 cup margarine
1/2 cup brown sugar, packed
1/3 cup milk

Steps:

  • Grease and flour a tube or bundt cake pan and preheat the oven to 350 degrees.
  • Blend eggs, oil, nutmeg, and sugar until creamy.
  • Add flour, a little at a time; and blend well.
  • Batter will be stiff.
  • Fold in apples and nuts.
  • Pour into tube or bundt cake pan and bake for 1 hour.
  • Remove from pan after about 30 minutes.
  • Punch holes in top of the cake.
  • Mix together topping ingredients in a saucepan.

1 1/2 cups black walnuts, chopped
1 1/2 cups butter
8 ounces cream cheese
3 cups flour
3 cups sugar
6 eggs
1/8 teaspoon salt
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 325 degrees.
  • Butter and flour a 10" tube pan.
  • Sprinkle 1/2 cup black walnuts in tube pan and set aside.
  • Cream butter and cream cheese, then add sugar beating until light and fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Add flour and salt, stirring until well combined.
  • Stir in vanilla and remaining black walnuts.
  • Pour batter into prepared tube pan.
  • Bake at 325 degrees for 1 1/2 hours.
  • Cool in pan 10 minutes.
  • Remove from pan and cool completely on rack.

1 cup black walnut, toasted, chopped, divided (about 4 ounces, any kind of walnuts will do)
1 1/4 cups sugar, divided
1 tablespoon instant espresso powder
1 1/3 cups all-purpose flour
1/2 cup cocoa (Dutch process is best)
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
10 tablespoons unsalted butter, room temperature
3 large eggs
1 large egg yolk
1/2 teaspoon vanilla extract
3/4 cup buttermilk (add more by teaspoons if needed)
4 1/2 teaspoons instant espresso powder
1/4 teaspoon cinnamon
1 tablespoon water
1 cup chilled heavy whipping cream
1/2 cup mascarpone cheese
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
3/4 cup about 3 ounces black walnut, toasted, chopped
1/4 teaspoon ground cinnamon
1 pinch salt

Steps:

  • For cake:.
  • Position rack in center of oven and preheat to 350°F.
  • Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high sides.
  • Blend 1/2 cup walnuts, 1 tablespoon sugar, and espresso in processor until nuts are finely ground.
  • Whisk flour, cocoa, baking powder, cinnamon, baking soda, and salt in medium bowl to blend. Using electric mixer, beat butter in large bowl until smooth.
  • Gradually add remaining sugar (1 1/4 cups minus 1 tablespoon), beating until fluffy. Beat in eggs, 1 at a time, then egg yolk. Add ground walnut mixture and vanilla; beat to blend.
  • Reduce mixer speed to low and beat in dry ingredients in 3 additions alternately with buttermilk in 2 additions.
  • Fold in remaining 1/2 cup walnuts.
  • Divide batter evenly between prepared pans.
  • Bake cake layers until tester inserted into center comes out clean, about 26 minutes. Cool in pans 5 minutes, then turn out onto racks and cool completely.
  • For coffee-mascarpone cream:.
  • Stir espresso, cinnamon and 1 tablespoon water in large bowl until coffee dissolves.
  • Add cream, mascarpone, sugar, and vanilla. Beat until filling is thick and smooth (do not overbeat or filling may curdle).
  • Place 1 cake layer on platter, flat side up. Spread half of filling over cake.
  • Place second layer, flat side down, on filling.
  • Spread remaining filling over top. Mix walnuts, cinnamon, and salt.
  • Sprinkle over top of cake.
  • Cover with cake dome.
  • Chill at least 1 hour and up to 1 day.

3 cups whole milk
1 cup heavy whipping cream
1 tablespoon whole black peppercorns
Pinch of salt
7 large egg yolks
1/2 cup plus 1 tablespoon sugar
Walnut cake:
2 cups (about 1/2 pound) chopped walnuts
2 cups powdered sugar
3/4 cup almond flour*
1/2 cup all purpose flour
1/4 teaspoon salt
9 large egg whites
1 teaspoon vanilla extract
1/2 cup (packed) golden brown sugar
Sautéed pears
6 tablespoons (3/4 stick) unsalted butter
1/4 cup sugar
1 1/2 tablespoons honey
6 firm Anjou pears, peeled, cored, cut into 1/4-inch-thick slices
1 1/2 tablespoons pear brandy
1 tablespoon fresh lemon juice
1/2 cup shaved Pecorino Romano cheese
*Available at specialty foods stores and Italian markets.

Steps:

  • Make ice cream:
  • Combine milk, cream, peppercorns, and salt in heavy large saucepan. Bring just to simmer. Whisk yolks and sugar in medium bowl. Gradually whisk hot milk mixture into yolk mixture. Return to saucepan and stir constantly over medium heat until mixture is thick enough to coat back of spoon, about 3 minutes (do not boil). Strain custard into medium bowl; cover and refrigerate until cold, about 4 hours.
  • Do ahead: Can be made 1 day ahead. Keep chilled.
  • Transfer custard to ice cream maker and process according to manufacturer's instructions. Transfer ice cream to container; cover and freeze.
  • Make walnut cake:
  • Preheat oven to 350°F. Butter and flour 13x9x2-inch metal baking pan. Process walnuts and powdered sugar in processor until nuts are finely ground. Transfer to large bowl. Add almond flour, all purpose flour, and salt. Using electric mixer, beat egg whites and vanilla extract in large bowl until frothy. With mixer running, gradually add brown sugar and beat until stiff peaks form. Stir 1/3 egg-white mixture into flour mixture. Fold in remaining egg-white mixture in 2 additions. Pour into prepared pan. Bake cake until tester inserted into center comes out clean, about 27 minutes. Cool cake in pan on rack.
  • Sauté pears:
  • Melt butter with sugar and honey in heavy extra-large skillet over medium-high heat. Add pears and cook until liquid evaporates and pears are golden brown, about 15 minutes. Stir in brandy and lemon juice.
  • Cut cake into 8 pieces. Place cake on plates. Arrange shaved cheese on side of plates. Top with sautéed pears and scoop of black pepper ice cream.

1 1/2 cups chopped black walnuts
1 cup butter, softened
1 1/2 cups granulated sugar
3 large eggs, separated
1 teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3/4 cup milk
1/4 cup powdered sugar
vanilla ice cream (optional)
sliced fresh strawberries (optional)

Steps:

  • Set oven at at 350°F Grease and flour a 10-inch Bundt pan.
  • Pulse black walnuts in a food processor 8 to 10 times or until finely ground; set aside.
  • Beat butter at medium speed with an electric mixer until creamy; gradually add granulated sugar, beating until light and fluffy.
  • Add egg yolks and vanilla, beating just until blended.
  • Sift together flour, baking powder, and salt; add to butter mixture alternately with milk, beginning and ending with flour mixture.
  • Beat batter at low speed just until blended after each addition.
  • Beat egg whites at medium speed with an electric mixer until stiff peaks form; fold into batter.
  • Fold ground walnuts into batter.
  • Spoon batter evenly into pan
  • Bake for 50 minutes or until a wooden pick inserted in center comes out clean.
  • Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack.
  • Sprinkle evenly with powdered sugar.
  • Serve with vanilla ice cream and sliced fresh strawberries, if desired.

2 tablespoons all-purpose flour

1 cup packed dark brown sugar
5 eggs
2 tablespoons rum or 2 tablespoons milk
1/2 teaspoon vanilla
2 2/3 cups all-purpose flour
3/4 cup unsweetened cocoa powder or 3/4 cup carob powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
1 1/3 cups sifted powdered sugar (optional)
2 tablespoons butter, melted (optional)
1 tablespoon rum or 1 tablespoon milk (optional)
1 tablespoon whipping cream or 1 tablespoon milk (optional)

Steps:

  • Preheat oven to 325.
  • Grease and flour a 10-inch square pan or a 10-inch fluted tube pan; set aside.
  • In a small bowl stir together the nuts and 2 T flour, set aside.
  • In a very large bowl stir granulated sugar, butter, and brown sugar until combined.
  • Using a wooden spoon, beat in eggs one at a time.
  • Stir in the 2 T rum or milk and vanilla.
  • In a medium bowl stir together the flour, the chocolate or carob powder, baking powder, and salt.
  • Stir flour mixture into egg mixture with a wooden spoon.
  • Gradually stir in milk.
  • Fold in the nut mixture.
  • Pour batter into the prepared pan.
  • Bake for 65 minutes or until toothpick inserted near center comes out clean.
  • Let cool in pan on a wire rack for 10 minutes.
  • Remove from pan.
  • Let stand for 1 hour.
  • Drizzle with Glaze, if desired.
  • Cool completely.
  • To make Glaze: In a small bowl combine 1 1/3 C sifted powdered sugar; 2 T butter, melted; and 1 T rum or milk.
  • Next, stir in 1 T whipping cream or milk.
  • If necessary, add additional milk or cream, 1 t at a time, until it reaches drizzling consistency.

BLACK WALNUT COCONUT WHITE CAKE

I LOVE black walnuts and coconut, so decided to combine the two flavors.

1 box white cake mix
3 egg whites
1/3 c cooking oil
1 1/4 c water
2 cups c sweetened coconut
1 c chopped black walnuts
1 1/2 c milk
1/2 c sugar
1/2 c coconut
1 tub cool whip
1/4 c black walnuts

Steps:

  • 1. Mix together with electric mixer minutes on medium speed 2 minutes:cake mix, egg whites, water and oil. Mix in nuts and 2 c coconut. Pour into greased and floured 9" x 13" pan. Bake at 350 for 37 minutes. Remove and let cool. With the end of a kitchen matchstick, poke holes every 2" apart in rows.
  • 2. Topping: Boil together 1 minute 1 1/2 c milk and 1/2 c sugar. Pour evenly over cake. Top cake with carton of Cool Whip. Sprinkle top with coconut and black walnuts.
