BLACK BEAN AND CORN ENCHILADA CASSEROLE (NO MEAT)

Black Bean and Corn Enchilada Casserole (No Meat) image

We do a meatless meal for dinner once a week. I love Mexican food, so I created this recipe. This is really easy to change up by using flour tortillas, different kinds of Rotel, using more or different cheeses, or green enchilada sauce (verde). I measure the cheese since we are trying to be a bit healthier, but feel free to add more if you like. I normally use a 7 X 11 glass baking dish, so the measurements are for a full pan at that size. If you have leftover filling, you can eat it like a dip with tortilla chips. Sometimes I double the filling and freeze half of it for later. When I know I have a busy day, I will thaw the filling and just assemble the bake quickly for an easy meal. If you must have meat, I think chicken would be a tasty add. Hope you like this recipe!

Time 1h10m

Yield 6 , 6 serving(s)

Number Of Ingredients 17

1 tablespoon extra virgin olive oil
1 onion, diced
1 bell pepper, diced
2 garlic cloves, minced
2 teaspoons cumin
1/2 teaspoon Mexican chili powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 (15 ounce) cans reduced sodium black beans, drained and rinsed
1 1/2 cups frozen corn kernels
1 (10 ounce) can Rotel tomatoes & chilies
1 (10 ounce) can Rotel tomatoes & chilies, HOT
nonstick cooking spray
1 (28 ounce) can red enchilada sauce
12 corn tortillas
1 1/2 cups reduced-fat Mexican cheese blend
1 1/2 cups reduced-fat colby-monterey jack cheese

Steps:

  • 1. Preheat the oven to 350 degrees.
  • 2. Put the EVOO in a sauté pan. Add the onion and bell pepper and sauté for about 7 minutes. Add the garlic and sauté another 2 minutes.
  • 3. Add the spices, and sauté with the veggies for 1 minute before adding the black beans, corn, and the 2 cans of Rotel. Do not drain the Rotel, since you need the liquid.
  • 4. Cook the filling together for about 15 minutes. Taste the filling for seasoning, and adjust if you like.
  • 5. ASSEMBLY: spray your baking dish with non stick spray. Spoon a thin layer of the enchilada sauce to coat the bottom of the dish. I use El Pato red sauce, but use your favorite kind.
  • 6. Add one layer of corn tortillas (use 4). Cut them to fit if needed.
  • 7. Add another thin layer of enchilada sauce to the tortillas. Then add about half of the bean filling.
  • 8. Sprinkle one cup of cheese on top of the filling. Top with another layer of tortillas (4 tortillas).
  • 9. Top with enchilada sauce, another layer of beans, and another cup of cheese.
  • 10. Top with final 4 tortillas. Pour over the remaining sauce over the bake.
  • 11. Spray a piece of foil so it won't stick to the pan, and cover the dish. Bake for 30 minutes.
  • 12. Remove from the oven and take off the foil. Sprinkle on the remaining cheese and bake for another 15 minutes.
  • 13. Let it sit out of the oven for about 5 minutes before serving.
  • Toppings: sour cream, guacamole, shredded lettuce, or Pico de Gallo (or be naughty and top with all).

Continue cooking, uncovered, for an additional 5 to 10 minutes, or until cheese melts. Let stand 10 minutes before serving. NOTE: I doubled the quantity on this recipe. I also cheated, I bought a roasted chicken from Lunardi's, shredded it. Then I diced a whole onion, sauted it with coriander and cumin, added the cooked chicken. Then I transferred it to a bowl. I doubled everything else but I also added white corn to the mix. I used Victoria's can enchilada sauce 30 oz. and 2 S&W can brand for the black beans. Shredded nonfat for the mexican cheese at Lunardi's.

Yield 6-8 serving(s)

Number Of Ingredients 16

1/2 cup onion, chopped
2 garlic cloves, finely chopped
2 cups boneless skinless chicken breasts, cut into 1 pieces
2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup fresh cilantro, chopped
15 ounces black beans, rinsed and drained
2 cups brown rice, cooked
2 (10 ounce) cans red enchilada sauce, medium heat
8 ounces low-fat cream cheese, softened
4 ounces low-fat sour cream
4 1/2 ounces diced green chili peppers, drained
16 (6 inch) corn tortillas
2 cups shredded low-fat monterey jack cheese

  • Heat a large skillet over medium-high heat. Sauté onion and chicken for 5 minutes. Add the garlic, cumin, coriander, salt and pepper. Continue to sauté until chicken is thoroughly cooked through, about 10 more minutes. Transfer to a large bowl. Add the cilantro, then gently fold in the rice and black beans.
  • In a sauce pan over low-medium heat, stir together 1-10 oz. can of enchilada sauce, the cream cheese, sour cream and chili peppers. Remove from heat when fully incorporated. Add sauce to chicken mixture.

Cover casserole with 4 tortillas, the second 10 oz. can of enchilada sauce and then sprinkle the remaining ½ cup cheese over the top.

  • Let rest for 10 minutes before serving. Enjoy!

BLACK BEAN AND SPINACH ENCHILADA CASSEROLE

BLACK BEAN AND SPINACH ENCHILADA CASSEROLE image

Categories     Bean

Number Of Ingredients 17

3 cups low sodium vegetable broth
¼ cup tomato paste
¼ cup all purpose flour (I used whole wheat flour)
2 Tbsp. cooking oil (I used coconut)
2 tsp. cumin
¼ tsp. garlic powder
¼ tsp. onion powder
¼ tsp. chili powder
Salt/pepper
15 oz. can black beans, rinsed and drained
1 ½ cups corn (I used frozen, thawed)
6 oz. fresh baby spinach
6 green onions, thinly sliced
1/3 cup cilantro, chopped
2 tsp. cumin
3 cups shredded 3 cheese blend (or pepper jack, etc.)
8 whole wheat or flour tortillas (I only needed 6, due to my change at the end)

Steps:

  • To make the sauce, heat oil over medium heat in a saucepan. Add tomato paste, flour, cumin, garlic powder, onion powder, and chili powder. Cook 1 minute, whisking. Whisk in broth, bring to a boil. Reduce to simmer, and cook until slightly thickened, about 8 minutes. Salt/pepper to taste, and set aside. Make sure to taste the sauce after seasoning. I did add a little more salt. Saute the spinach in oil over medium heat for 1-2 minutes until slightly wilted (once cooked, I chopped my spinach up, so there wouldn’t be any large pieces in the mix). In a large bowl, combine beans, 2 cups cheese, spinach, corn, green onions, cumin, and cilantro. Preheat oven to 375. Lightly coat a 9x13 inch baking dish with oil or cooking spray, and pour a small amount of the sauce to coat the bottom. So, here is where I decided to diverge from the original recipe. It says to fill the tortillas and roll them up, but I have never been great at rolling tortillas without everything spilling out. So, I decided to layer it like a lasagne. I laid down two tortillas and covered them with half the vegetable mixture. Then I laid two more tortillas down and top with the remaining vegetable mixture. I then added two more tortillas on the top and poured the rest of the enchilada sauce over them. Finally, I topped it with the remaining cheese.

SLOW COOKER BLACK BEAN AND CORN ENCHILADA CASSEROLE

Slow Cooker Black Bean and Corn Enchilada Casserole image

My aunt made the best enchiladas, ever. They were super simple in that the filling only had two main ingredients, cheese and green olives, but they were always demanded for potlucks and other family gatherings. I adapted her version to a slow cooker and added black beans for a little protein and corn to add a little sweetness. This layered casserole isn't soupy so it's easier to serve, but you can add additional sauce to your liking.

Provided by @MakeItYours

Number Of Ingredients 6

1 can (19 ounces or larger) enchilada sauce, choose spiciness level to preference

10 ounces grated cheddar or Mexican cheese blend, or to liking
1 cup green olives, chopped fine

  • Add 3/4 cup of sauce to slow cooker insert and spread evenly over bottom. Add remaining sauce to a bowl big enough to fit tostada shells. Dip shells completely in sauce one at a time and place in slow cooker, covering bottom. You'll need about three shells per layer. You can avoid overlapping by breaking pieces to fill in gaps.

Z_MAKE-AHEAD BLACK BEAN & SPINACH ENCHILADA CASSEROLE RECIPE - (4.7/5)

Z_Make-Ahead Black Bean & Spinach Enchilada Casserole Recipe - (4.7/5) image

Provided by á-6505

Number Of Ingredients 8

1 tablespoon cooking oil (I like to use avocado oil)
1 small clamshell container baby spinach, about 5 ounces
12 small corn tortillas
16 ounce jar tomatillo salsa
14 ounce can black beans, drained and rinsed
1 1/2 teaspoons Mexican chili powder
4 ounce package goat cheese
1 1/2 cups shredded old cheddar cheese

Steps:

  • Heat the cooking oil in a large skillet set over medium heat. Add the spinach and cook until it is wilted, then set it aside. Spread one-third of the salsa into a 9 x 13-inch casserole dish, and then lay down 6 corn tortillas. Top with another third of the salsa, spreading it evenly over the tortillas. Layer on the cooked spinach, followed by the black beans, and then sprinkle the chili powder evenly over top. Crumble the goat cheese on top of the beans, then top with the remaining tortillas, the last third of the salsa and the shredded cheese. If you are making the casserole in advance, stop at this point, cover tightly with foil and pop it into the fridge. When you are ready to bake, heat the oven to 400˚F and bake the casserole (covered with foil) for about 20 minutes. Remove the foil and bake for another 15 minutes or until the casserole is hot throughout and the cheese is bubbly and browning. If you like a very browned and bubbly top, you might need to turn the oven to broil for the last few minutes of cooking.
