This Black Bean Corn Avocado Salad is a crowd pleaser, colorful and full of nutrition. This salad is great served as an entree, side or even a delicious salsa.

19 ounce black beans (1 can, drained and rinsed)
10 ounce corn kernels (1 can, drained)
2 cups tomatoes (chopped)
1 avocado (chopped)
1 jalapeno (minced)
¼ cup cilantro (chopped)
4 green onions (chopped)
zest from one lime
4 tablespoon lime juice
¼ teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)

Steps:

  • To a large bowl add the black beans, corn kernels, chopped tomatoes, avocado, jalapeno pepper, cilantro and green onions.
  • Zest one lime and add the zest to the bowl, then squeeze the lime juice from 2 limes, should be about 4 tbsp or so, then season with salt and pepper. Toss everything well together.
  • Serve with tortilla chips.

1 avocado - peeled, pitted, and mashed
½ (15 ounce) can black beans, drained and rinsed
1 tablespoon lime juice
1 clove garlic, minced, or more to taste
⅓ cup shredded Cheddar cheese
1 pinch sea salt to taste

Steps:

  • Mix avocado, black beans, lime juice, and garlic together in a microwave-safe bowl. Sprinkle with Cheddar cheese.
  • Microwave dip on high until cheese is melted, about 1 minute. Season with sea salt if desired.

2 medium ripe avocados, peeled and diced
2 tablespoons lime juice
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 medium sweet red pepper, chopped
6 green onions, chopped
2 tablespoons minced fresh cilantro
3 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
Tortilla chips

Steps:

  • In a large bowl, combine avocados and lime juice; let stand for 10 minutes. In another large bowl, combine the corn, beans, red pepper, onions, cilantro and garlic. , In a small bowl, whisk the oil, vinegar, salt and pepper. Drizzle over corn mixture; toss to coat. Gently fold in the avocado mixture. Cover and refrigerate for at least 2 hours or until chilled. Serve with tortilla chips.

This corn black bean & avocado salsa is loaded with avocado, black beans, corn, and cilantro. It's perfect as a chip dip or side salad.

1 and 1/2 cups fresh, canned, or frozen (and thawed) corn kernels
1 and 1/2 cups canned (cooked) black beans, drained and rinsed
1/2 small red onion, diced
1 cup diced tomato
1 avocado, chopped
1/4 cup chopped cilantro
2 Tablespoons olive oil
juice of 1 lime
1 clove garlic, minced
1 teaspoon salt
pinch ground pepper
pinch cayenne pepper
optional: 1 small jalapeño pepper, seeded and chopped

Steps:

  • Add everything to a large bowl. Stir. Taste and add more salt/pepper/cayenne as needed.
  • Cover and let sit in the refrigerator for 1 hour or up to 1 day before enjoying. I find its flavor is best after an hour or so. (The lime juice and red onion keeps the avocado from turning brown.)

2 cups frozen corn kernels
1 cup cilantro, roughly chopped
½ red onion, chopped
1 ½ limes, juiced
2 tablespoons extra-virgin olive oil

1 ½ teaspoons ground cumin
salt and ground black pepper to taste
1 avocado, diced

1 (15 ounce) can black beans
1 tomatoes, chopped
1/2 red onion, diced
1 avocado, cubed
1/2 cup cilantro, chopped
1 jalapeno, seeded and minced to taste

1 teaspoon cumin

1 ear corn, shucked
2 tablespoons extra-virgin olive oil, plus extra for rubbing the corn
1 cup quartered cherry tomatoes
2 ripe but firm avocadoes, pitted and diced
One 15.5-ounce can black beans, drained
1/2 medium red onion, diced
1 teaspoon agave syrup
1/2 teaspoon ground cumin
1/4 teaspoon minced garlic
Juice of 1 to 2 limes
1 serrano chile, seeded and finely diced
Pinch cayenne pepper
Kosher salt and freshly ground black pepper
3 tablespoons chopped fresh cilantro
3 scallions, finely chopped

Steps:

  • Preheat the grill over medium-high heat.
  • Rub the shucked corn with olive oil and place onto the grill and cook until nicely charred on all sides, about 5 minutes per side. Allow to cool slightly prior to removing the kernels and transferring to a large bowl.
  • Add the cherry tomatoes, avocados, black beans and onions to the grilled corn kernels.
  • Mix together the 2 tablespoons olive oil, agave, cumin, garlic, lime juice, serrano, cayenne, and salt and black pepper to taste in a separate bowl. Whisk together, as you would to make a vinaigrette, and pour over the corn mixture. Mix together gently so everything is coated well, and then fold in the cilantro and scallions.

2 avocados, chopped
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can corn
1 (10 ounce) can Rotel Tomatoes, drained
1 cup chopped red bell peppers or 1 cup green bell pepper
2 tablespoons jalapeno peppers, finely chopped
1/4 cup sweet onion, finely chopped (we don't like raw onions) (optional)
1/4 cup red wine vinegar
1/2 tablespoon balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons Dijon mustard
1 1/2 tablespoons sugar
1/4 teaspoon oregano
1/4 cup olive oil
1/4 cup vegetable oil

Steps:

  • Mix dressing ingredients well. In a large bowl combine the main ingredients.
  • Add dressing and gently mix well. Best when refrigerated (covered) for at least 1 hour but usually we can't wait. Serve with tortilla chips.
