½ cup butter
¼ cup caster sugar
1 egg
2 tablespoons oil
1 teaspoon vanilla extract
2.5 cups plain flour
2 teaspoons baking powder
1 ¼ cups blackcurrant jam
icing sugar, for dusting

Steps:

  • Preheat the oven to 180˚C (350˚F).
  • In a bowl, whisk together the butter and sugar until combined.
  • Whisk in the egg, oil, and vanilla extract.
  • Mix in the baking powder and 250 grams (2 cups) of the flour with a spoon until combined.
  • Bring the mixture together using your hands to make a dough.
  • Spray a 23 centimeter (9 inch) square baking tray with cooking oil. Spread out half of the dough on the tray.
  • Prick the dough with a fork to prevent bubbles from forming while baking.
  • Spread the blackcurrant jam on top.
  • With the remaining dough, mix in the remaining flour and rub with your fingers to make a crumb like texture.
  • Sprinkle the crumbs on top of the jam.
  • Bake for 20 minutes, until golden brown on top.
  • Leave to cool for around 20 minutes, the jam will be hot!
  • Sieve icing sugar on top.
  • Cut into squares.
  • Enjoy!

½ cup Great Value® Finely Shredded Sharp Cheddar Cheese
9 oz TBJ® Classic Uncured Bacon Jam, for serving
12 large eggs, soft-boiled

Steps:

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Using your hands or a pastry cutter, work the butter into the dry ingredients, leaving large chunks.
  • Add the buttermilk and fold with a rubber spatula until fully incorporated and the dough comes together in a ball.

4 teaspoons active dry yeast
5 tablespoons warm water (110° to 115°)
5 cups all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1 cup shortening
1-1/2 cups warm buttermilk (110° to 115°)
Raspberry or plum jelly or jam

Steps:

  • In a small bowl, dissolve yeast in warm water; set aside. In a large bowl, combine the flour, sugar, baking powder, salt and baking soda; cut in shortening until mixture resembles coarse crumbs. Add yeast mixture to buttermilk; stir into dry ingredients until combined., Turn dough onto a lightly floured surface. Knead 5-6 times. Roll or pat to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter. Cut a 1-in. slit at an angle halfway through center of each biscuit. Separate dough at cut; fill with 1/4 to 1/2 teaspoon of jelly or jam. Place on ungreased baking sheets (do not let rise). Bake at 400° for 16-20 minutes or until golden brown.

1 cup peanut butter, creamy or chunky
1 cup quick-cook oats, plus more for coating
½ cup powdered sugar
1 strawberry jam, to taste, or whatever your favorite jam is

Steps:

  • Using a small spoon or a teaspoon measuring spoon, scoop out balls of jam and lay them on a sheet pan or plate lined with parchment paper. Pop the jam balls in the freezer for around a half hour, or until they've firmed up a bit.
  • In a mixing bowl, combine the peanut butter, one cup of oats, and powdered sugar, and mix them all together until they're well combined.
  • Grab a palmful of the peanut butter mixture (around the size of a golf ball) and then, using your hand and fingers, shape it into a mini pancake.
  • Grab one of the firmed-up jam balls and twist it around until it's even more of a sphere, then lay it in the middle of your mini peanut butter pancake.
  • Using your fingers, lift up and pinch the edges of the peanut butter so that they're coming up around the jam ball. Continue this until the peanut butter mixture totally encloses the jam and you've created a ball. Roll each ball in your hands so that it's nice a smooth.
  • Once you've created all of the balls, roll each one in oats and then pop in the refrigerator or freezer to chill. (If you're freezing, make sure to bring the balls back to room temperature before serving).

Number Of Ingredients 9

175g cold unsalted butter, cubed
250g plain flour, plus extra for dusting
100g golden icing sugar
1 tsp vanilla extract
1 egg yolk
50g unsalted butter, softened
160g icing sugar
120g seedless raspberry or strawberry jam
2 star cutter, around 6cm and 3cm

Steps:

  • Blitz the butter, flour and a pinch of salt in a food processor until the mixture resembles fine breadcrumbs. Add the sugar and blitz again. Add the vanilla and egg yolk and blend until balls of dough have formed. Tip the dough onto a work surface and knead briefly to make a smooth ball. Cut into two equal pieces, pat them into discs, then wrap and chill for at least 30 mins. Line two baking sheets with baking parchment.
  • Remove the dough from the fridge 15 mins before you roll it out. Lightly flour your work surface and rolling pin. Unwrap 1 piece of dough and roll it out to the thickness of a 50p coin. Use a 6cm star cutter to stamp out stars (you should get about 15) and transfer to a baking sheet.
  • Unwrap and roll out the other piece of dough. Stamp out 15 more stars and transfer to the second baking sheet. Stamp holes from the middle of 15 of the biscuits using the smaller cutter. Cover and chill for 15 mins. Heat the oven to 180C/160C fan/gas 4. Bake for 10-15 mins (the stars with a hole need less time), cool for 5 mins, then transfer to a wire rack to cool completely.
  • Meanwhile, make the filling. Whisk the butter, sugar and 50g of the jam with an electric whisk. Transfer to a piping bag with a small round nozzle, or snip off the end to make a ½cm opening. Put the remaining jam in another piping bag and snip off the end to make a slightly smaller hole.
  • Pipe blobs of the filling around the edge of each whole biscuit, leaving a space in the centre. Fill the space with jam, then sandwich a biscuit with a hole cut out on top of each one. Will keep in an airtight container for up to three days.

200g self-raising flour
100g caster sugar
100g butter
1 egg, lightly beaten
4 tbsp strawberry jam

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Rub the flour, sugar and butter together until the mixture resembles breadcrumbs. Alternatively, you can do this in the food processor. Add enough egg to bring the mixture together to form a stiff dough.
  • Flour your hands and shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices and place on a large baking sheet. Space them out as the mixture will spread when baking.
  • Make a small indentation in the middle of each slice with the end of a wooden spoon, and drop a tsp of jam in the centre. Bake for 10-15 mins until slightly risen and just golden. Cool on a wire rack.
