CHOCOLATE COVERED PRETZEL FUDGE
Chocolate Covered Pretzel Fudge is creamy chocolate fudge filled with salty pretzels and gooey marshmallows.

Steps:
- Combine the chocolate chips, the milk, and the butter in a medium size glass bowl and heat in the microwave for 90 seconds. Stir to combine and heat another 15 seconds. Stir and heat an additional 15 seconds, only if needed. There will still be a few pieces of unmelted chocolate in the bowl.
- Stir until mostly smooth with just a few flecks of unmelted chocolate. Add the extract, pretzels, and marshmallows to the bowl. Stir to combine. Scoop into a parchment lined loaf pan. Spread with a spatula. Chill until ready to serve.
- Slice into 1-inch squares and store in an airtight container in the refrigerator. Enjoy!

EASY SALTED PRETZEL CHOCOLATE FUDGE
Steps:
- Line a 20cmx20cm dish with parchment/baking paper. (Any size from around 20-25cm would work, your fudge will just be slightly thinner.)
- Melt together the milk chocolate, condensed milk and butter over low heat.
- Sift together the icing sugar and cocoa powder.
- When the chocolate mixture is smooth, beat in the icing sugar mix until you have a smooth, thick dough-like mixture.
- Transfer to the prepared dish and smooth the top. Press the pretzels into the fudge and sprinkle with salt (if using).
- Place in the fridge for at least 2 hours to set before slicing into squares.
- Place in a airtight container and keep in the fridge for up to a week.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine pretzel twists and 1/4 cup brown sugar in a food processor; process until finely chopped. Stir in 1/2 cup melted butter. Press mixture over the bottom and sides of an ungreased 9-inch pie plate.
- Combine 3/4 cup butter and chocolate chips in a microwave-safe bowl. Heat in the microwave, stirring once, until melted, 1 to 2 minutes. Stir in 3/4 cup brown sugar and white sugar until dissolved. Beat in eggs. Stir in heavy cream, flour, and vanilla extract until filling is smooth. Pour over the crust in the pie plate.

- Coat an 8-inch square baking pan with cooking spray and line with parchment paper, leaving a 2-inch overhang on all sides.
- Place butter, chocolate chips, condensed milk, vanilla, and salt in a medium heatproof bowl set over (not in) a pot of barely simmering water. Stir occasionally until chocolate just melts and mixture is combined and warm but not hot, 8 to 10 minutes. Remove from heat and stir in 2 cups pretzels. Transfer mixture to pan and smooth top; press 1/2 cup pretzels on top. Refrigerate until set, 2 hours (or up to overnight, wrapped). Using parchment, lift fudge from pan and cut into 36 squares.

BLACK AND WHITE FUDGE
Recipe from Odense. Marzipan is the surprise layer that separates the dark chocolate fudge from white chocolate fudge with the rich flavor of almonds. Extremely rich and what an impressive presentation! The three hour cook time = the time to chill.

Steps:
- Butter an 8-inch square pan.
- Lightly dust work surface with powdered sugar. Fold marzipan in half and press into a flat square. Roll into a 9" x 9" square. Using the bottom of the pan as a template, cut out square of marzipan to match pan dimensions. (Don't worry if it's not perfect.) Set aside.
- In a double boiler (or in a bowl over a pan of barely simmering water) combine white chocolate chips, 1/2 cup condensed milk and 3 tablespoons butter.
- Stir until chips are melted and mixture is well blended. Pour into pan. Immediately top with the marzipan square, lightly pressing into chocolate.
- In the same double boiler (or in a bowl over a pan of barely simmering water) combine semisweet chocolate chips, remaining can of condensed milk and 3 tablespoons butter.
- Stir until chips are melted and mixture is well blended. Spread over marzipan layer. Cover and refrigerate 3 hours. (As a side note, I think it's great to make yourself a cup of hot tea with the boiling water from the double boiler, instead of just dumping it.).
- Just before serving, cut into 1 inch squares.
