1/3 cup buttermilk
1/4 teaspoon red pepper sauce
2/3 cup cornmeal
2 teaspoons taco seasoning mix
1 3/4 lbs chicken drumsticks
2 teaspoons vegetable oil
salsa, if desired

Steps:

  • Heat oven to 400.
  • Grease rectangular pan, 13x9x2.
  • Mix buttermilk and pepper sauce in medium bowl.
  • Mix cornmeal and seasoning mix in large plastic bag.
  • Dip chicken into buttermilk mixture, then shake in bag to coat with cornbread mixture.
  • Place in pan & drizzle with oil.
  • Bake uncovered 40 to 45 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.
  • Serve with salsa.

Winner, winner, slow-cooker chicken dinner! This sweet-and-savory recipe comes together quickly for warming Mexican flavors that are perfect for any season.

1/2 cup honey
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
6 cloves garlic, finely chopped
1 tablespoon butter, melted
1/2 teaspoon salt
2 lb red potatoes, cut into 3/4-inch pieces
1 package (2 lb) chicken legs (about 6)
1 lime, cut into wedges
2 green onions, thinly sliced
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Spray 5-quart slow cooker with cooking spray. In large bowl, mix honey, taco seasoning mix, garlic, melted butter and salt. Add potatoes, and toss to coat. Using slotted spoon, transfer potatoes to slow cooker. Add chicken to bowl with honey mixture; toss to coat. Arrange chicken on top of potatoes in slow cooker. Pour any remaining liquid over chicken.
  • Cover; cook on High heat setting 3 to 4 hours or until potatoes are tender and instant-read thermometer inserted in thickest part of chicken, without touching bone, reads at least 165°F. Do not uncover slow cooker before 3 hours.
  • Line large rimmed baking pan with foil. Position oven rack 4 inches from broiling element. Set oven control to broil. Transfer chicken to pan. With slotted spoon, transfer potatoes to serving platter; cover with foil. Pour 1/4 cup of liquid from slow cooker over chicken. Broil 2 to 4 minutes or until chicken skin is golden brown and crisp. Turn chicken; pour another 1/4 cup liquid from slow cooker over chicken. Discard remaining liquid from slow cooker. Broil 2 to 4 minutes longer or until skin is golden brown and crisp on second side.
  • Serve broiled chicken with sauce from pan, potatoes and lime wedges. Top with green onions and cilantro.

16 chicken legs (about 4 pounds - 2 kilos)
2 teaspoons dried oregano
2 teaspoons dried coriander
1 teaspoon chili powder *** double for more heat.
1 tablespoon minced garlic
1 large onion, diced
2 cans chopped tomatoes
2 1/2 cups preapred salsa (i use mild due to children)
4 cups chicken stock (or 4 cups water and 1 heaped teaspoon of chicken stock powder or 2 stock cubes)
1 tin red kidney beans, rinsed and drained
1 tin black beans, rinsed and drained
1 large pepper (capsicum) chopped or sliced, seeds removed
2/3 cup white rice, uncooked
1 cup frozen corn
fresh cilantro (coriander) to taste **optional

Steps:

  • 1. Pre-heat oven to 375oF/180oC and find a LARGE baking dish - I use a large ceramic lasagna style dish.
  • 2. Place the chicken legs in the tray, pour over the herbs and spices and use your hands (I use disposable kitchen gloves due to the chili powder) to get the spices all over the chicken.
  • 3. Add everything else EXCEPT for the rice, beans, corn and cilantro (coriander). Ensure each chicken leg is not covering another. They all need their own space to cook. Cover the dish with foil and place in the prepared oven. Bake for 1 hour.
  • 4. Remove the foil - carefully (steam burns). Turn each chicken leg. Add in the rice, beans and corn. Stir well ensuring the rice is all "under cover" by the juices. Cover again.
  • 5. Return to the oven and bake for a further 30-35 minutes or until the rice is cooked. Sprinkle with cilantro (coriander), give a stir and serve.

1 can (8 oz) tomato sauce
1/2 cup Old El Paso™ Thick 'n Chunky medium salsa
2 tablespoons packed brown sugar
1 tablespoon cider vinegar
1 teaspoon chili powder
12 chicken legs (about 3 1/2 lb)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat gas or charcoal grill. In blender, place tomato sauce, salsa, brown sugar, vinegar and chili powder. Cover; process until smooth. Pour about half of the sauce into small bowl for basting. Pour remaining sauce into another small bowl; set aside for serving.
  • Sprinkle chicken legs with salt and pepper. Place chicken on grill over medium heat. Cover grill; cook 16 to 20 minutes, turning once, until juice of chicken is clear when thickest part is cut to bone (at least 165°F). Brush chicken legs generously with sauce, turning to coat evenly. Cover grill; cook 1 to 2 minutes longer on each side.
  • Serve chicken with reserved sauce for dipping.
