19 ounces black beans, drained and rinsed
14 ounces corn kernels, rinsed and drained
1 cup grape tomatoes, quartered
1 cup red bell pepper, diced
1 mango, diced
1/2 cup green onion, chopped
2 tablespoons cilantro, chopped
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon cumin
1/8 teaspoon chili powder (or chipotle chili powder)
1 avocado, diced

Steps:

  • Combine all ingredients, except avocado, in a large bowl and mix well. Chill.
  • Just before serving, peel and chop avocado. Combine and mix well.

1 mango, cut into 1/4-inch dice

1 to 2 scallions, green parts only, thinly sliced
2 tablespoons extra virgin olive oil
2 tablespoons lime juice
Minced fresh cilantro to taste, optional

1 (15 ounce) can black beans, rinsed well and drained
1 avocado, peeled and diced into 1 inch pieces
1 mango, peeled and diced into 1 inch pieces
4 green onions onions, chopped
1 red bell pepper, chopped
1/2 cup frozen corn
1/4 cup chopped parsley
2 tablespoons fresh-squeezed lemon juice
1 tablespoon white balsamic vinegar
1/4 teaspoon harissa
salt, to taste to taste
2 tablespoons good-quality olive oil

Steps:

  • Drain the black beans into a colander placed in the sink, rinse beans with cold water until no more foam appears, then let beans drain while preparing other ingredients.
  • In a small dish, stir together the lemon juice, white balsamic vinegar, Harissa, salt and pepper. Whisk in the olive oil, one tablespoon at a time.
  • In large bowl combine cubed avocado, mango, corn,peppers and onions.
  • Add drained black beans and stir very gently to combine. (Don't stir too much; you don't want the avocado

2 ripe but firm avocados, halved, peeled and cubed
3 tblsp lime juice, divided
2 ripe but firm mangoes, peeled and cubed
1 jalapeno, stemmed, seeded, and finely chopped
1 tsp lime zest
2 tblsp chopped cilantro, plus more for garnish
1/2 tsp salt
1/4 tsp fresh ground black pepper
1/4 tsp sugar
3 tblsp EVOO
1 (15oz) can black beans, rinsed and drained

Steps:

  • Gently toss avocado with 1tblsp of lime juice in a medium bowl. Add mango and jalapeno, gently tossing to combine. Set aside. Whisk together remaining 2 tblsp lime juice, zest, cilantro, salt, pepper, and sugar in a large bowl. Whisk in oil until thoroughly combined to make a thick dressing. Add avocado mixture and black beans and toss gently. Spoon salad onto plates, garnish with cilantro and serve immediately.
