Tasty Glazed Meatloaf image

This recipe is from a friend's mom and the glaze really puts it over the top! I make the glaze for the "doubled" recipe because it is really good to have to serve as "gravy" with this.

Number Of Ingredients 14

2 beaten eggs
3/4 c milk
3/4 c dry bread crumbs1/4
1/4 c finely chopped onion
2 Tbsp snipped parsley
1 tsp salt
1/2 tsp ground sage
1/8 tsp pepper
1 1/2 lb ground beef
GLAZE
2 c catsup
1 1/4 c brown sugar
1 Tbsp dry mustard
1/2 c cooking sherry or sherry (not cream sherry)

Steps:

  • 1. In a bowl combine the eggs and milk. Whip them together. Add the bread crumbs, onion, parsley, salt, sage and pepper. Whip these together with a hand whip to blend. Add meat and mix with seasonings it will be a soft mixture, if too soft add just a 1/4 cup more bread crumbs.
  • 2. Put in a loaf pan 8x4 and bake at 350 degrees for 50 minutes.
  • 3. While the meat cooks, prepare your glaze. In a saucepan combine the catsup, brown sugar and mustard with the sherry. Heat over low until all of the sugar dissolves.
  • 4. Take out the meat, spoon off the meat drippings and fat. Spoon on the glaze (you won't use all of it, maybe half) and return back to the oven for another 10 minutes. Take out of oven and let stand for 10 minutes before slicing.
  • 5. With the other half of the glaze, you may want to add a 1/4 cup more water to thin it out, heat it through and serve alongside the meatloaf, sort of as a gravy.
