Easy Rustic Shepherd's Pie with The Cheesiest Mashed Potatoes image

My take on the classic - shepherd's pie! Of course, like with any of my other recipes this shepherd's pie is loaded with herbs and spices to give it the best flavor. Finally, we'll top it off with the cheesiest Irish cheddar mashed potatoes your shepherd's pie has ever seen!

Number Of Ingredients 15

1 tablespoon olive oil
1 lb ground lamb (or beef)
3 cups mirepoix ( equal parts chopped onion, carrots, celery)
6 cloves garlic, minced
2 tablespoons EACH: tomato paste and cornstarch
1/4 teaspoon EACH: ground cinnamon and ground nutmeg
1 tablespoon Worcestershire sauce
fresh herbs (a few sprigs rosemary, thyme, and a bay leaf)
1 1 /4 cups low sodium beef stock (or chicken)
1 1/4 cup frozen peas, thawed + drained
2 lbs. yukon gold potatoes, peeled
3 tablespoons softened butter
4 ounces EACH: cream cheese (softened) and shredded Irish cheddar
1 egg yolk
3/4 cup room-temp half and half (or milk)

Steps:

  • potatoes: boil the potatoes in a large pot of salted water until fork tender. Sometimes I'll throw in a couple cloves of garlic in with the potatoes too. Drain, mash and mix in the remaining mashed potatoes ingredients and season with salt and pepper to taste.
  • cook the meat and veggies: heat the olive oil in a large oven-safe pot over medium-high heat. Add the ground lamb and crumble the meat using a wooden spoon. Cook for 4-5 minutes or until the meat browns, drain any excess grease leaving just 1 tablespoon. Add the mirepoix and season the veggies with a small pinch of salt and allow the veggies to cook down until translucent, about 7-9 minutes. Add the garlic and let cook another 30 seconds or until fragrant.
  • beef gravy: Position a rack in the center of the oven and preheat the oven to 425ºF. Sprinkle the ground meat mixture with the cinnamon, nutmeg, and cornstarch, stir to combine and let cook for 15 seconds before adding the Worcestershire sauce, tomato paste, herbs, bay leaf, and beef stock. Allow the gravy to come to a simmer before reducing the heat to low and letting it simmer for 15 minutes. Remove the herbs, stir in the peas, taste and adjust with salt and pepper as desired.
  • bake and serve: Drop large dollops of the prepared mashed potatoes on top of the beef gravy then smooth out gently. Bake for 15 minutes then, finish it under the broiler if you want it to be golden brown on top. Let cool for several minutes before serving.

1-1/2 to 2 lb ground beef, 90 - 96% lean
1 large onion, chopped
1 pkg Lipton's soup and dip mix (1 packet)
2 tsp beef base concentrated beef stock (or two beef buillions)
2 c water
3 Tbsp corn starch
1 1/2 c peas or mixed vegetables (either)
5 medium potatoes (cut up and simmered until soft)
1/2 c milk
4 Tbsp butter
2 - 3 c cheddar cheese
4 Tbsp shredded Parmasan cheese (optional)
1/2 tsp black pepper
salt and pepper, to taste

Steps:

  • 1. In a large skillet, fry the hamburger until fully cooked. Drain the grease from the hamburger, by spooning out the hamburger onto a plate by using a slotted spoon, and then dumping and discarding grease from skillet. Keep hamburger on plate until further use. Note: Meanwhile, Fill kettle with about 3-4 quarts of water and add the lid. Place kettle on another burner using high heat and bring to a boil while cooking hamburger mixture. This is preparing to make the mash potatoes.
  • 2. Add onion to skillet and cook until they are translucent If need oil, add some butter (1 tbsp) to skillet if you wish.
  • 3. When the onion is translucent, add the fried hamburger meat to skillet. Stir both onion and hamburger together in the skillet. Add the peas or mixed vegetables stirring them into the hamburger mixture. Set hamburger mixture aside until gravy is made.
  • 4. Beef Gravy Steps: Take the Lipton onion packet and put it inside a small 1-quart pan. Add two cups of water and stir. Put the pan over high heat and heat to boiling. Then add two teaspoons of the beef stock concentrate (or two bouillon cubes), and stir. Then turn down to simmer for ten minutes. After ten minutes of simmering, bring the mixture back to boiling. Gradually add 3 Tbsp of corn starch, whisking rapidly as you sprinkle it into the boiling mixture until it is all dissolved (not clumped). Keep stirring until mixture is thicker, like a gravy consistency. Add the beef gravy to the hamburger mixture. Cook hamburger mixture on low for another five minutes. Add lid to skillet when cooking.
  • 5. Mashed Potatoes Steps: Wash the potatoes and then peel. Cut potatoes into 2 3-inch sections and place them in the boiling water of kettle (water must be boiling). Add lid onto kettle and turn down to simmer. Simmer for 30 minutes or until soft. Once potatoes are cooked, drain them using a colander. Discard all the remaining water (carefully).
  • 6. Add the potatoes to your mixer, or using a masher, mash them (whatever way is best... I use a mixer). After they are completely mashed, add butter. Stir and blend into the potatoes. Gradually add the milk, a little bit at a time, until the potatoes are a fluffy consistency. You may need more milk, in case it is too clumpy. Make sure the potatoes are fluffy and not runny (why a little milk at a time is required). Sprinkle with salt and pepper (to your taste).
  • 7. Add the hamburger mixture to a 3 - 4 quart baking dish, spreading it evenly in the dish. Sprinkle 1/2 tsp of pepper (and salt if desired) over the hamburger mixture. Add the mashed potato mixture evenly over top the hamburger mixture. Add the 2-3 cups shredded cheddar cheese evenly over top the mashed potato mixture. (You can also add the shredded Parmesan cheese but is optional.) Bake in oven for 30 minutes on 400 degrees.

1 (10 ounce) can condensed cheddar cheese soup (undiluted and divided)
3 cups hot russet mashed potatoes
1 lb lean ground beef
1 teaspoon dried oregano
1 small onion, chopped
1 -2 tablespoon minced fresh garlic (or to taste)
1 tablespoon Worcestershire sauce
1 (10 ounce) can mushrooms, drained (use whole or sliced)
2 cups shredded cheddar cheese (can use more or less)
1/3 cup parmesan cheese
2 cups frozen mixed vegetables (your choice of veggies)
seasoning salt (to taste) or white salt (to taste)
fresh ground black pepper (to taste)
1/3 cup shredded cheddar cheese

Steps:

  • Set oven to 400 degrees F.
  • Grease a 9 x 9-inch or an 11 x 7-inch square baking dish.
  • For potato topping; combine half a can of cheddar cheese soup with hot mashed potatoes; set aside.
  • In a fry pan brown ground beef with oregano, chopped onion and garlic; drain off fat, then stir in Worcestershire sauce, mushrooms, shredded cheddar cheese and Parmesan cheese.
  • Meanwhile cook mixed veggies according to package directions; drain well then add to beef mixture along with the remaining half of cheese soup.
  • Add in your choice of additions, then season with salt and pepper to taste; mix to combine and simmer uncovered for about 20-30 minutes over medium-low heat stirring occasionally.
  • Spoon meat mixture into greased pan; spread the hot mashed potato mixture evenly over top.
  • Bake for 25-30 minutes or until topping is light golden brown.
  • Sprinkle 1/3 cup shredded cheddar cheese on top then allow to melt.

  • ADDITIONS, use one or all of 3/4 cups good quality beef broth mix/wisked with 2 tablespoons flour (for a thicker ground beef mixture) -- one can cream style corn/ one tablespoon Dijon mustard -- 1/3 cup Heinz chili sauce or ketchup -- 1/2 package of dry onion soup mix -- 2 tbsp Kitchen Bouquet browning sauce OR 1-2 small packages beef bouillon powder.
