Meatloaf is universally appealing. When properly made it's moist, holds it's shape when cut and presents well on the table. This meatloaf recipe is also made so it can be presented prettily on a circular tray or even cake plate with an attractive side dish in the center, and colorful garnish to set it off.

1.5 lb. ground beef
1/2 Cup ketchup
1/3 Cup parmesan cheese
3/4 Cup fresh bread crumbs
1 Cup yellow onion, finely chopped
1/2 Cup red bell pepper, finely chopped
2 tsp. mustard
2 eggs
1/2 tsp. salt
1/2 tsp. black pepper
(Topping)
1/4 Cup tomato ketchup
1/2 tsp. mustard
2 tsp. brown sugar
1/2 Cup peppers, diced to sprinkle over the top

Steps:

  • Pre heat oven to 350 degrees
  • Grease a 9 inch spring form pan
  • In a large bowl, combine ketchup, eggs, onion and peppers, parmesan, salt and pepper and bread crumbs until thoroughly mixed
  • Add ground beef and by hand, mix it thoroughly into the prepared mixture
  • Form it into the greased pan into a circle and use a small ramekin to hold the center if necessary. Alternately, you can use a greased 8 x 8 casserole dish and form it into a square, as desired
  • Bake for 45 minutes or until thoroughly baked through
  • Spread the topping and sprinkle with diced peppers

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

1/2 cup finely chopped onions
1/2 teaspoon salt
1/4 cup finely chopped red pepper
1 1/2 cups bread crumbs
2/3 cups cream
2 eggs (beaten)
1 1/4 pounds ground beef
3/4 pounds Italian sausage, casings removed
1/2 teaspoon dried sage
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
Mustard Glaze, recipe follows
1/2 cup mustard
1 tablespoon brown sugar
1/4 teaspoon cider vinegar

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Combine all ingredients in large mixing bowl and mix for about ten minutes. Place meatloaf into loaf pan and cover with Mustard Glaze. Cook for 1 1/2 hours.
  • In a small bowl, mix all the ingredients together.

3 thick slices white bread, torn into large pieces
2 garlic cloves, chopped
1 medium onion, chopped
1 celery stalk, chopped
1 medium carrot, chopped
1/2 cup flat-leaf parsley
12 ounces ground beef chuck (90 percent lean), preferably pasture-raised
12 ounces ground pork, preferably pasture-raised
12 ounces ground veal, preferably milk-fed
1 large egg
3/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar

Steps:

  • Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. (You should have about 2 1/2 cups breadcrumbs.) Transfer to a medium bowl.
  • Pulse garlic, onion, celery, carrot, and parsley in food processor until finely chopped. Add to breadcrumbs. Add meats, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, 1 tablespoon salt, and 1/2 teaspoon pepper; mix together using your hands. Transfer mixture to a 5-by-9-inch loaf pan.
  • Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Set pan on a rimmed baking sheet, and bake until an instant-read thermometer inserted into the center reaches 160 degrees, about 1 hour 20 minutes. Let cool slightly.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

- shrimp salad spread:
1/3 cup(s) mayonnaise dressing
1/4 cup(s) celery, finely chopped
2 tablespoon(s) lemon juice
1/4 teaspoon(s) salt
1/8 tablespoon(s) pepper
2 - eggs, hard boiled & finely chopped
2 can(s) shrimp, peeled, deveined & chopped
- olive nut spread:
2 package(s) cream cheese, room temperature
1 cup(s) walnuts, finely chopped
1/2 cup(s) pimiento stuffed olives, finely chopped
- deviled ham spread:
1/2 cup(s) sour cream
1/4 cup(s) sweet relish, drained
2 tablespoon(s) onions, grated
1/8 teaspoon(s) red pepper sauce
2 can(s) deviled ham
- loaf:
2 - loaves, unsliced sandwich bread
1/2 cup(s) butter or margarine, softened
4 package(s) cream cheese, room temperature
1 cup(s) half and half

Steps:

  • In a mediumbowl mix the shrimp salad ingredients until well blended. In a second bowl mix the olive but ingredients also until well blended. Then in a last bowl mix the deviled ham ingredients until well blended. And set all aside.
  • Then trim the crusts from the bread. Cut each loaf horizontally into 4 equal slices. Lightly spread the butter over 3 slices. Then placce 1 buttered slice on each serving plate. Spread each evenly with half of the shrimp spread. Top with seconf buttered slices. Then spreaad each evenly with hlaf of the olive nut spread. Top with the third buttered slices. Spread each evenly with half the deviled ham spread. Then top with unbuttered slices. Lightly press each loaf together.
  • Then in a medium bowl mix the 4 cream cheese, half-n-half & food color if you wish. Spread half of the mixture over the sides & top of ach loaf. Refrigerate about 30 mins or until cream cheese has set. Cover tightly & refrigerate at least 2 1/2 hours but no longer the 24 hours.
  • Remove from ice box, cut into slices & serve. Store in a refrigerator.
  • Special Tip: You can make this even easier by picking up a variety of meats & cheese from the deli.
