2 pounds smoked sausage, cut into 1 inch slices
3 (15 ounce) cans black beans, rinsed and drained
1 ½ cups chopped onion
1 ½ cups chopped celery
1 ½ cups chopped green pepper
1 cup water
1 (8 ounce) can tomato sauce
4 cloves garlic, minced
2 teaspoons dried thyme
1 teaspoon chicken bouillon granules
1 teaspoon white pepper
¼ teaspoon cayenne pepper
2 bay leaves

Steps:

  • Place a large skillet over medium heat, and add sausage. Cook, stirring, until sausage is browned, about 5 minutes. Drain fat, and transfer sausage to slow cooker.
  • Stir the black beans, onion, celery, green pepper, water, tomato sauce, garlic, thyme, bullion granules, white pepper, cayenne pepper, and bay leaves into the sausage in the slow cooker. Cover, and cook on Low until vegetables are tender, about 6 hours. Remove bay leaves before serving.

2 teaspoons extra-virgin olive oil
1 pound kielbasa or other smoked sausage, cut into 1-inch pieces
3 medium carrots, diced small
2 shallots, diced small
Coarse salt and ground pepper
2 garlic cloves, minced
2 cans (15.5 ounces each) black beans, rinsed and drained
2 cups low-sodium chicken broth
3 tablespoons chopped fresh parsley, plus more for serving
1/4 cup plain yogurt, for serving

Steps:

  • In a large skillet, heat oil over medium-high. Add sausage and cook until browned on all sides, about 8 minutes. Transfer to a plate. Add carrots and shallots to skillet and cook until beginning to soften, about 4 minutes; season with salt and pepper. Add garlic and cook until fragrant, about 1 minute. Add black beans and broth and bring mixture to a boil. Add sausage, reduce heat to a rapid simmer, and cook until carrots are tender, about 12 minutes. Remove from heat and stir in parsley. Serve with more parsley and a dollop of yogurt.

1 lb smoked sausage, cut into bite size pieces
1 small onion, chopped
3 green onions, chopped
1 -2 clove garlic, minced
1 teaspoon vegetable oil
1/2 teaspoon creole seasoning (I use Tony's Chachere's Original Creole seasoning)
1 (10 ounce) can rotel diced tomatoes with mild green chilies, undrained
1 (15 ounce) can black beans, drained and rinsed
1 (14 ounce) can chicken broth
1 cup long grain rice, not instant
water

Steps:

  • In a large family skillet with lid, heat oil on medium heat.
  • Add onion, green onion and garlic; sauté until soft.
  • Add sausage and Creole seasoning.
  • Once sausage is slightly brown, add Rotel and black beans.
  • Stir until just combined.
  • Pour chicken broth into measuring cup and add water to measure 2 cups.
  • Add 1-cup rice and broth, water mixture to skillet.
  • Stir until combined.
  • Bring to a boil, cover and reduce heat to a simmer.
  • Cook until rice is cooked through and mixture is thickened slightly.

1 1/4 cups dried black beans, soaked overnight
1 tablespoon sunflower oil
1 large red onion, peeled and chopped
2 -4 garlic cloves, peeled and minced
2 celery ribs, trimmed and chopped
1 teaspoon minced dried chili
1 teaspoon ground cumin or 1 teaspoon dried mustard
1 yellow bell peppers or 1 red pepper, seeded and chopped
8 spicy pork sausage links or 8 beef sausages
14 1/2 ounces chopped tomatoes
1 tablespoon maple syrup
1 1/4 cups beef broth or 1 1/4 cups chicken broth
2 fresh bay leaves
salt & freshly ground black pepper
1 tablespoon chopped fresh thyme

Steps:

  • Soak the black beans overnight in a generous amount of water.
  • Preheat the crock pot on high while prepping.
  • Drain beans, rinse, and place in a large pan, cover with cold water, and bring to a boil, boil for 10 minutes, then drain and put them in crock pot.
  • Heat oil in a large skillet and saute the onion, garlic, celery with the chiles, cumin, and mustard powder for 3 minutes Add the bell pepper, stir, and put contents of skillet in the crock pot. Stir.
  • Add sausages to skillet, and cook until browned, (but don't overcook) then empty into crock pot.
  • Blend tomatoes, maple syrup, and broth. Cover and cook on high for 6 to 8 hours.
  • Season with salt and pepper, to taste, garnish with the chopped thyme.

2 tablespoons vegetable oil
8 ounces chorizo sausage, halved and sliced ¼ inch thick
1 onion, minced
2 garlic cloves, minced
2 teaspoons minced chipotle chiles in adobo sauce

1 (15-ounce) can black beans, rinsed
1 (14.5-ounce) can diced tomatoes
2 cups low-sodium chicken broth
½ cup shredded Monterey Jack cheese
¼ cup minced fresh cilantro

Steps:

  • Before cooking, slice the chorizo and mince the onion. While the vermicelli toasts, mince the garlic and chipotle. While the vermicelli simmers, mince the cilantro. Cook vermicelli with 1 tablespoon of oil in 12-inch skillet over medium-high heat, stirring frequently, until toasted and golden, about 4 minutes. Transfer to paper towel-lined plate and set aside. Add remaining tablespoon oil to skillet and return to medium heat until shimmering. Add chorizo, onion, garlic, chipotle, and ½ teaspoon salt and cook until onion is softened, 3 to 5 minutes. Stir in beans, tomatoes, broth, and toasted vermicelli.
