1 package Betty Crocker™ Sunkist® lemon bar mix
3 tablespoons fresh lemon juice
1 teaspoon grated lemon peel
1/2 cup vanilla-flavored protein powder
1 container (8 ounces) fat-free cholesterol-free egg product
Powdered sugar, if desired

Steps:

  • Heat oven to 350°F. Press Ready-Mixed Crust (dry) from lemon bar mix in bottom of square pan, 8x8x2 or 9x9x2 inches. Bake 10 minutes.
  • Add enough water to lemon juice to equal 1/2 cup. Place Filling Mix from lemon bar mix, lemon peel and protein powder in large bowl. Stir in egg product and lemon juice mixture with wire whisk until smooth. Pour filling over hot crust.
  • Bake 25 to 30 minutes or until top just begins to brown and center is set. Cool completely, about 2 hours. Sprinkle with powdered sugar. For 16 bars, cut into 4 rows by 4 rows.

3/4 cup packed brown sugar
3/4 cup butter or margarine, softened
1 egg
1 1/2 cups Gold Medal™ all-purpose flour
1 cup old-fashioned or quick-cooking oats
1 bag (14 oz) caramels, unwrapped
1/3 cup half-and-half
1 cup semisweet chocolate chunks
1 cup coarsely chopped mixed nuts
1/4 cup broken pretzel twists

Steps:

  • Heat oven to 350°F (if using dark or nonstick pan, heat oven to 325°F). Grease 13x9-inch pan with shortening or spray with cooking spray.
  • In large bowl, beat brown sugar, butter and egg with electric mixer on medium speed, or mix with spoon. Stir in flour and oats. Spread in pan. Bake 15 to 20 minutes or until light golden brown.
  • Meanwhile, in 1-quart saucepan, heat caramels and half-and-half over low heat, stirring occasionally, until caramels are melted. Pour caramel mixture over crust. Sprinkle with chocolate chunks, nuts and pretzels.
  • Bake 5 to 8 minutes or until chocolate is softened. Cool about 1 hour or until chocolate is set. For bars, cut into 6 rows by 6 rows.

Caramely, sweet, chewy, filled with nuts and seeds and totally delicious! These bars are prefect for lunch boxes, days out and about and for those who love sports. I make these for road trips and days when my boys go bike riding. Can be made nut free for those with nut allergies.

Number Of Ingredients 4

1 tin sweetened condensed milk
2 c rolled oats (not quick or instant)
2 1/2 c nut or seeds of your choice (such as: sunflower seeds, pepitas, sesame seeds, flax seeds, almonds, walnuts, pecans, brazil nuts) **note: nuts should be chopped before being measured
1/2 tsp cinnamon

Steps:

  • 1. Grease and line a brownie style tray and pre-heat oven to 150oC/300oF.
  • 2. In a large bowl mix everything well and pour into the prepared pan. Spread out and push down using the back of your spatula or spoon (you want it compressed).
  • 3. Bake in the prepared oven for about 30 minutes or until golden (take care as it can go from golden to brown quickly). Cool in the tin. When cold, slice and store in a container. DO NOT refrigerate.

Water, vegetable oil and egg called for on brownie mix box
1 1/4 cups Betty Crocker™ Rich & Creamy vanilla frosting (from 16 oz container)
1/2 cup salted peanuts, coarsely chopped
2 cups crisp rice cereal
2/3 cup creamy peanut butter
1 1/3 cups semisweet chocolate chips

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 9-inch square pan with shortening or cooking spray. (For easier cutting, line pan with foil, grease bottom and sides of foil). Make and bake brownies as directed on box. Cool completely on cooling rack, about 1 hour 30 minutes.
  • Frost brownies with frosting. Sprinkle with peanuts; refrigerate while making cereal mixture.
  • Measure cereal into large bowl; set aside. In 1-quart saucepan, melt peanut butter and chocolate chips over low heat, stirring constantly. Pour over cereal in bowl, stirring until evenly coated. Spread over frosted brownies. Refrigerate about 1 hour or until set before cutting. Cut into 4 rows by 4 rows. Store tightly covered in refrigerator.

4 medium baking potatoes
Cooking spray
1 cup Old El Paso™ refried beans (from 16-oz can)
1 cup shredded Cheddar cheese (4 oz)
1 cup sour cream
3 medium green onions, thinly sliced

Steps:

  • Heat oven to 425°F. Pierce potatoes with fork. Bake about 1 hour or until tender. Cool 30 minutes.
  • Cut each potato lengthwise in half; carefully scoop out potato pulp, leaving 1/4-inch shells. (Save potato pulp for another use.) Place potato shells, skin sides down, on cookie sheet. Spray potato shells with cooking spray. Divide beans among potato skins; sprinkle with cheese.
  • Bake about 10 minutes or until cheese is melted.
  • Serve potato skins with sour cream. Sprinkle with green onions.

3/4 cup quick-cooking or old-fashioned oats
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped peanuts
1 cup (6 ounces) semisweet chocolate chips
2 tablespoons quick-cooking or old-fashioned oats

Steps:

  • Heat oven to 350°F. Crush cereal. Mix sugars, butter, vanilla and eggs in large bowl. Stir in flour, cereal, 3/4 cup oats, the baking soda, baking powder and salt. Stir in 3/4 cup of the peanuts and 2/3 cup of the chocolate chips.
  • Spread in ungreased rectangular pan, 13x9x2 inches. Sprinkle with remaining 1/4 cup peanuts, remaining 1/3 cup chocolate chips and 2 tablespoons oats.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 1 hour. For 24 bars, cut into 6 rows by 4 rows.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter or margarine, softened
1/2 teaspoon grated lemon peel
1 egg
1 1/2 cups chopped walnuts
1/3 cup granulated sugar
1/4 cup butter or margarine, softened
1 teaspoon ground cinnamon
1/8 teaspoon salt
8 frozen mini phyllo shells (from 2.1-oz package)
1/3 cup honey
2 tablespoons butter or margarine, softened
1 tablespoon packed brown sugar
1/2 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1 teaspoon vanilla
5 tablespoons honey

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
  • In large bowl, stir cookie base ingredients until soft dough forms. Press dough in bottom of pan. Bake 15 minutes.
  • Meanwhile, in medium bowl, stir walnuts, granulated sugar, 1/4 cup butter, 1 teaspoon cinnamon and the salt with fork until mixture is well mixed and crumbly.
  • Sprinkle nut mixture evenly over partially baked base. With hands, crumble frozen phyllo shells evenly over nut mixture. Bake 18 to 20 minutes longer or until golden brown.
  • Meanwhile, in small microwavable bowl, microwave 1/3 cup honey, 2 tablespoons butter, the brown sugar, lemon juice and 1/4 teaspoon cinnamon uncovered on High 1 minute or until bubbly. Stir in vanilla.
  • Drizzle honey mixture evenly over phyllo . Cool completely, about 2 hours.
  • For bars, cut into 6 rows by 4 rows. Before serving, drizzle 1/2 teaspoon honey over each bar. Store covered at room temperature.
