I love Bleu Cheese - so these were born. When I make them for appetizers, I use the regular size mushrooms - that way people don't need a plate and/or knife and fork for them

Steps:
- Put mushroom stems in a food processor and process until well minced.
- Add to the softened bleu cheese.
- Fill each mushroom cap with a good amount.
- Place on baking sheet and bake at 350 for 20- 30 minutes.
- I have also made these with Brie and it's good too- if you use a regular cheese (cheddar, swiss, etc.) mix just a tad of mayo or sour cream to the cheese and minced stems or they will be too dry.

I usually use reduced fat cream cheese, and reduced fat blue cheese to keep the calories and fat down. Also for a quick fix you can use chive and onion variety cream cheese. ( They also make light.)

- Preheat oven to 375.
- Wash the mushrooms and remove the stems from caps. Place on a paper towel to dry.
- In a small bowl mix together the cream cheese, green onion, bacon pieces, and blue cheese.
- Stuff all mushrooms with about 1/2 a tablespoon, or less, cheese mixture.
- Transfer all mushrooms to a shallow baking dish and bake for aproximately 20-25 min (very light brown on top).

BACON-BLUE CHEESE STUFFED MUSHROOMS
Steps:
- 1. Preheat the oven to 425 degrees F. Remove the stems from the mushrooms and set aside. Place the caps, stem-side down on a baking sheet and brush the outsides with the oil. Bake until soft, but still holding their shape, 15 minutes.
- 2. Meanwhile, crisp the bacon in a medium skillet over medium heat. Transfer bacon to a paper towel-lined plate and reserve the skillet and drippings. Finely chop reserved mushroom stems and add to the bacon drippings along with the shallot and thyme. Season with salt and pepper and cook, stirring, until mushrooms are dry, about 5 minutes. Add spinach and continue to cook until the spinach wilts,1 minute.
- 3. Transfer mixture to a bowl and add the bread cubes and lemon zest. Chop the cooked bacon, and combine with the mushroom mixture. Place the caps stem side-up on a separate baking sheet and evenly fill each cap with the stuffing. Bake until the mushrooms are hot and lightly browned, about 5 minutes. Place a piece of blue cheese on each mushroom and continue to bake until the cheese just begins to melt, about 3 minutes. Serve.

Steps:
- Preheat the oven to 350°F.
- Lightly oil a small baking dish.
- Gently wash and stem mushrooms; pat dry (Save stems for another recipe).
- Combine clams, onions, garlic salt, minced garlic, butter and oregano in a bowl and mix well.
- Add Italian bread crumbs, egg, clam juice, mixing well.
- Add Parmesan, Romano, and Mozzarella cheeses to the clam stuffing and mix well.
- Place approximately 1 1/2 teaspoons of the clam stuffing mixture inside mushroom cavity and slightly mound (You should be able to stuff between 8- 12 mushrooms depending on the size of mushrooms).
- Place the stuffed mushrooms in slightly oiled baking dish and pour 1/4 cup melted butter over the top of the mushrooms.
- Cover and place in oven for about 35- 40 minutes.
- Remove cover; sprinkle the 1/4 cup freshly grated mozzarella cheese on top and pop back in oven just so the cheese melts slightly.
- Garnish with freshly diced parsley.
- Serve hot.

- Preheat oven to 425°. In a small skillet, heat butter over medium-high heat. Add mushrooms and Worcestershire sauce; cook and stir until mushrooms are tender, 6-8 minutes. In a small bowl, mix mustard, pepper, oil and salt., Cut lengthwise through the center of roast to within 1/2 in. of bottom. Open roast and cut lengthwise through the center of each half to within 1/2 in. of bottom. Open roast flat; cover with plastic wrap. Pound with a meat mallet to 3/4-in. thickness. , Remove plastic. Spread mushrooms down center of roast to within 1/2 in. of ends; top with 1/2 cup cheese and onions. Starting at a long side, roll up jelly-roll style; tie at 1-1/2-in. intervals with kitchen string. Secure ends with toothpicks., Place on a rack in a shallow roasting pan; spread with mustard mixture. BAKED BLUE CHEESE STUFFED COLOSSAL BLACK OLIVES
I was so surprised not to find a recipe on here for this. If you like blue cheese stuffed olives ... these are the best. Not hard and cheaper than buying those pre-stuffed ones you get in a jar - these are wonderful. Add 3 olives to each wooden skewer and then bake just until warm and the cheese is heated. They can also be heated right in the microwave. A great appetizer! Serve warm or even room temp, and the best part ... make ahead and just heat up before serving. If you don't like bleu cheese, try gorgonzola as it will work just as well.

Steps:
- Filling -- Just mix the cheeses, garlic, shallot, red pepper, and black pepper. No salt needed as the cheese and olives provide enough salty flavor. Mix well breaking up the bleu cheese and make sure that the filling is creamy.
- Stuffing -- You can use a pastry bag, but I personally use a small ziplock or plastic baggie. Then cut a tip off of one of the corners, squeeze the bag, and stuff the olives.
- Walnuts -- You can sometimes find them chopped, but if not, just use a small food processor or you can chop them by hand. You want them fine chopped.
- After you have stuffed the olives. I dip the two ends with the cheese into the ground nuts to give a little crunch.
- Skewers -- Before I skewer them I let the olives chill after stuffing. Then, depending on what size skewer you use, add as many olives as you want. I prefer to use the small skewers and add 3 olives per skewer for a nice bite size appetizer.
- Heat them up, either in the microwave (1-2 minutes on 60% power) or in the oven, 350 for about 5-7 minutes. Just until warm and the cheese is heated through.

This is my version of stuffed mushrooms. I went looking for a recipe and couldn't find anything that fit the occasion. You can always leave the Blue Cheese out, just add a bit more cream cheese. Ive never measured before, so if something is off, please let me know!

Steps:
- Clean mushrooms and remove the stems from the caps, set stems aside and place mushroom caps top side down.
- Chop Bacon into 1/4 inch by 1/4 inch squares and place in saute pan. Cook until crispy. Remove bacon and set aside.
- Chop the stems finely,and add to the bacon fat along with the onion and garlic. Saute until the mushrooms release their liquid and the bottom of the pan is dry.
- Add breadcrumbs and stir to combine. Remove from heat and let cool.
- In a seperate bowl cream cheeses and green onions.
- Add the mushroom mixture and mix well.
- To stuff mushrooms I place the mix into a large plastic zip top bag, and cut off the corner. Sqeeze enough mix into the caps to fill the hole and make a rounded top.
- Bake in a 350 degree oven for 15 minutes.

- Wash and dry the mushrooms, and remove the stems.
- In a small blender or food processor place the drained olives, the bleu cheese crumbles, shredded parmesan cheese, and tobasco sauce and pulse gently until the olives are finely minced, and the other ingredients have been well mixed with them.
- Remove the mixture from the blender or food processor and place in a bowl.
- Take the mixture and place a generous spoonful in each mushroom cap, on the stem side.
- Lay the now filled mushrooms on a cookie sheet and then place the cookie sheet into a 325 degree oven for 10 to 15 minutes.
- When removing from the oven, allow to cool for about 3 to 5 minutes before serving.
