DELICIOUS DIRTY RICE

Found on an advertising flyer, nutritious and full of flavour and texture. Prep time does not allow for the bean preparation, although if you substitute canned beans, then the time stated is the time it will take!

Number Of Ingredients 20

2 tablespoons olive oil
3 garlic cloves, minced
1 cup chopped onion
1 green bell pepper, chopped
1 tablespoon chili powder
1/4 teaspoon crushed red pepper flakes
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 1/3 cups uncooked white rice
2 3/4 cups water
1 teaspoon salt
1 1/3 cups corn kernels, blanched
1 cup black beans, cooked and drained
1 (410 g) can chopped tomatoes with juice (I use a 420 gr can of tomatoees)
1/4 cup toasted pine nuts
fresh ground black pepper
1 red onion, thinly sliced
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro
1 lime, cut into wedges

Steps:

  • Beans : Soak for 2 - 4 hours.
  • To cook, drain the soaking water and add cold water, 1 part beans to 2 or 3 parts cold water. Bring to a boil, then reduce heat to a very slow simmer, so the beans stay in their jackets. Simmer for 2 hours.
  • Lightly toast pine nuts.
  • In a heavy saucepan, heat 1 tablespoon of the olive oil over medium heat.
  • Add the garlic and the chopped onions; saute for 5 minutes, stirring frequently.
  • Mix in the bell pepper, chili powder, chili flakes, cumin, and cinnamon.
  • Saute for 2 minutes.
  • Pour the rice into the saucepan and stir to coat.
  • Add the water and 1 teaspoon salt, and bring the rice to a boil over high heat.
  • Cover the pan and turn the heat to low.
  • Simmer the rice for 25 minutes.
  • When the rice is cooked, mix in tomatoes, corn, black beans, and pine nuts.
  • Stir in salt, pepper and lime juice.
  • When the mixture is heated through, spoon it onto plates and top with the sliced red onion and cilantro.
  • Serve a wedge or two of lime with each plate to squeeze over the rice.

QUICK BLACK BEANS WITH RICE



Quick Black Beans with Rice image

1/4 cup olive oil
1 medium onion, minced
4 cloves garlic, minced
1 jalapeno, seeded and minced
2 teaspoons kosher salt
1 pound dry black beans, sorted for pebbles and rinsed
2 sprigs epazote or Mexican oregano
1/2 cup chopped fresh cilantro
Juice of 1 or 2 limes
4 cups cooked white rice
1/2 cup crumbled Cotija cheese

Steps:

  • In a 6-quart pressure cooker over medium-high heat, add the olive oil, onions, garlic, jalapeno and salt. Saute until the onions are translucent, 4 to 5 minutes. Add the beans, epazote and 6 cups water; stir well, and then lock the lid (following the manufacturer's instructions). Once the beans come up to pressure, turn the heat down to medium to maintain pressure; cook for 25 minutes. Remove from the heat and let rest for 5 minutes, then release the pressure. Remove the epazote, and taste and adjust the seasoning as needed.
  • Just before serving, fold the cilantro and lime juice into the cooked rice.
  • Garnish beans with the Cotija and serve alongside the rice.

3 roma (plum) tomatoes, chopped
1 ⅓ cups whole corn kernels, blanched
1 cup black beans, cooked and drained
¼ cup toasted pine nuts
freshly ground black pepper
1 red onion, thinly sliced
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro
1 lime, cut into wedges
2 teaspoons annatto powder

This is my twist on Goya's standard recipe for black beans. This is absolutely delicious served over white rice.

2 teaspoons olive oil
1/3 cup onion, finely chopped
1/4 cup green bell peppers, chopped or 1/4 cup cubanelle pepper
1 garlic clove, minced
1 (10 1/2 ounce) can black beans, undrained
1/2 cup water
1 teaspoon oregano
0.5 (1/4 ounce) packet Sazon Goya seasoning, without annatto
1/4 cup red wine

Steps:

  • Heat oil in medium saucepan over medium heat.
  • Add chopped onion and chopped pepper.
  • Saute until golden brown and tender, about 8-10 minutes, stirring often to prevent burning.
  • Add minced garlic and saute for one minute. Do not burn garlic.
  • Stir in black beans, water and oregano.
  • In a cup, mix Sazon Goya with red wine until well-combined.
  • Add red wine mixture.
  • Bring to a boil.
  • Reduce heat and simmer 10 minutes.
  • Let stand for 2 minutes. Sauce will thicken.
  • Pour over white rice.

I invented this version of dirty rice to accompany my husbands fantastic ribs. It's easy to make, but it does want to simmer for a good long time.

Number Of Ingredients 15

2 1/2 cups brown rice
1 (15 ounce) can kidney beans
1 (15 ounce) can black beans
5 cups mushroom broth (I use Better than Boullion)
1 tablespoon oregano
1 tablespoon basil
1 teaspoon cumin
2 bay leaves
1 (10 1/2 ounce) can cream of mushroom soup
1 carrot, chopped small
1 stalk celery, minced
1/2 lb bacon, chopped into 1 in long pieces
1 white onion, 1/2 diced 1/2 chopped
1/3 cup olive oil
1 garlic clove, minced

Steps:

  • Fry the Bacon.
  • Cook the onion in the grease until it's translucent.
  • Add the olive oil, oregano,basil, cumin, garlic.
  • Rinse your rice 3 times.
  • Add rice and sautee for 10 minutes.
  • Add broth, beans (do not drain), bay leaves, and soup.
  • Cover, Bring to a boil, turn down heat to between low and medium.
  • Simmer for at least an hour, ideally two.
