1/4 cup butter, cubed
2 cups uncooked instant rice
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup boiling water
2 beef bouillon cubes
1 medium onion, chopped
1 garlic clove, minced
1 bay leaf
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a saucepan, melt butter over medium heat. Add rice; cook and stir until lightly browned. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer until the liquid is absorbed and rice is tender, 10-15 minutes. Remove bay leaf before serving.

My family loves a variety of ethnic foods, but this is one of their favorites. My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

6 tablespoons butter
2 onions, chopped
2 jalapeno peppers, chopped
2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
1 cup uncooked white rice
salt and ground black pepper to taste
½ cup sour cream, or as desired
½ cup shredded Cheddar cheese, or as desired

Steps:

  • Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. Garnish with sour cream and Cheddar cheese to serve.

This is a easy recipe and very tasty as a main dish or side dish. My mother made it for me as a teenager 50 plus years ago. Please Enjoy!! Use brown rice as it is much better for you.

1 cup chicken broth
1 medium chopped onion
1/2 cup chopped celery
1 cup green bell pepper
4 garlic cloves
1 teaspoon oregano
1 teaspoon basil
2 teaspoons chili powder
2 teaspoons garlic salt
1 teaspoon cumin
1/2 lb ground beef round or 1/2 lb ground sirloin
1 1/2 cups rice (brown)
3 (15 ounce) cans diced tomatoes (goya if possible)
1 teaspoon ground black pepper
1/4 teaspoon red cayenne pepper
2 tablespoons olive oil (spanish if possible)
2 tablespoons tomato paste

Steps:

  • cook brown rice as the box says using at least 1 cup of chicken broth. put the olive oil in a large pan and add veggies. Cook till tender and add meat and all spices till brown add rice and diced tomatoes and tomato paste and stir together cover and cook till any excell fluid is gone (if any) keep heated till ready to serve.

2 tablespoons chopped onion
1 ½ cups uncooked white rice
2 cups chicken broth
1 cup chunky salsa

Steps:

  • Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
