MAGIC CHOCOLATE PUDDING
Light, sticky, chocolate pudding. Very quick and easy to do. Delicious for adults and great fun for the kids to make. Put the sauce on top and when it is baked it becomes a sweet sticky sauce underneath, MAGIC!

Steps:
- Place the Flour, butter, 100g of sugar, cocoa powder and the 2 eggs in a bowl or mixer.
- Mix or hand whisk together, add a little milk if needed, to make a soft dropping consistency. Place in a greased dish.
- Put the cocoa powder in to a jug and make up to 200ml with boiling water add the sugar and corn flour.
- Now this is the magic part. Gently pour ON TOP of the pudding mixture in the dish.
- Bake for 25 - 35 mins depending on how deep the dish is on Gas mark 5.It will now firm on the top and the sauce will be on the bottom.
- Serve with Custard or Cream. Enjoy!

BLACK MAGIC CAKE WITH VOODOO FROSTING
This is a super moist chocolate with a delicious decadent frosting. My husband does the "chocolate dance" whenever I bake this cake! It is truly a delicious cake or "darn good cake" as quoted from my best friend.

Steps:
- CAKE:.
- Combine dry ingredients in a bowl.
- Add all the rest of the ingredients.
- Beat at medium speed for 2 minutes.
- Batter will be thin.
- Pour into 2 greased and floured 9-inch cake pans.
- Bake at 350° for 30-35 minutes until toothpick inserted in center comes out clean.
- Cool on rack until ready to frost.
- FROSTING:.
- Prepare, bake and cool 2 9-inch round cake layers.
- For layer filling, combine hot fudge and instant coffee granules in a medium sauce pan; heat until coffee crystals are dissolved.
- Cool for 15 minutes and then fold into fudge mixture 2 cups of the whipped topping.
- Refrigerate 30 minutes.
- Place first cake layer on a serving plate and spread with 1 cup filling.
- Top with second layer.
- Add remaining 2 cups whipped topping to the remaining fudge mixture and mix well.
- Frost top and sides of the cake with topping mixture.
- Keep cake refrigerated.
- TIP: Garnish with chocolate curls, chocolate coated coffee beans or grated chocolate.

CHOCOLATE BLACKOUT PUDDING (FROM SCRATCH)
This pudding is one of the best I've ever had. It is extremely rich and decadent. On top of that, it's pretty low in fat (much healthier than what you'd buy at the store) and pretty simple to make. It comes from Didi Emmons who says: "The consistency is creamy and smooth, like that of Jell-O chocolate pudding I loved as a child, but the flavor is far superior."

Steps:
- In a small bowl, combine 1/2 cup milk with the cornstarch and whisk well. Add the yolk, egg, sugar, and cocoa and whisk well.
- In a large, heavy saucepan, heat the remaining 2 1/2 cups milk over med-high heat until it begins to boil. Then pour about half of the milk into the cornstarch mixture, stirring all the time. Pour the mixture back into the saucepan. Place the pan over low heat, and whisk constantly for about 5 minutes, until the pudding thickens. The pudding should get very thick, like yogurt.
- Remove the pan from the heat and add the chocolate pieces, vanilla, and alcohol if you like. Stir until chocolate is melted.
- Ladle the pudding into mugs or ramekins and chill at least 1 1/2 hours. Serve it cold, topped with whipped cream if you like.

- 1. Directions 1 Combine flour, sugar, cocoa, baking soda, baking powder, and salt in a large mixing bowl or stand mixer.
- 2. Add eggs, coffee, buttermilk, oil, and vanilla.
- 3. Beat at medium speed for two minutes. Batter will be thin.
- 4. Pour batter into a greased and floured 9x13 pan or two 9 inch cake pans.
- 5. Bake at 350 degrees for 35-40 minutes for a 9x13, or 30-35 minutes for layer pans.
- 6. Combine frosting ingredients and mix with a hand or stand mixer. Spread frosting on cooled cakes.
