3 cups miniature marshmallows
¼ cup creamy peanut butter
3 tablespoons butter
4 cups crispy chow mein noodles
cooking spray
40 candy-coated milk chocolate eggs

Steps:

  • Cook and stir marshmallows, peanut butter, and butter in a saucepan over medium heat until the marshmallows melt completely into the mixture, about 5 minutes.
  • Put chow mein noodles into a large bowl. Pour marshmallow mixture over the chow mein noodles; stir to coat.
  • Spray hands with cooking spray or coat with butter so the noodles will not stick to your hands. Scoop noodle mixture from bowl with an ice cream scoop and form into balls, hollowing the center out to create the nest. Arrange 4 chocolate eggs into each nest.

4 cups chow mein noodles
3 cups miniature marshmallows
3 tablespoons butter
30 small jellybeans

Steps:

  • Line a cookie sheet with foil and grease with spray-on cooking oil.
  • Pour noodles into a large bowl. Melt the butter and marshmallows over medium heat, stirring until smooth. Pour marshmallow mixture over noodles, stirring until well coated.
  • Rub some butter on hands and form noodle mixture into six round balls. Place balls on prepared cookie sheet. With the back of a teaspoon, press the center of each ball to make a hollow indentation.
  • Let nests set until they are firm. Fill each with small jelly beans. (Other small candies of your choice may be substituted, such as M & M's, small gumdrops, chocolate covered raisins, chocolate covered peanuts, etc.)

Part candy, part cookie, these candy nests are easy to make and the crunchy, salty pretzels are delicious with the sweet butterscotch coating. Kids can help by breaking the pretzels, scooping the nests and arranging the eggs in them.

3/4 cup blanched almond slivers
10 ounces vanilla "make your own" almond bark
1 cup butterscotch chips
2 cups pretzel sticks, broken in half
3/4 cup unsweetened coconut chips (often found in the health food aisle)
1 cup candy-coated mini chocolate eggs (about 50)

Steps:

  • Heat a large, dry saute pan over medium heat. Add the almond slivers and toast, shaking the pan every minute, until they are fragrant and begin to darken in areas, 3 to 5 minutes.
  • Line two baking sheets with parchment paper. Melt the almond bark in a microwave-safe bowl according to package instructions. Stir in the butterscotch chips. Microwave another 30 seconds, and then stir until smooth.
  • Stir in the almonds, pretzels and coconut, coating evenly. Drop the mixture, 1 tablespoon at a time, onto the prepared baking sheets. Nestle in 1 or 2 of the mini eggs. If the mixture starts to cool and become too firm to work with, microwave for 30 seconds and stir gently. Let the nests cool at room temperature until solid.

1 package (10 ounces) pretzel sticks
24 yellow chicks Peeps candy
1 package (12 ounces) M&M's eggs or other egg-shaped candy

Steps:

  • In a large metal bowl over simmering water, melt baking chips; stir until smooth. Reserve 1/2 cup melted chips for decorations; keep warm., Add pretzel sticks to remaining chips; stir to coat evenly. Drop mixture into 24 mounds on waxed paper; shape into bird nests using 2 forks., Dip bottoms of Peeps in reserved chips; place in nests. Attach eggs with remaining chips. Let stand until set.

Fun Spring Treats! Kids love them. Use a 6 or 12 cup muffin tin depending on desired size of nests. We made only 6 nest with this recipe so we could overlap the top and give an "edge" for our bird to sit on. You could serve these right away or wrap them in a pretty cellophane bag and give them as a gift.

1/4 cup butter
2 cups mini marshmallows
1 (8 ounce) package candy coated chocolate eggs
6 marshmallow peeps
cooking spray

Steps:

  • Use a 6 or 12 cup muffin tin depending on desired size of nests. We made only 6 nest with this recipe so we could overlap the top and give an "edge" for our bird to sit on.

  • Place nests on a tray and put back in the fridge till completely set.
  • Fill with candy eggs.

These are a childhood favorite. These cookies/candies were always on my Mema's Holiday Cookie List. The mixture of butterscotch chips, chocolate and chow mein noodles is so satisfying. A perfect dessert to introduce kids to the kitchen with.

1 c butterscotch chips
1 c semi sweet chocolate chips
3 c chow mein noodles

Steps:

  • 1. Heat chocolate and butterscotch chips in a double boiler or in the microwave about 4 minutes or until the chips are smooth.
  • 2. Stir in chow mein noodles until they are thoroughly coated.
  • 3. Use a tablespoon to place spoonfuls of the mixture on a waxed paper lined baking dish
  • 4. Allow the candy to cool until the chocolate/butterscotch has hardened
  • 5. These are also known as bird nests. A fun suggestion is to place the mixture on a waxed paper making a small indentation in the center of the candy to serve as a "nest". Place colorful jelly beans or robin's eggs candy into the indentation and voila! Bird's nests!

Create a bird nest of mashed potatoes filled with a tasty meat mixture then sit back and listen to the sounds of delight!...and here's the secret used for this recipe: Simply fill a gallon-sized ZipLoc bag with Simply Pototoes Traditional Mashed Potatoes and cut off a corner of the bag to leave an approximate 1/2" opening! It's my own original one-of-a-kind recipe that's been taste-tested and approved by even the pickiest of eaters in our family!

12 slices bacon, cooked and crumbled into pieces
1 lb ground turkey or 1 lb beef, cooked and crumbled
1/2 cup water
1 (1 1/4 ounce) package taco seasoning mix, with 1 tablespoon reserved for topping
1 cup carrot, shredded
1 cup cheddar cheese, shredded with 1/4 cup reserved for topping
1 cup goat cheese, crumbled with 1/4 cup reserved for topping
1 cup sun-dried tomato packed in oil, drained
2 (24 ounce) packages Simply Potatoes Traditional Mashed Potatoes, made according to package directions

Steps:

  • Prepare mashed potatoes according to package directions. Remove from the stove and let cool slightly while making the meat mixture as follows:.
  • In a large frying pan, cook each slice of bacon on both sides until crispy. Remove from the pan, place on a paper towel and let cool, Remove all but 1 tablespoon of the bacon fat in the pan. Next, brown and crumble the ground turkey or beef in the bacon fat until no longer pink. Drain off the liquid and add the following to the meat: the 1/2 cup water, 1 package taco seasoning mix - minus 1 tablespoon, and 1 cup shredded carrots. Bring to a boil, then turn down the heat to a simmer, cover and let cook approximately 5 minutes or until the carrots are tender. Drain all of the liquid from the pan, then add 1/2 of the crumbled bacon, the drained sundried tomotoes and 3/4 cup each of the cheddar and goat cheese. Mix well. Set on the lowest heat to keep mixture warm and proceed to make the nests.
  • To Make the Bird Nests: On 2 cookie sheets, place 4 six-inch squares of foil on each cookie sheet. Using a paper towel, grease each foil piece lightly with the olive oil drained from the sundried tomotoes. Fill a gallon-sized ZipLoc bag with half of the prepared Simply Potatoes Traditional Mashed Potatoes, close and seal the bag while removing as much air from the bag as possible. Cut off one lower corner of the bag to leave an opening of approximately 1/2" and squeeze the mashed potatoes onto each piece of foil in a spiral - starting in the center - to create a base of potatoes about 4" in diameter. Add one more outer circle of potatoes to create an outer wall for each nest. Repeat with the second batch of mashed potatoes to create a total of 8 nests. Lightly sprinkle the remaining 1 tablespoon of taco mix on top of each potato nest with your fingers. Spoon the meat mixture into the center of each nest and top each nest with some of the reserved cheddar cheese, goat cheese and remaining crumbled bacon. Remove each nest from the baking sheet using a spatula placed under each piece of foil. Serve with a green salad and enjoy!

If you're in a pinch and don't have time to tint the coconut, try edible grass they sell in the stores at Eater. It'll work like a charm.

BRING TO BOIL AND REMOVE FROM HEAT:
1 c light Karo syrup
1 c sugar
ADD:
1 1/2 c peanut butter
1 c chocolate chips
4 c Rice Krispies
coconut, jelly beans, marshmallow chicks
green food coloring

Steps:

  • 1. Bring to boil: 1 cup light Karo syrup and 1 cup sugar.
  • 2. Remove from heat and add 1 1/2 cup of peanut butter, 1 cup chocolate chips and 4 cups of Rice Krispies, mixing well.
  • 3. Shape about 1/2 cup of the mixture into a nest by making a ball and then pressing in the center to make depression for nest. Set on waxed paper.
  • 4. Fill with coconut that has been tinted with green food coloring and a little water and air dried first. Note: Make sure the coconut has been dried enough and won't rub off on hands when touched.
  • 5. Fill with jelly beans, chocolate eggs or other egg shaped candies and top off with a marshmallow Peep if desired. Have A Blessed and Happy Easter!!! :)

To celebrate the arrival of spring, our Test Kitchen shaped chocolate-coated chow mein noodles into nests, then filled them with jelly bean "eggs". You may want to make a double batch because they're bound to fly off your table!

1 tablespoon shortening
1 can (5 ounces) chow mein noodles
2/3 cup sweetened shredded coconut
45 to 60 jelly beans

Steps:

  • In a saucepan, melt the chocolate chips and shortening over low heat; stir until smooth. Remove from the heat. Stir in the chow mein noodles and coconut until well coated. Divide into 15 mounds on a waxed paper-lined baking sheet. Shape into nests; press an indentation on the center. Place three or four jelly beans in each nest. Cool. Store in an airtight container.

1 large can(s) chow mein noodles
1 pkg candy eggs (i used the "robin's eggs")

Steps:

  • 1. Put the butterscotch chips in a glass bowl and melt in the microwave. The amount is completely optional, I used the entire bag.
  • 2. Once the chips are melted, stir in the chow mein noodles.
  • 3. On a piece of parchment paper, take a small scoop of the chow mein noodle mixture and form a small nest with your hands. Place the eggs on top.
  • 4. Do not refrigerate, just leave uncovered on parchment paper to dry.

  • Place a sheet of waxed paper or foil on a large cookie sheet. In a large bowl, combine the noodles and the cereal and set aside.
  • Melt white chocolate or vanilla candy-coating in a double boiler over hot water (or in the microwave). Remove from heat and pour over noodles and cereal.
  • To form nests, mound 2 tablespoons of the mixture onto the prepared cookie sheet. With the back of a teaspoon, make an indentation in the center of each mound. Press 3 or 4 candies in the center of each "nest". Allow to set at room temperature until firm.

1 can(s) potato sticks approx. 3 cups
1 bag(s) chocolate chips 12 oz.
1 bag(s) egg shaped candy, like m & m's

Steps:

  • 1. Melt Chocolate Chips in microwave (1-2 minutes) stir while melting. Dump in Potato Sticks and mix well.
  • 2. Spray 12 cup muffin tin with Pam, drop a gob of mixture in each spot. Press mixture around inside of cup and bottom to build nest.
  • 3. Put in fridge 2-3 hours or more to harden. When firm, take a knife around the nests to get them out of the muffin tin.
  • 4. Put on plate and add M&M's, or Reese's candies as "eggs".

PISTACHIO BIRD'S NESTS

This whimsical version of baklava is shaped to resemble a bird's nest. Boston pastry chef Maura Kilpatrick has a genius trick for making the delicate nests by wrapping phyllo around a wooden dowel (available at hardware stores). Bake until golden, fill with pistachios, then drench in lemon syrup for a sweet, crunchy, sticky holiday treat.

1 1/2 cups sugar
1 cup water
Juice and zest of 1 lemon
10 tablespoons unsalted butter, to make 8 tablespoons clarified butter (see Step 2)
8 sheets phyllo, sold in the frozen foods section; defrost according to package before using
1 cup pistachios, toasted and chopped, toast in an oven for 8 minutes at 350 F; cool slightly, then roughly chop

Steps:

  • Lemon syrup: Combine the sugar, water, lemon juice, and zest in a saucepan. Bring to a boil over medium-high heat to dissolve the sugar. Lower the heat to medium and keep at a low boil until thickened, 15 minutes.
  • Clarify butter: In a small saucepan over medium heat, melt butter and bring to a simmer, 5-7 minutes. Once the white foam begins to form on the top, skim it off with a small ladle or spoon and discard. Continue to skim off the milk solids until the butter is clear. Preheat the oven to 350 degrees F.
  • Nests: Before assembling the nests, set up your work area. Lay the phyllo sheets on the work surface and cover with a dry towel or a sheet of parchment (to prevent drying). Place a sheet of parchment paper in front of you to work on, and have a baking sheet nearby. Place one sheet of phyllo on the parchment paper with the shorter side facing you. Lightly brush clarified butter across the top, in the center, and across the bottom. Fold the edge of the phyllo closest to you up to within 1 inch of the top edge. Place the wooden dowel on the bottom folded edge, with the end of the dowel meeting the left edge of the phyllo, and begin to loosely roll the phyllo around the dowel, stopping when you reach the inch of extra dough. Lift the dowel and gently push the phyllo to the left end, scrunching the dough together. Slide it off the dowel, and gently shape it into a circle, with the reserved inch of phyllo serving as the center of the nest. Place nest on the baking sheet. Repeat with the remaining sheets of phyllo. Bake until lightly golden, 15 minutes.
  • Assembly: Remove from the oven and fill the centers of each nest with about 2 tablespoons chopped pistachios. Use a small measuring cup or ladle to soak each nest with 3 tablespoons of lemon syrup. Set aside to cool on the baking sheet. Once cool, use a spatula to remove the nests from the pan. Serve at room temperature with some of the extra syrup from the baking sheet.

PISTACHIO BIRD'S NESTS

Make these pistachio 'bird's nests', made with kataifi pastry (a very finely shredded filo pastry available online) and a lemon sugar syrup for a sweet treat

40g pistachios
400g sugar
2 tbsp lemon juice
300g kataifi pastry
375g butter, melted

Steps:

  • Soak the pistachios in water for 30 mins. Dissolve the sugar in 500ml water in a pan over a medium heat, then bring to a boil and bubble for 15-20 mins or until reduced and lightly syrupy. Stir in the lemon and boil for a minute more.
  • Cover the kataifi with a damp cloth so it doesn't dry out. Take a finely twisted 30cm length of pastry and wrap it in a circular motion around two fingers into a nest shape. Transfer to a baking tray, then repeat with the rest of the pastry.
  • Drain the pistachios and gently press four or five into the middle of each nest. Cover the nests with a layer of baking parchment, then put another baking tray on top and put a 1kg weight on top. Leave at room temperature for 1 hr, then remove the parchment and leave for another hour to dry out.
  • Heat the oven to 220C/200C fan/gas 7. Pour the butter over and around the nests, so that they're sitting in a layer of melted butter. Cook for 20-25 mins until golden brown, turning the tray from time to time to make sure the nests are evenly coloured. Leave to cool for 10 mins, then transfer to a clean baking tray and pour over the syrup. Leave to cool completely in the syrup, then serve.

2 cups Chocolate Chex™ cereal
1 box Betty Crocker™ Fruit Roll-Ups™ Blastin' Berry Hot Colors™ chewy fruit flavored snacks
1 box Betty Crocker™ Fruit Gushers™ Tropical Flavors fruit flavored snacks

Steps:

  • Spray 8 regular-size muffin cups with cooking spray; set aside.
  • In medium microwavable bowl, heat butter uncovered on High 20 to 30 seconds or until melted. Mix in marshmallows; microwave uncovered on High for 30-second intervals until marshmallows are melted and mixture is smooth when stirred. Add cereal; mix until fully combined. With greased hands, add about 1/4 cup cereal mixture to each muffin cup, and press gently to mold into a nest shape.
  • Unroll and remove paper from Betty Crocker Fruit Roll-Ups snack labeled Blazin' Blue/Green. Use small kitchen scissors to cut out from green portion of snack for strips of "grass," and place in the nests. Top with 3 "eggs," using Betty Crocker Fruit Gushers snacks of varying colors. Remove from muffin cups, and store covered up to 5 days.
