Strawberry Honey Balsamic With Black Pepper Ice Cream image

This recipe from Salt & Straw takes sweet, rich strawberry ice cream up a notch-honey balsamic vinegar adds some tang and finely ground black pepper brings a little spice.

Number Of Ingredients 17

For the strawberry puree:
10 ounces (about 1 pint) ripe strawberries, hulled and halved
¼ cup honey
Heat the oven to 300°F. Line a sheet pan with parchment paper.
For the ice cream base:
½ cup granulated sugar
2 tablespoons dry milk powder
¼ teaspoon xanthan gum
2 tablespoons light corn syrup
1⅓ cups whole milk
1⅓ cups heavy cream
For the ice cream:
¾ cup Strawberry Puree (recipe follows), very cold
¼ cup honey balsamic vinegar, like Honey Ridge Farms or O Olive Oil
⅛ teaspoon freshly (and very finely) ground black pepper
3 cups Ice Cream Base (recipe follows), very cold
¾ cup your favorite strawberry jam

Steps:

  • Strawberry puree:
  • Spread the strawberries out evenly on the lined sheet pan and drizzle them with the honey. Bake for 15 minutes. Stir the berries and continue baking until they just barely begin to caramelize and get a little bit of roasted color to them, about 20 minutes more. Remove the sheet pan from the oven and let them sit until they're cool enough to handle. Transfer the berries to a blender along with the yummy sticky stuff on the parchment paper and puree to make a smooth sauce. Chill in the fridge until cold.
  • Store the puree in the fridge for up to 2 weeks or in the freezer for up to 3 months.
  • Ice cream base:
  • Combine the sugar, dry milk, and xanthan gum in a small bowl and stir well.
  • Pour the corn syrup into a medium pot and stir in the whole milk. Add the sugar mixture and immediately whisk vigorously until smooth. Set the pot over medium heat and cook, stirring often and adjusting the heat if necessary to prevent a simmer, until the sugar has fully dissolved, about 3 minutes. Remove the pot from the heat.
  • Add the cream and whisk until fully combined. Transfer the mixture to an airtight container and refrigerate until well chilled, at least 6 hours, or for even better texture and flavor, 24 hours. Stir the base back together if it separates during the resting time. The base can be further stored in the fridge for up to 1 week or in the freezer for up to 3 months. (Just be sure to fully thaw the frozen base before using it.)
  • Ice cream:
  • In a bowl, combine the strawberry puree, vinegar, and black pepper with the ice cream base. Whisk as needed to get everything completely incorporated into the base. Pour the mixture into an ice cream maker and turn on the machine. Churn just until it has the texture of soft-serve.
  • Stir the jam with a fork to loosen it. Quickly alternate spooning layers of the mixture and dollops of the jam in freezer-friendly containers.
  • Cover with parchment paper, pressing it to the surface of the ice cream so it adheres, then cover with a lid. It's okay if the parchment hangs over the rim. Store it in the coldest part of your freezer (farthest from the door) until firm, at least 6 hours. It will keep for up to 3 months.

3 tablespoons olive oil
3 slices country bread, crusts removed and cut into 1/8-inch dice
Salt and freshly ground pepper
1/2 pound slab bacon cut into 1/2-inch lardons
2 shallots, thinly sliced
2 cloves garlic, finely sliced
1/4 cup white wine vinegar
8 cups frisee, washed, dried and cut into bite sized pieces
4 poached eggs
4 (3 to 4-ounce) filet mignon
Kosher salt
2 teaspoons ancho chile powder
2 teaspoons coarsely ground black pepper
1 tablespoon plus 1 teaspoon olive oil
2 tablespoons Dijon mustard
2 tablespoons honey
1 tablespoon freshly grated horseradish or prepared (drained)
1 tablespoon finely chopped fresh mint
Salt

Steps:

  • Heat oil in a large saute pan over medium high heat. Add the bread cubes and season with salt and pepper. Cook until golden brown and place on a plate lined with paper towels. Heat a medium saute pan over high heat. Add the bacon and cook until golden brown. Remove bacon with a slotted spoon to a plate lined with paper towels. Add the shallots and garlic to the pan and cook until soft. Add the vinegar and cook for 30 seconds. Season with salt and pepper to taste. Place the frisee, croutons, and bacon in a bowl add the vinaigrette and toss to coat. Divide the salad onto 4 plates and top with a poached egg.
  • Season filet with salt on both sides. Sprinkle 1 side of each filet with 1/2 teaspoon of the ancho chile powder and 1/2 teaspoon of the coarsely ground black pepper. Heat the olive oil in a large saute pan over high heat until almost smoking. Place the filet, pepper-side down in the pan and saute for 2 to 3 minutes or until a crust forms. Turn the filet over, reduce heat to medium and continue cooking until desired doneness, 2 to 3 minutes for medium-rare. Let rest 2 to 3 minutes before serving, spoon 1 tablespoon of the sauce over each steak.
  • Combine all ingredients in a small bowl and season with salt to taste.

40 ml oil
500 g round steaks, cut into thin strips
1 onion, sliced into wedges
300 g sugar snap peas
40 ml honey
40 ml soy sauce
40 ml oyster sauce
1 teaspoon of freshly cracked black pepper (the original recipe called for 3 but we found it too peppery)

Steps:

  • Heat a wok until very hot, then add half the oil, swirling to coat.
  • Fry the beef in batches for about 3 minutes each batch or until browned.
  • Reheat the wok, and add the rest of the oil, and stir fry the onion and peas until softened.
  • Remove.
  • Add the honey, sauces and pepper, bring to the boil and simmer for about 3 minutes to reduce and thicken a little.
  • Return the meat and vegetables to the wok, and toss for about 3 minutes to heat and combine.
  • Serve at once over rice.

3 tablespoons honey
3 large cloves garlic, minced
1 teaspoon fresh ground black pepper
1 pound steak (rib eye, Porterhouse, T-bone, New York strip, Delmonico, or the tender part of a chuck steak), cut at least 1-1/4 inches thick, trimmed of excess fat

Steps:

  • 1. Combine the wine, honey, garlic and pepper in a shallow dish, add the steak and turn to coat both sides with the mixture. Let stand at room temperature while you set up the rest of the meal. 2. High heat is needed here to get a good sear. Prepare a charcoal grill for direct grilling or preheat a gas grill set for high heat. Oil the grate. 3. Remove the steaks from the marinade and pat dry. Arrange the steaks on the hot grate and sprinkle with salt to taste. Grill for 4 to 6 minutes. Turn the steaks over using tongs (don't use a fork; poking the meat releases the flavorful juices), sprinkle with salt and more black pepper, and grill the second side for about the same amount of time, or to desired doneness. The best way to make sure the steak is done to your liking is to insert an instant-read thermometer into the thickest part of the meat, not touching bone. Let steak rest a few minutes before serving.

4 oven-ready partridge
olive oil
250ml dry cider
2 tbsp clear honey
200ml chicken stock
1 butternut squash , peeled and cut into 2.5cm chunks
few thyme sprigs, leaves stripped

Steps:

  • Cut the backbone out of one of the partridges using a strong pair of kitchen scissors or poultry shears. Turn the bird over, then use your bodyweight and press down on the middle of the breast with the heel of your hand, until the partridge flattens out. Repeat.
  • Heat a little oil in a large non-stick pan. Season the birds with salt and pepper, then brown them quickly - 2 at a time - in the pan. Lift out, and set aside.
  • Mix the cider with the honey, reserve one-third of the mix, then tip the rest into the pan to deglaze. Stir in the stock, then reduce the liquid down for 5 mins or until you have a syrupy sauce. Season to taste.
  • Heat oven to 220C/200C fan/gas 7. Pop the squash into a mixing bowl, toss with most of the thyme, seasoning, a little of the reserved cider mix and 1 tbsp olive oil. Tip onto a non-stick baking tray, then roast for 30 mins.
  • Now toss the partridges in what's left of the cider mix. Grind lots of black pepper over and scatter with a good sprinkling of salt. Nestle the partridges amongst the squash, breast-side up. Sprinkle with a little more thyme. Roast for 15 mins, then remove the birds and let them rest. Turn off the oven and keep the squash warm. Cut the birds into quarters and serve on top of a pile of squash. Drizzle around a little of the sauce and scatter with a little thyme, to serve.
