2 (3 1/2 to 4-pound) chickens
1 heaping teaspoon hot chili powder
1 teaspoon ground cumin
1 teaspoon fennel pollen
Dash ground white pepper
1 teaspoon fine sea salt
5 dried morel mushrooms
1 teaspoon salt
3 carrots, peeled cut into chunks
2 onions, peeled and cut into chunks
3 stalks celery, cut into chunks
26 ounces beer
1 1/2 quarts water
Barbecue Sauce, recipe follows
4 cups instant white rice
Black Bean and Corn Salsa, recipe follows
2/3 cup ketchup (recommended: Heinz)
4 ounces beer
2/3 cup packed light brown sugar
1 teaspoon hot chili powder
2 (15-ounce) cans black beans, rinsed and drained
6 ounces frozen corn, thawed
1 large beef steak tomato, seeded and finely diced
1 medium green bell pepper, seeded and finely diced
1 teaspoon chopped fresh cilantro leaves
1 clove garlic, chopped
1 jalapeno, seeded and finely chopped
1 cup tomato juice
1 medium red onion, finely diced
1 lime, juiced

Steps:

  • Break down chickens to get 4 breasts on the bone (with skin) and 4 leg-thigh pieces. Trim all fat and skin from the carcasses and hack into small pieces.
  • In a small bowl, combine chili powder, ground cumin, fennel pollen, white pepper, and fine salt. Rub all over chicken breasts, cover and keep refrigerated.
  • Preheat an outdoor grill for indirect grilling. Season chicken legs with salt and pepper, wrap in aluminum foil to form a pouch. Grill away from the heat source until chicken is very tender, about 1 hour.
  • Place the chicken bones, dried mushrooms, carrots, celery, onion and salt in cheesecloth and tie off with twine. Add beer and water to stock pot and toss in tied up bones. Bring to a boil and lower to a simmer. Simmer for 2 hours. Remove tied up bones.
  • After the legs have cooked for 1 hour, remove from grill. Discard skin and bones, shred chicken meat and set aside. Place dry rubbed chicken breast on grill skin side down over direct heat. Grill chicken, turning once, until cooked through about 5 to 6 minutes per side. Meanwhile, in a saucepan, heat Barbecue Sauce to simmering. Stir in leg meat.
  • When the dish is 5 minutes away from finished, measure out 4 cups hot stock into a clean saucepan. Return to simmer, add white rice, cover and remove from heat. Let sit 5 minutes, then fluff with a fork.
  • Slice chicken breast, serve over rice with leg meat and Corn and Black Bean Salsa.
  • Combine all ingredients in a large bowl.
  • In a mixing bowl, toss all of the ingredients together and let sit for 1 hour.

1 tablespoon vanilla extract
6 tablespoons sifted all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1 1/2 cups walnuts
1 1/2 cups pecans

Steps:

  • Preheat oven to 325°F..
  • In a double boiler or a metal bowl set over a pan of barely simmering water melt unsweetened chocolate, 9 ounces semisweet chocolate, and butter, stirring occasionally, and remove top of double boiler or bowl from heat.
  • In a bowl with an electric mixer beat eggs with sugar until light and fluffy. Add espresso powder, vanilla, and chocolate mixture, beating until smooth.
  • In a small bowl whisk together flour, baking powder, and salt and add to chocolate mixture, beating until just combined. Stir in remaining semisweet chocolate and nuts until combined well.
  • Scoop out 1/2-cup measures of cookie dough, arranging them 3 inches apart on ungreased baking sheets. Bake cookies in batches in middle of oven 25 minutes, or until tops begin to crack (do not overbake). Cool cookies on a rack.

½ teaspoon baking powder
½ teaspoon salt
6 (1 ounce) squares semisweet chocolate, chopped
2 (1 ounce) squares unsweetened chocolate
6 tablespoons butter
2 eggs
½ cup white sugar
2 teaspoons vanilla extract

Steps:

  • Sift together the flour, baking powder, and salt; set aside. Over a double boiler, melt the semi sweet chocolate, the unsweetened chocolate, and the butter; stirring occasionally.
  • In a medium bowl, beat the eggs and sugar for 6 minutes with an electric mixer. Add the melted chocolate mixture, and mix for 1 more minute. Fold the sifted ingredients into the chocolate mixture with a rubber spatula. Cover the dough and chill for half an hour to an hour.
  • Preheat oven to 325 degrees F ( 165 degrees C ). Grease cookie sheets.
  • Drop cookies by heaping tablespoons onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Let cookies cool completely before removing from cookie sheets.

2 cups semi-sweet chocolate chips, divided
2 ounces unsweetened baking chocolate, chopped
6 tablespoons unsalted butter
2 large eggs
1/2 cup granulated sugar
2 teaspoons vanilla extract

Steps:

  • Sift flour with baking powder and salt, set aside. Melt 1¼ cups of the chocolate chips and the unsweetened chocolate in a double boiler or the microwave.
  • Beat the butter, eggs, sugar and vanilla in a medium bowl for 4 minutes at medium speed. Scrape down sides and beat 2 more minutes. Add the melted chocolate and beat one minute more. Add the sifted dry ingredients and the remaining chocolate chips and beat just until mixed. Refrigerate the batter for 15 minutes.
  • Preheat the oven to 325°.
  • Place 1 heaping tablespoon of dough per cookie on greased cookie sheet, bake for 9 minutes (don't overbake). Cool on wire rack and try not to eat them all in one sitting.
  • You can also add some nuts if you like, I've used pecans and macadamia and both worked very well.

3 tablespoons olive oil

1 tablespoon hot pepper sauce or 1/4 teaspoon cayenne
2 green bell peppers, chopped
2 cups corn
1 1/2 cups black beans, drained cooked (14 oz can)
1 1/2 cups red kidney beans, drained cooked (14 oz can)
salt
cheddar cheese (optional) or monterey jack cheese (optional)
cilantro (optional)

Steps:

  • Place the bulghur, hot water, and about a cup of the juice from the canned tomatoes in a small saucepan.
  • Cover and bring to a boil on high heat, then lower the heat and simmer gently.
  • Heat the olive oil in a large saucepan.
  • Saute the onions, garlic, cumin, chili powder, and Tabasco or cayenne.
  • When the onions are soft, stir in the bell peppers and saute for 2 to 3 minutes more.

1/2 cup A.1. Original Sauce
1-1/2 lb. ground beef
6 onion sandwich rolls, split

Steps:

  • Heat grill to medium heat.
  • Cook and stir onions and garlic in margarine in medium skillet on medium heat 5 min. or until tender but not browned; stir in sugar. Simmer on low heat 10 min., stirring occasionally.
  • Meanwhile, shape meat into 6 patties. Grill 5 min. on each side or until done (160°F).

3 tablespoons butter (VEGANS replace butter with olive oil)
1 cup coarsely chopped onion
5 cups vegetable stock (light-colored looks nicest)
2 yukon gold potatoes, peeled & cut into 3/4-inch chunks (about 1 lb. total)
1 garlic clove, coarsely chopped
1 dash salt
1 dash pepper
1 cup pitted black olives, finely chopped
2 tablespoons minced flat leaf parsley
2 garlic cloves, minced
1 dash ground pepper
1 pinch red pepper flakes (optional)

Steps:

  • Melt butter in soup pot over medium-low heat. Add onions; cook, stirring occasionally, until tender, about 10 minutes.
  • Stir in vegetable stock, potatoes, garlic, salt & pepper. Increase heat to high; bring to a boil. Reduce heat, cover & simmer until potatoes are very tender (about 10 minutes).
  • Make "caviar": stir all ingredients together in a small bowl, and set aside.
  • Puree the soup in a blender until smooth(will need to do in several batches).
  • Return soup to pot set on medium heat; return to serving temperature.
  • Garnish each serving with a small mound of "caviar". Non-vegans: You can also garnish with finely crumbled hard-cooked eggs and/or sour cream.

8 ounces mushrooms, sliced 1/4-inch
1/4 cup unsalted butter
1 teaspoon roasted garlic, pureed
1/4 teaspoon chipotle pepper
1/2 teaspoon white pepper
1 tablespoon veal demi-glace
1 tablespoon Kitchen Bouquet
2/3 cup Chardonnay wine

Steps:

  • Melt Butter in saute pan over medium heat, once melted add garlic and stir as to not burn.
  • Add mushrooms and flip or stir to coat.
  • Add chipotle and white pepper. Stir.
  • Let saute until mushrooms begin to give up their moisture, then turn up heat and de-glaze with 1/2 the white wine and reduce by one third. Then deglaze again with the rest of the wine.
  • Add Kitchen Bouquet and demi-glace, stir until incorporated and let simmer low for 30 minutes or so.
  • The longer you let it simmer, the thicker and richer the end product.
  • They can be removed at any desired consistency, but it's best to stir on occasion and let turn to a consistency of a sludgy dirty motor oil.

I took my favorite Pecan Pie & used Black Walnuts instead of the pecans, & took it up a notch with the use of Barcardi Gold Rum & a couple other changes . When I found out that Sam's Club now carried my favorite nuts the Black Walnuts , I just had to buy them. I have bought 3 bags of the 1 1/2 pound package for $11.48 each. I was ordering them on line at a much higher price. If you know any thing about me at all you know I LOVE A BARGAIN. So you will be seeing other recipes using Black Walnuts in the future.

  • Unroll pie crust and position it into deep dish pie plate. Crimp over lapping edge, and fill pie crust with the black walnuts and set aside till needed.
  • Break eggs into a medium size bowl then beat till light in color. Add corn syrup, melted butter, vanilla bean paste and black walnut flavor, beat till blended together.
  • Combine flour with brown sugar, mix together and pour into egg mixture and beat again till blended.
  • Pour mixture over the nuts in pie plate, nuts will slowly begin to rise to the top. Now carefully place pie on a shallow pan then place in preheated 350 degree F.oven, bake for 30 minutes, and check to see if crust is browning too quickly, if so cover outer edge of crust with aluminum foil, and then bake for an additional 30 to 40 minutes until filling is set.
  • Check by inserting sharp knife in center of pie and if it comes out clean it should be done. It will settle as it cools. Allow to cool completely before cutting. Top with whipped topping or cream and additional nuts if desired.
