5 tablespoons butter, divided
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1 dash ground nutmeg
1 cup half-and-half cream
4 ounces cream cheese, low-fat okay
1 small onion, minced
3 garlic cloves, minced
20 ounces pkgs. frozen chopped spinach, thawed
1/4 cup water
1/4 cup grated parmesan cheese

Steps:

  • -In a 2-quart saucepan over medium-low heat, melt butter 3 Tbls. butter; stir in flour, salt, pepper, and nutmeg; slowly whisk in cream; stir in cream cheese.
  • -Increase heat to medium; whisk mixture constantly until thick and smooth; remove from heat and set aside.
  • -In a skillet over medium-high heat, cook onions and garlic in remaining 2 Tbls. butter until transparent; stir spinach and water into pan.
  • -Reduce heat to medium-low; cover; simmer, stirring occasionally, for 8 minutes.
  • -Stir spinach mixture into creamy mixture; return to medium heat; heat, stirring often, until warmed throughout.
  • -Remove from heat; fold in Parmesan.

This is by far the best creamed spinach recipe that I have ever tasted! My mother got married in early Nov and my brother (a chef) served Bar-B-Qued Filet Mignon, oven roasted red potatoes, this creamed spinach, salad and garlicy cheesy bread - Talk about heaven!! The creamed spinach stole the show and 1/2 the guests left with the recipe! He found the recipe on the internet, it is a copy cat recipe of Boston Market's creamed spinach. (I think it's better).

5 tablespoons butter (divided) or 5 tablespoons margarine (divided)
1/4 cup all-purpose flour
1/4 teaspoon salt
1 cup half-and-half cream

1/4 cup water

  • Slowly stir in cream, then stir in cream cheese, increase heat to medium.
  • Constantly whisk until mixture becomes thick and smooth, remove from heat and set aside.
  • In a saucepan over medium-high heat, saute onions and garlic in remaining butter until transparent.
  • Add spinach and water to pan, reduce heat to low, cover.
  • Cook, stirring occasionally for 8 minutes.
  • Stir prepared sauce and Parmesan cheese into pan, stir until completely blended.

"ALMOST" BOSTON MARKET CREAMED SPINACH



This is quite similar to the creamed spinach at Boston Market, well so I'm told anyway! --- this is a great side dish, even people that hate spinach love this, it's great to serve along side a holiday turkey or a ham dinner, or at any meal --- I also like to saute about 2 teaspoons fresh minced garlic and a pinch of cayenne pepper in the butter for about 2 minutes before adding in the flour but that is optional, add in some grated Parmesan cheese too if desired, this complete recipe can be doubled :)

3 tablespoons butter
4 tablespoons flour
1/2 teaspoon salt (I use seasoned salt)
1 cup half-and-half or 1 cup milk
1/2 cup sour cream (lowfat is okay)
2 tablespoons butter
2 -4 tablespoons onions, minced
1/4 cup water
20 ounces frozen spinach, drained and chopped
1/2 teaspoon ground black pepper (optional or to taste)
1/4 cup grated parmesan cheese (optional)

Steps:

  • In a saucepan melt butter over medium heat until sizzling.
  • If you are adding in the fresh garlic and a pinch of cayenne pepper then saute in butter for about 2 minutes but do not brown the garlic.
  • Whisk in the flour and 1/2 tsp seasoned salt (or white salt) until creamed together and smooth.
  • Stir in the half and half, or milk (if using) a little at a time.
  • Increase heat to medium and constantly whisk until the mixture becomes thick and smooth.
  • Remove from heat; set aside.
  • Place 2 tbsp butter in saucepan over med heat; add the 2 tbsp minced onion, and cook until transparent.
  • Add spinach and water to pan, lower the heat, and cover.
  • Stirring several times until the spinach is cooked.
  • When the spinach is almost done, add the prepared white sauce, sour cream and Parmesan cheese (if using).
  • Stir well, and simmer until completely blended.
  • Season with more seasoned salt or white salt if desired and black pepper.

This easy creamed spinach side is a wonderful addition to any elegant holiday meal, a neighborhood potluck or even a holiday work function.

1 pound fresh spinach (or 10 oz frozen spinach, thawed and squeezed dry)
1 teaspoon olive oil
¼ cup onion (minced)
1 tablespoon butter
⅓ cup heavy cream
2 ounces cream cheese
¼ teaspoon garlic powder
⅛ teaspoon seasoning salt
black pepper to taste

Steps:

  • Wash and dry spinach if using fresh. Remove any tough stems and roughly chop.
  • Cook spinach in a pan with olive oil over medium heat until wilted and cooked through, about 3 minutes. Remove from pan and place in a strainer to drain.
  • Add onion and butter to the pan and cook on medium low heat until onion is softened. Add remaining ingredients and bring to a simmer while stirring until smooth. Simmer 1-2 minutes or until thickened.
  • Squeeze any excess moisture out of the spinach. Add back to the pan and stir to combine. Heat through and serve.

After trying several recipes and even the frozen stuff from Boston Market(YUCK!!!) I decided to "invent" my own. The amounts of ingredients are all guesstimates. So please feel free to adjust to your personal liking.

2 (10 ounce) boxes frozen spinach (Cooked and drained)
4 -6 ounces cream cheese, softened (this is approx. amount)
1/4 cup chopped onion, approx
1 -2 tablespoon minced garlic, approx
1/4 cup fresh parmesan cheese, approx
1/4 cup monterey jack cheese, approx. (Add or subtract ingredient amounts to your taste)

Steps:

  • Mix everything together.
  • Place in casserole dish.
  • Bake at 350 degrees in oven for 20- 30 minutes, or until cheese is bubbly.

1 tablespoon flour
1/4 cup butter (or margarine or canola oil)
1/2 teaspoon garlic salt (to taste)

1 dash pepper, to taste
1 (20 ounce) box frozen chopped spinach (cooked according to package directions & well drained OR 2 pounds fresh spinach, cleaned, stems remo)
1 tablespoon dry onion, chopped (OR 1 small onion, peeled, ends removed, diced)

Steps:

  • In a large saucepan over medium heat, whisk together celery soup, flour, butter, garlic salt, salt and pepper until smooth and piping hot.
