This sauce started out as a Blues Hog BBQ sauce clone...and ended up being something we liked even better. It's tangy & tart and has that awesome Blues Hog sheen. It's a lot of flavor, but it does take a lot of time. Enjoy.

7 lbs Heinz ketchup
3 lbs light brown sugar
16 ounces light Karo syrup
1 1/2 tablespoons vanilla
1 1/2 tablespoons imitation butter
4 tablespoons Worcestershire sauce
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons chili powder
1 dash liquid smoke
2 tablespoons black pepper
1 teaspoon celery seed
1/2 cup cider vinegar
1/2 cup white vinegar
1 teaspoon lime, powder
1 teaspoon dried chipotle powder
1 teaspoon baking soda

Steps:

  • Combine all ingredients in a nonreactive stock pot and simmer at least 7 hours until thick and smooth.

3 tablespoons butter
3 tablespoons minced garlic
1 cup finely chopped onion
¼ cup soy sauce
2 tablespoons Worcestershire sauce
3 tablespoons chili powder
1 tablespoon ground black pepper
1 tablespoon paprika
1 teaspoon white pepper
1 teaspoon dry mustard
½ teaspoon ground ginger
½ teaspoon cayenne pepper
⅛ teaspoon dried thyme
½ cup brown sugar
2 cups chicken stock
½ cup ketchup
¼ cup light molasses
¼ cup Dijon mustard
3 tablespoons liquid smoke flavoring
1 tablespoon white vinegar

Steps:

  • Melt butter and garlic in a saucepan over medium heat; cook and stir onion into garlic until softened and lightly browned, 10 to 15 minutes.
  • Mix in soy sauce, Worcestershire sauce, chili powder, black pepper, paprika, white pepper, dry mustard, ginger, cayenne pepper, and thyme; cook and stir until combined, 1 to 2 minutes. Add brown sugar and let bubble for 1 minute.
  • Stir in chicken stock, ketchup, molasses, Dijon mustard, liquid smoke, and vinegar; simmer until thickened, 5 to 10 minutes. Cool and brush onto desired meat.
